Before you start

Before starting, measure all ingredients and have them at room temperature. Warm the milk to about 110°F (43°C) to activate the yeast without killing it. Slice the mushrooms and mince the garlic. Line a baking sheet with parchment paper.

Prepare a clean, floured surface for kneading. Set out a small bowl for the egg wash and a pastry brush. If using a stand mixer, attach the dough hook; otherwise, a large bowl and wooden spoon are fine.

Ingredients at a glance (11)
  • 1 cup warm milk
  • 1 tsp salt
  • 2 1/4 tsp active dry yeast
  • 2 tbsp olive oil
  • 2 1/2 cups all-purpose flour
  • 8 oz cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 tsp fresh thyme leaves
  • 1 1/2 cups shredded mozzarella
  • 1 egg yolk
  • 2 tbsp butter, melted

Instructions

Making the Dough

  1. Make the dough
In a large bowl, combine the warm milk, salt, yeast, and olive oil. Let stand for 5 minutes until the yeast is foamy. Gradually add the flour, stirring with a wooden spoon until a shaggy dough forms. Turn the dough out onto a lightly floured surface and knead for 8–10 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let rise in a warm spot for 1 hour, or until doubled in size.
Look for The dough should be soft, pillowy, and spring back when gently pressed.
Tip If the dough feels too sticky, add a little extra flour, a tablespoon at a time.
  2. Sauté the mushrooms
While the dough rises, heat a small skillet over medium heat. Add the sliced mushrooms and cook, stirring occasionally, until they release their liquid and start to brown, about 5–7 minutes. Add the minced garlic and fresh thyme, and cook for another minute until fragrant. Remove from heat and let cool slightly.
Look for The mushrooms should be golden and the garlic fragrant but not burnt.
Tip Do not overcrowd the pan; cook in batches if needed for even browning.

The dough should be smooth and elastic after kneading, and it should rise to double its size in about an hour.

The mushrooms should be golden and fragrant, with no excess liquid in the pan. The dough should feel soft and pillowy when pressed, and the kitchen should smell of yeast and garlic.

Shaping and Baking

  1. Shape the pide boats
Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a small oval about 6 inches long and 4 inches wide. Place the ovals on a parchment-lined baking sheet. Spoon the mushroom mixture down the center of each oval, then top with the shredded mozzarella. Pinch the two long ends together to form a pointed boat shape, leaving the center exposed.
Look for The dough should be thin enough to crisp but thick enough to hold the filling.
Tip Pinch the ends firmly so the filling stays in place during baking.
  2. Brush and bake
Preheat the oven to 410°F (210°C). In a small bowl, beat the egg yolk with a teaspoon of water. Brush the edges of the pide boats with the egg wash. Bake for 15 minutes, or until the crust is deep golden and the cheese is bubbly and melted.
Look for The crust should be golden brown and the cheese molten and slightly blistered.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Rotate the baking sheet halfway through for even browning.

The shaped pide boats should hold their form with the filling centered and the ends pinched closed. After baking, the crust should be golden brown, the cheese melted and bubbly, and the edges crisp. The egg wash should give a glossy sheen. The kitchen will smell of toasted bread and garlic.

Finishing and Serving

  1. Finish with butter
Remove the pide boats from the oven and immediately brush the hot crusts with the melted butter. Let cool for 2–3 minutes before serving, so the cheese sets slightly and is easier to handle.
Look for The butter should sizzle on contact and soak into the crust.
Tip Brushing while hot gives a glossy, flavorful finish.

The butter should melt on contact, giving the crust a glossy, savory finish. The pide boats should be slightly cooled but still warm, with the cheese stretchy and gooey. The texture should be crisp on the outside and soft inside. Serve immediately for the best cheese pull.

Common mistakes

A common mistake is overworking the dough, which can make the pide tough. Knead just until smooth and elastic. Another issue is a soggy bottom; make sure the mushrooms are well sautéed and excess liquid has evaporated.

If the dough tears when shaping, let it rest for a few minutes to relax the gluten. Also, avoid overfilling—too much cheese can leak out and burn on the baking sheet.

How to tell it’s done

The pide boats are done when the crust is deep golden brown and the cheese is fully melted and bubbly. The internal temperature of the egg wash should reach 160°F (71°C) to ensure safety.

To check, insert an instant-read thermometer into the thickest part of the crust; it should read at least 160°F (71°C). The edges should be crisp and the center soft. Let them cool for 2–3 minutes before serving to allow the cheese to set slightly.

  • Egg dishes: 160°F (71°C) in the thickest part
