Before you start

Before you begin, ensure your pizza dough is brought to room temperature, which makes it much easier to stretch without tearing.

Have your mini meatballs already cooked and cooled slightly, and ensure all your toppings, such as the grated Grana Padano and torn basil, are prepped and ready to go.

Preheat your oven to 450°F (232°C) with your pizza stone or cast-iron skillet inside to ensure it reaches the necessary temperature for that signature crispy crust.

Ingredients at a glance (6)
  • 1 lb pizza dough, store-bought or made ahead
  • 12 mini wagyu meatballs, cooked
  • 2 cups mozzarella cheese, shredded
  • 1 cup vodka sauce, store-bought or made ahead
  • 2 tbsp grana padano cheese, freshly grated
  • 2 tbsp fresh basil leaves, torn

Instructions

Assembling the Crown

  1. Prepare the Crown Crust
Roll out the pizza dough on a floured surface. Place twelve cooked mini Wagyu meatballs around the perimeter of the dough. Add a small amount of mozzarella cheese next to each meatball and fold the dough edges over, tucking them tightly to create individual pockets for each meatball.
Look for dough is securely wrapped around the meatballs
Tip Ensure the dough seal is tight so the cheese stays inside while baking.

The dough should be evenly rolled and the meatballs should be spaced consistently around the perimeter. Check that each pocket is sealed tightly, as this is crucial for containing the cheese during the high-heat baking process.

Baking the Pizza

  1. Fill and Bake
Transfer the prepared dough base to a preheated pizza stone or cast-iron skillet. Pour the vodka sauce into the center of the pizza and spread it evenly without touching the meatball pockets. Place in an oven preheated to 450°F (232°C) and bake until the crust is golden brown and the cheese is melted and bubbling, ensuring the meatballs reach an internal temperature of 160°F (71°C).
Look for crust is golden brown and sauce is hot
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Using a hot pizza stone helps achieve a crispier bottom crust.

The crust should look golden and crisp, and the vodka sauce should be hot and bubbling. The cheese in the crust pockets will be soft and melted, indicating that the pizza is fully heated through.

Finishing and Serving

  1. Garnish and Serve
Remove the pizza from the oven carefully. Immediately shower the center with freshly grated Grana Padano cheese and scatter the torn fresh basil leaves over the top. Allow it to rest for five minutes before serving to ensure the sauce and cheese set slightly.
Look for cheese is melted and fragrant
Tip Use a pizza cutter to slice between the meatball pockets for easy serving.

The final garnish of Grana Padano and fresh basil should be vibrant and aromatic. The pizza should rest for a few minutes, allowing the sauce to settle so it is easy to slice.

Common mistakes

A common mistake is using too much sauce, which can lead to a soggy crust. Keep the sauce contained strictly within the inner circle of the pizza.

Another error is failing to seal the dough pockets properly; if they are not pinched shut, the cheese will leak out during baking. Finally, avoid overcrowding the pizza stone, as this prevents proper air circulation and can result in uneven browning.

How to tell it’s done

The pizza is done when the crust has puffed up and reached a deep golden-brown color. The mozzarella inside the crust pockets should be completely melted, and the vodka sauce in the center should be bubbling hot.

Because the meatballs are pre-cooked, you are primarily baking to achieve the perfect dough texture and to heat the filling through to an internal temperature of at least 160°F (71°C).

  • Ground meat: 160°F (71°C) in the thickest part
