Tips for success
For the best cheese pull, use low-moisture mozzarella (whole milk) and shred it yourself—pre-shredded varieties often contain anti-caking agents that affect melting.
If you want a more golden crust, brush the edges with egg wash twice, once before baking and once halfway through. For extra flavor, add a pinch of red pepper flakes to the mushroom filling.
When shaping the pide boats, keep the center slightly thicker than the edges so the filling doesn't weigh down the dough.
If the dough springs back when you try to shape it, let it rest for 5–10 minutes. For a crispier bottom, bake the pide directly on a preheated baking stone or upside-down baking sheet.
Variations
- Spinach and Feta: Sauté 4 cups of fresh spinach with garlic until wilted, then mix with 1/2 cup crumbled feta and 1 cup shredded mozzarella. Use this mixture in place of the mushroom filling.
- Spicy Sausage: Cook 1/2 pound of fresh Italian sausage (casings removed) in a skillet, breaking it up, until browned. Drain excess fat, then combine with 1 cup shredded mozzarella and use as the filling.
- Tomato and Olive: Mix 1 cup diced tomatoes (drained), 1/2 cup sliced black olives, and 1 cup shredded mozzarella. Add a pinch of dried oregano for a Mediterranean twist.
- Cheese Lover's: Use a blend of 1/2 cup shredded mozzarella, 1/2 cup shredded provolone, and 1/2 cup crumbled feta. Add a sprinkle of red pepper flakes for a kick.

Leftover pide boats can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place them on a baking sheet in a 350°F (175°C) oven for 5–7 minutes, or until warmed through and the cheese is melty again. Avoid microwaving, as it can make the crust soggy.
The dough can be prepared and refrigerated after the first rise for up to 24 hours. Let it come to room temperature before shaping. The mushroom filling can also be made a day ahead and stored in the refrigerator. Assemble the pide boats just before baking for the best texture.
Serving ideas
Serve the pide boats warm, straight from the oven, while the cheese is still stretchy. They make a fantastic appetizer for parties, game nights, or as a side to soups and salads.
Arrange them on a platter with a sprinkle of fresh thyme or parsley for a pop of color. They're also great for dipping into marinara or a garlic-yogurt sauce.
These mini pides are best enjoyed fresh, but they're also delicious at room temperature. If serving at a buffet, keep them covered with foil to retain warmth.
For a more substantial meal, serve two or three per person alongside a green salad. The combination of crunchy crust, garlicky mushrooms, and molten cheese is sure to please everyone.

Mini Garlic Mushroom Cheese Boat Pides

Ingredients
- 1 cup warm milk
- 1 tsp salt
- 2 1/4 tsp active dry yeast
- 2 tbsp olive oil
- 2 1/2 cups all-purpose flour
- 8 oz cremini mushrooms, sliced
- 3 cloves garlic, minced
- 1 tsp fresh thyme leaves
- 1 1/2 cups shredded mozzarella
- 1 egg yolk
- 2 tbsp butter, melted
Instructions
- In a large bowl, combine the warm milk, salt, yeast, and olive oil. Let stand for 5 minutes until the yeast is foamy. Gradually add the flour, stirring with a wooden spoon until a shaggy dough forms. Turn the dough out onto a lightly floured surface and knead for 8–10 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let rise in a warm spot for 1 hour, or until doubled in size.
- While the dough rises, heat a small skillet over medium heat. Add the sliced mushrooms and cook, stirring occasionally, until they release their liquid and start to brown, about 5–7 minutes. Add the minced garlic and fresh thyme, and cook for another minute until fragrant. Remove from heat and let cool slightly.
- Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a small oval about 6 inches long and 4 inches wide. Place the ovals on a parchment-lined baking sheet. Spoon the mushroom mixture down the center of each oval, then top with the shredded mozzarella. Pinch the two long ends together to form a pointed boat shape, leaving the center exposed.
- Preheat the oven to 410°F (210°C). In a small bowl, beat the egg yolk with a teaspoon of water. Brush the edges of the pide boats with the egg wash. Bake for 15 minutes, or until the crust is deep golden and the cheese is bubbly and melted.
- Remove the pide boats from the oven and immediately brush the hot crusts with the melted butter. Let cool for 2–3 minutes before serving, so the cheese sets slightly and is easier to handle.
