Tips for success
For the crispiest fries, do not thaw the frozen waffle fries before air frying. The ice crystals on the surface help create a steam barrier that results in a crispier exterior.
Also, shake the basket halfway through cooking to ensure even browning. If you have a convection oven, you can use the same method, but increase the cooking time to 20-25 minutes, turning the fries once.
When tossing the fries with the truffle oil, do it immediately after cooking while they are still hot. The heat helps the oil distribute evenly and allows the cheese to melt slightly.
Use a large bowl to give yourself room to toss without breaking the fries. If you want to add a little extra richness, a drizzle of melted butter over the fries before adding the cheese is a delicious twist.
Variations
- Spicy Kick: Add 1/2 teaspoon of cayenne pepper or a dash of hot sauce to the aioli for a spicy twist. You can also sprinkle a pinch of chili flakes over the finished fries along with the parsley.
- Herb Garden: Swap the parsley for a mix of fresh chives, dill, and tarragon. The herbs add a fresh, aromatic note that complements the truffle oil beautifully.
- Bacon Lover's: Crumble 4 slices of cooked bacon over the fries before adding the Parmesan. The smoky, salty bacon pairs perfectly with the earthy truffle and nutty cheese.
- Vegan Version: Use vegan mayonnaise for the aioli and a vegan Parmesan-style cheese. Ensure the waffle fries are vegan (most are). This makes the dish entirely plant-based while keeping all the flavor.
Storage and make-ahead
- Fridge
- Store leftover fries and aioli separately in airtight containers in the refrigerator for up to 2 days.
- Freezer
- These fries are best enjoyed fresh and do not freeze well.
- Reheat
- Reheat leftover fries in the air fryer or oven at 400°F (200°C) for 3-5 minutes until crisp. The aioli can be used cold.
Leftover fries can be stored in an airtight container in the refrigerator for up to 2 days. However, they will lose their crispiness.
To reheat, place them in a single layer on a baking sheet and warm in a 400°F (200°C) oven for 5-7 minutes, or in the air fryer for 3-4 minutes. The aioli can be refrigerated in a sealed container for up to 3 days.
The aioli can be made up to 2 days in advance and stored in the refrigerator. This allows the flavors to meld. The fries are best cooked fresh, but you can prep the ingredients ahead of time by grating the cheese, chopping the parsley, and mincing the garlic. When ready to serve, just air fry the fries and assemble.
Serving ideas
Serve these loaded fries immediately after assembling, while the cheese is still melty and the fries are crisp. They are perfect as an appetizer for a party, a side dish for burgers or sandwiches, or a fun snack for game day. Provide small plates and forks for easy eating, and put the aioli in a small bowl for dipping.
For a more substantial meal, top the fries with cooked, sliced steak or grilled chicken, or serve them alongside a simple green salad. The truffle flavor pairs well with roasted meats and vegetables.
You can also double the recipe for a larger crowd, cooking the fries in batches and keeping them warm in a low oven while you finish the rest.

- 1/2 tsp garlic powder
- 100 g mayonnaise
- 2 cloves garlic, minced
- 1 tbsp fresh lemon juice
- freshly ground black pepper, to taste
Instructions
- In a small bowl, combine the mayonnaise, minced garlic, lemon juice, and a generous pinch of black pepper. Whisk until smooth and creamy. Set aside in the refrigerator while preparing the fries.
- Preheat the air fryer to 400°F (200°C) for 3 minutes. Spread the frozen waffle fries in a single layer in the air fryer basket. You may need to cook in batches to avoid overcrowding.
- Air fry the waffle fries at 400°F (200°C) for 16 minutes, shaking the basket halfway through, until they are deep golden brown and crispy.
- Carefully transfer the hot fries to a large mixing bowl. Immediately drizzle with the white truffle oil, then sprinkle with the garlic powder and flaky sea salt.
- Using a large spoon or spatula, toss the fries thoroughly to coat every piece with the truffle oil, garlic powder, and sea salt. Continue tossing until the fries are evenly seasoned.
- Sprinkle the freshly grated Parmigiano-Reggiano and chopped parsley over the hot fries. Toss once more to distribute the cheese and herbs evenly.
- Transfer the loaded fries to a serving platter or bowl. Serve immediately with the garlic aioli on the side for dipping.
