Tips for success
For the best texture, toast the kataifi just before assembling. It should be deeply golden and fragrant. If you’re making this ahead, keep the toasted kataifi in an airtight container for up to a day, but re-crisp it in a dry skillet for a minute before using.
The pistachio cream can be warmed slightly to make folding easier, but it should remain thick enough to hold its shape.
When pouring the chocolate, do it slowly and evenly to ensure full coverage. If you want a thicker chocolate shell, let the first layer set in the fridge for 10 minutes, then pour a second layer.
For a more dramatic presentation, use tall glasses and serve with a long spoon. The contrast of the green pistachio and red strawberry against the dark chocolate is stunning.
Variations
- Berry Swap: Replace strawberries with raspberries or a mix of berries. The tartness of raspberries pairs beautifully with the sweet pistachio cream and chocolate.
- Nut-Free Option: Use a sunflower seed butter or a cookie butter in place of pistachio cream, and skip the pistachio topping. This makes the dessert nut-free, though the flavor will differ.
- White Chocolate Drizzle: After pouring the dark chocolate, drizzle melted white chocolate over the top for a marbled effect. This adds sweetness and a beautiful contrast.
- Salted Caramel Twist: Add a layer of salted caramel between the strawberries and the pistachio cream. The saltiness cuts through the richness and adds another dimension.
Storage and make-ahead
- Fridge
- Store leftover cups in the refrigerator for up to 2 days. The chocolate may soften slightly, but the dessert remains delicious.
- Freezer
- Freezing is not recommended as the strawberries and cream may become watery and the kataifi will lose its crunch.
- Reheat
- This dessert is best enjoyed cold. If the chocolate has softened, you can place the cups in the refrigerator for 15 minutes to firm up again.
Store any leftover cups in the refrigerator, covered, for up to 2 days. The kataifi may lose some crunch, but the dessert will still be delicious. To refresh the crunch, you can sprinkle a few extra toasted kataifi pieces on top before serving.
You can assemble the cups (without the chocolate) up to a day in advance and keep them refrigerated. When ready to serve, melt the chocolate, pour it over, and chill briefly to set. The chocolate pour is best done just before serving to maintain the crackle.
Serving ideas
Serve these cups chilled, straight from the fridge, so the chocolate is firm and crackly. The contrast between the cold, creamy layers and the warm (or room-temperature) chocolate is delightful.
For an extra touch, add a dollop of whipped cream or a scoop of vanilla ice cream on top, though they’re perfect on their own.
These cups are ideal for a dinner party dessert or a special weekend treat. They can be made in individual portions, making them easy to serve.
Pair them with a strong espresso or a glass of cold milk to balance the richness. The vibrant colors and elegant layers make them a showstopper.

Crunchy Pistachio Strawberry Chocolate Cups

Ingredients
- 2 cups fresh strawberries, hulled and halved
- 1 cup buttery toasted kataifi
- 3/4 cup Sicilian pistachio cream
- 1 cup 54% Belgian chocolate callets
- crushed pistachios, for topping, to taste
Instructions
- Hull the strawberries and slice them into halves. In a mixing bowl, fold the buttery toasted kataifi into the Sicilian pistachio cream until well combined.
- Divide half of the strawberry halves between two clear cups or glasses. Top each with half of the pistachio kataifi mixture, then repeat with the remaining strawberries and kataifi cream.
- Place the Belgian chocolate callets in a heatproof bowl. Melt gently over a saucepan of simmering water or in the microwave in 20-second bursts, stirring until smooth and silky.
- Pour the warm melted chocolate generously over the chilled strawberry and kataifi layers, making sure to cover the top and let it cascade down the sides.
- Place the cups in the refrigerator for at least 30 minutes, or until the chocolate has set and the layers are firm.
- Before serving, sprinkle crushed pistachios over the top of each cup. Serve with a long spoon to scoop through all the layers.
