Ingredients at a glance (11)
- 1 cup warm milk
- 1 tsp active dry yeast
- 1 tsp salt
- 2 tbsp olive oil
- 2 1/2 cups all-purpose flour
- 3 tbsp unsalted butter, melted

- 250 g kaşar cheese, shredded
- 200 g button mushrooms, sliced
- 1 tsp red pepper flakes
Instructions
Dough Rising and Shaping
- Make the DoughIn a large bowl, combine the warm milk and yeast. Let it sit for 5 minutes until frothy. Add salt, olive oil, and flour. Stir with a wooden spoon until a shaggy dough forms, then turn it out onto a lightly floured surface. Knead for 8-10 minutes until smooth and elastic. Shape into a ball, place in a lightly oiled bowl, cover with a towel, and let rise in a warm spot until doubled, about 1 hour.Look for The dough should be smooth, soft, and spring back when poked.Tip If the dough is too sticky, add a little more flour, a tablespoon at a time.
- Prepare Garlic ButterWhile the dough rises, make the garlic butter: In a small bowl, mix the melted butter, minced garlic, and chopped parsley. Set aside at room temperature.Look for The butter should be fragrant and well combined.Tip If the butter solidifies, warm it gently before using.
After kneading, the dough should be smooth, soft, and elastic. It should have doubled in size after the rise, feeling airy and springy when pressed. When rolled into ovals, the edges should hold their shape, and the centers should be slightly thinner. The garlic butter should be fragrant and spreadable.
Assembling and Topping
- Shape the PidesPunch down the risen dough and divide it into 4 equal pieces. On a lightly floured surface, roll each piece into an oval about 8 inches long and 5 inches wide. Transfer the ovals to a baking sheet lined with parchment paper. Use your fingers to create a slight rim around the edges, forming a boat shape.Look for The ovals should be even and about 1/4 inch thick.Tip Keep the center slightly thinner than the edges so the pide bakes evenly.
- Add ToppingsBrush each dough boat generously with the garlic butter, including the edges. Sprinkle the shredded kaşar cheese evenly over the center, leaving a small border. Top with sliced mushrooms and a sprinkle of red pepper flakes.Look for The cheese should cover the dough evenly, with mushrooms scattered on top.Safe temperature 160°F (71°C) internal temperature (egg dishes)Tip Don't overload the pides; too many toppings can make them soggy.
The dough boats should be evenly shaped with a slight rim. The garlic butter should be brushed generously, covering the entire surface.
The cheese should be spread in a single, even layer, with mushrooms scattered on top. The red pepper flakes add a pop of color. The pides should look inviting and well-filled.
Baking and Serving
- Bake the PidesPreheat the oven to 410°F (210°C). Bake the pides for 18 minutes, or until the crust is golden brown and blistered and the cheese is melted and bubbling. The edges should be crisp and the cheese should be fully melted.Look for The crust should be deep golden with charred spots, and the cheese should be bubbly.Tip If the edges brown too quickly, tent loosely with foil.
- Serve WarmRemove the pides from the oven and let them cool for 2-3 minutes. Slice diagonally and serve warm. The cheese should stretch in long, gooey strands when pulled apart.Look for The cheese should be stretchy and the crust crisp.Tip Serve immediately for the best cheese pull.
The pides should be golden brown with blistered spots on the crust. The cheese should be melted and bubbling, with a few golden brown spots. The edges should be crisp and slightly charred. When sliced, the cheese should stretch in long strands. The aroma of garlic and toasted bread should fill the kitchen.
Common mistakes
One common mistake is overloading the pides with too many toppings, which can make the center soggy and prevent the dough from cooking through. Keep the topping layer even and not too thick. Another issue is under-kneading the dough, which leads to a dense, tough texture.
Knead until the dough is smooth and elastic. Also, avoid using cold milk, as it will slow down the yeast and result in a longer rise. If the pides brown too quickly, tent them with foil to prevent burning while the center finishes baking.
How to tell it’s done
The pides are done when the crust is deep golden brown and blistered, with some charred spots on the edges. The cheese should be fully melted and bubbling, with a few golden spots. The bottom of the pide should be crisp and browned.
If you tap the bottom, it should sound hollow. The internal temperature of the dough should be around 200°F (93°C). Let them cool for a couple of minutes before slicing—this allows the cheese to set slightly so it doesn't all run out, but it will still stretch wonderfully.
