Tips for success
For the cleanest cuts, use a long, sharp chef's knife and slice with a gentle sawing motion. If the chocolate cracks, let it warm up slightly at room temperature before slicing.
You can also score the bark lightly with a knife before it fully sets, then break it along the lines once firm.
Store the bark in an airtight container at room temperature for up to a week, or in the refrigerator for longer.
If refrigerated, let it come to room temperature before serving to restore the best texture. The bark also freezes well — wrap it tightly in plastic and freeze for up to 3 months.
Variations
- Sea Salt Sprinkle: After scattering the nuts and coconut, sprinkle a pinch of flaky sea salt over the top. The extra salt enhances the caramel and chocolate flavors, making the bark even more addictive.
- Espresso Bark: Add 1 teaspoon of instant espresso powder to the melted chocolate before pouring. The coffee flavor deepens the chocolate and pairs wonderfully with the caramel and nuts.
- White Chocolate Drizzle: Melt 2 ounces of white chocolate and drizzle it over the set bark in thin lines. This adds a beautiful contrast and a touch of extra sweetness.
- Spiced Bark: Stir 1/2 teaspoon of ground cinnamon and a pinch of cayenne into the melted chocolate. The warm spice adds a subtle heat that balances the sweetness.

Serving ideas
Serve the bark as a dessert or snack, broken into shards or sliced into neat bars.
It pairs beautifully with coffee or espresso, as the bitterness of the chocolate and the saltiness of the caramel complement the coffee's richness. It also makes a lovely gift when wrapped in a clear bag tied with a ribbon.
For a more indulgent presentation, serve the bark on a platter with fresh berries and a dusting of cocoa powder. The berries add a bright, tart contrast to the sweet, nutty bark. You can also crumble it over ice cream or yogurt for an instant upgrade.

Macadamia Coconut Caramel Dark Chocolate Bark

Ingredients
- 1 1/2 cups roasted macadamia nuts
- 1/2 cup golden toasted coconut flakes
- 12 oz 70% dark chocolate, chopped
- 1/2 cup salted caramel sauce, store-bought or homemade
Instructions
- Coarsely chop the roasted macadamia nuts with a sharp chef's knife. You want a mix of halves and smaller pieces for texture. If your coconut flakes are not already toasted, toast them in a dry skillet over medium heat, stirring frequently, until golden and fragrant. Set both aside.
- Using a box grater, grate the block of 70% dark chocolate into fine curls. This will help it melt evenly and create a glossy finish. If the chocolate is too soft, chill it for 10 minutes before grating.
- Melt the grated chocolate in a heatproof bowl set over a pan of barely simmering water, stirring occasionally, until completely smooth and glossy. Alternatively, melt in the microwave in 20-second bursts, stirring between each. Do not overheat.
- Line a metal tray with parchment paper. Pour the melted chocolate onto the tray and spread it into an even rectangle about 1/4-inch thick using a spatula. Smooth the top as much as possible.
- Drizzle the salted caramel sauce in thick ribbons over the melted chocolate. Use a spoon or a squeeze bottle to create a zigzag pattern. The caramel should be thick enough to stay on top of the chocolate without sinking in completely.
- Immediately scatter the chopped macadamia nuts evenly over the caramel and chocolate. Then sprinkle the toasted coconut flakes over the top. Gently press the toppings into the chocolate so they stick.
- Let the bark set at room temperature until completely firm, about 1 hour. If your kitchen is warm, you can refrigerate it for 20 to 30 minutes to speed up the process. Do not refrigerate for too long or the chocolate may bloom.
- Once set, lift the bark from the tray using the parchment paper. Place it on a cutting board. Using a sharp chef's knife, slice the bark into thick bars, about 2 inches wide. Then lift one bar and snap it cleanly in half to reveal the layered cross section.
