Before you start
Before starting, make sure you have all your ingredients ready. Chop the macadamia nuts coarsely with a sharp chef's knife. If your coconut flakes are not already toasted, toast them in a dry skillet over medium heat, stirring often, until golden and fragrant.
Grate the dark chocolate using a box grater into a bowl. Line a metal tray with parchment paper. Have the salted caramel sauce at room temperature so it is easy to drizzle.
Ingredients at a glance (4)
- 1 1/2 cups roasted macadamia nuts
- 1/2 cup golden toasted coconut flakes
- 12 oz 70% dark chocolate, chopped
- 1/2 cup salted caramel sauce, store-bought or homemade
Instructions
Prep and Melt
- Prep the nuts and coconutCoarsely chop the roasted macadamia nuts with a sharp chef's knife. You want a mix of halves and smaller pieces for texture. If your coconut flakes are not already toasted, toast them in a dry skillet over medium heat, stirring frequently, until golden and fragrant. Set both aside.Look for The nuts are roughly chopped with some larger pieces remaining; the coconut is lightly browned and smells nutty.Tip Do not over-chop the nuts — a few larger chunks add a satisfying crunch.
- Grate the chocolateUsing a box grater, grate the block of 70% dark chocolate into fine curls. This will help it melt evenly and create a glossy finish. If the chocolate is too soft, chill it for 10 minutes before grating.Look for You have a pile of dark, delicate chocolate curls.Tip Grate on the large holes of the box grater for a mix of fine and slightly thicker shards.
At the end of this phase, you should have a bowl of glossy, fully melted chocolate, a pile of chopped nuts, and toasted coconut ready to go.
The chocolate should be smooth and fluid, with no lumps. The nuts should be roughly chopped with some larger pieces for texture. The coconut should be golden and fragrant, not burnt.
Assemble the Bark
- Melt the chocolateMelt the grated chocolate in a heatproof bowl set over a pan of barely simmering water, stirring occasionally, until completely smooth and glossy. Alternatively, melt in the microwave in 20-second bursts, stirring between each. Do not overheat.Look for The chocolate is fluid, shiny, and has no lumps.Tip Make sure no water touches the chocolate or it will seize.
- Pour and spread the chocolateLine a metal tray with parchment paper. Pour the melted chocolate onto the tray and spread it into an even rectangle about 1/4-inch thick using a spatula. Smooth the top as much as possible.Look for The chocolate layer is even and covers the tray in a thin, smooth sheet.Tip Use an offset spatula for the smoothest surface.
- Drizzle the caramelDrizzle the salted caramel sauce in thick ribbons over the melted chocolate. Use a spoon or a squeeze bottle to create a zigzag pattern. The caramel should be thick enough to stay on top of the chocolate without sinking in completely.Look for Golden caramel ribbons sit on top of the dark chocolate, creating a marbled pattern.Tip If the caramel is too runny, let it cool slightly before drizzling.
- Scatter the toppingsImmediately scatter the chopped macadamia nuts evenly over the caramel and chocolate. Then sprinkle the toasted coconut flakes over the top. Gently press the toppings into the chocolate so they stick.Look for The surface is covered with nuts and coconut, with caramel peeking through.Tip Work quickly before the chocolate sets, so the toppings adhere well.
The chocolate is spread evenly in the tray, with caramel ribbons drizzled on top in a zigzag pattern. The nuts and coconut are scattered evenly over the surface, gently pressed in so they stick. The bark looks glossy and inviting, with a mix of dark chocolate, golden caramel, and crunchy toppings.
Set and Slice
- Set the barkLet the bark set at room temperature until completely firm, about 1 hour. If your kitchen is warm, you can refrigerate it for 20 to 30 minutes to speed up the process. Do not refrigerate for too long or the chocolate may bloom.Look for The chocolate is firm to the touch and the surface is shiny.Tip For a clean break, let the bark set completely before slicing.
- Slice and snapOnce set, lift the bark from the tray using the parchment paper. Place it on a cutting board. Using a sharp chef's knife, slice the bark into thick bars, about 2 inches wide. Then lift one bar and snap it cleanly in half to reveal the layered cross section.Look for The bark breaks with a clean snap, showing layers of chocolate, caramel, and nuts.Tip For a rustic look, break the bark into irregular shards instead of slicing.
The bark is completely firm and can be lifted from the tray without bending. Slicing or snapping it produces clean edges and a visible cross-section of dark chocolate, caramel, and nuts. The texture is crunchy, and the caramel is set but still slightly chewy.
Common mistakes
Avoid using chocolate chips, as they often contain stabilizers that prevent them from melting as smoothly. Do not overheat the chocolate — melt it gently and stir frequently.
When drizzling the caramel, make sure it is not too hot or too thin, or it will sink into the chocolate and disappear. Also, do not skip toasting the coconut if it is not already toasted; raw coconut has a different texture and flavor.
How to tell it’s done
The bark is done when it is completely firm to the touch and breaks with a clean snap. If you slice it with a knife, the layers should be distinct: dark chocolate at the bottom, caramel ribbons in the middle, and nuts and coconut on top.
The chocolate should be glossy and not sticky. If you refrigerated it, let it sit at room temperature for a few minutes before slicing to prevent the chocolate from cracking too hard.
