Tips for success
For the best mirror glaze, ensure the cake is frozen solid and the glaze is at the right temperature—usually around 90°F (32°C). Pour the glaze in a circular motion from the center outward, letting it flow over the edges.
Use a bench scraper to smooth the sides if needed. Work quickly, as the glaze sets fast. If the glaze becomes too thick, gently reheat it.
When slicing the cake, use a large chef’s knife dipped in hot water and wiped dry between cuts. This ensures clean, neat slices without dragging the glaze.
For a more dramatic presentation, serve each slice with a spoonful of extra mango compote or a few passion fruit seeds. The cake is rich, so a small slice is satisfying.
Variations
- Passion Fruit Glaze: Replace part of the liquid in the mirror glaze with passion fruit puree for a tangier, more tropical flavor. Reduce the sugar slightly to balance the tartness.
- Chocolate Base: Add a thin layer of chocolate cake or brownie at the bottom of the mousse for extra richness. Press a crumbly chocolate cookie crust instead.
- Berry Compote: Swap the mango compote for a mixed berry compote using strawberries, raspberries, and blueberries. Adjust sugar to taste.
- Coconut Cream Layer: Add a layer of coconut cream (coconut milk solids) between the mousse and compote for an extra coconut punch. Whip the cream with a little sugar.
Storage and make-ahead
- Fridge
- Refrigerate the glazed cake for up to 3 days. Cover loosely to prevent the glaze from absorbing odors.
- Freezer
- Freeze the unglazed mousse cake for up to 1 month. Wrap tightly in plastic wrap and then foil. Thaw in the refrigerator overnight before glazing and serving.
- Reheat
- This cake is served chilled; do not reheat. If frozen, thaw in the refrigerator for several hours before serving.
Store the mirror cake in the refrigerator, loosely covered, for up to 3 days. The glaze may soften slightly but will still be glossy. If storing for longer, keep it in the freezer for up to 1 month. Thaw in the refrigerator overnight before serving.
This cake is ideal for making ahead. Assemble the mousse cake and freeze it unglazed for up to 1 month. When ready to serve, apply the glaze and let it set. Alternatively, glaze the cake a day in advance and refrigerate; the glaze will remain shiny. The compote can also be made up to 3 days ahead and kept refrigerated.
Serving ideas
Serve the cake chilled, straight from the refrigerator. For the best experience, let it sit at room temperature for 5-10 minutes before slicing, so the mousse softens slightly.
Pair with a tropical fruit salad or a scoop of coconut sorbet for an extra indulgence. The passion fruit seeds add a bright, tangy contrast to the sweet coconut and mango.
This cake is a celebration centerpiece. For a dramatic presentation, place it on a cake stand and garnish with additional mango cubes and mint leaves.
Slice thick wedges to show off the layers. Each bite should be a balance of creamy mousse, fruity compote, and crunchy chocolate. Enjoy with a cup of coffee or a glass of sparkling wine.

Mango Passion Fruit Coconut Mousse Mirror Cake: Showstopper

Ingredients
- 8 oz coconut white chocolate, grated
- 2 cups coconut milk, chilled
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 2 tsp powdered gelatin
- 3 tbsp cold water
- 2 cups diced mango
- 1/4 cup granulated sugar
- 1 tbsp lemon juice
- 1 batch mirror glaze (store-bought or homemade)
- 1/4 cup fresh passion fruit seeds
- 1/2 cup coconut chocolate curls
Instructions
- Slice the golden mango into neat cubes and skewer them if desired. Grate the solid block of coconut white chocolate on a box grater into a fresh pile of snowy white. Set both aside.
- In a small bowl, sprinkle gelatin over cold water and let bloom for 5 minutes. In a saucepan, heat the coconut milk and sugar until warm. Add the bloomed gelatin and stir until dissolved. Remove from heat and let cool slightly. Whip the heavy cream to soft peaks and fold into the coconut mixture until smooth.
- In a small saucepan, combine diced mango, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the mango softens and the mixture thickens slightly, about 5 minutes. Remove from heat and let cool.
- Pour the fluffy coconut mousse into a glass ring mold, filling halfway. Spoon the diced mango compote into the center, then top with the remaining mousse. Smooth the top with an offset spatula. Freeze for at least 4 hours or until firm.
- Remove the frozen mousse cake from the mold and place on a wire rack over a baking sheet. Pour the mirror glaze over the top, covering the entire cake. Let the excess drip off. Allow the glaze to set for a few minutes.
- Carefully transfer the glazed cake to a serving plate. Spoon fresh passion fruit seeds and coconut chocolate curls around the crown. Slice a thick triangular wedge and lift the tall slice to reveal the layered mousse and glossy finish.
