Tips for success

For an extra layer of flavor and texture, brush the outside of the potato skins with a tiny amount of cooking oil before their first bake. This simple step helps heat transfer evenly to the skin, making it incredibly crispy and delicious.

It ensures that the entire potato skin is enjoyable to eat rather than just scooping out the filling, adding a wonderful crunch to every single bite.

When mashing the filling, always work while the potatoes are still warm. Warm potatoes mash much more easily and efficiently than cold ones, resulting in a smoother, more cohesive texture.

If the potatoes cool down too much before mashing, the starch will lock up, and you will end up with a lumpy, heavy filling that is difficult to stir and lacks that signature light, fluffy quality.

Variations

  • Spicy Cheddar: Top the potatoes with shredded pepper jack cheese or add a pinch of cayenne pepper to the mash for a spicy kick.
  • Garlic Herb: Mix finely minced garlic and fresh chopped chives into the warm potato mash before stuffing the skins.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
Freezer
Freeze stuffed unbaked potatoes on a tray, wrap tightly, and store for up to 3 months. Bake from frozen.
Reheat
Reheat in a 350°F (175°C) oven for 15 to 20 minutes until heated through and the cheese is sizzling.

Store any leftover loaded potatoes in an airtight container in the refrigerator within two hours of cooking. They will keep well for up to three to four days. To maintain the crispness of the skins when reheating, avoid the microwave and instead use an oven or toaster oven heated to 350°F (175°C) until the center is hot and the cheese is bubbly.

These potatoes are an excellent make-ahead option for busy days or entertaining. You can bake, scoop, mash, and stuff the potato skins up to twenty-four hours in advance.

Arrange the stuffed and topped potatoes on a baking sheet, cover them tightly, and refrigerate. When ready to serve, bake them directly from the fridge, adding five extra minutes to the final baking time.

Serving ideas

Serve these loaded potatoes piping hot, straight from the oven, arranged beautifully on a warm serving platter. They make a spectacular side dish alongside grilled steaks, roasted chicken, or barbecued ribs, adding a rich and comforting element to any hearty meal.

The contrast of the bubbling cheese and crispy bacon makes them an instant centerpiece that draws everyone in and complements almost any main course.

For a casual party or game-day gathering, you can serve these potato halves as a standalone appetizer. Set up a toppings bar next to the platter with extra bowls of sliced chives, pickled jalapeños, or hot sauce, allowing guests to customize their loaded potatoes to their liking. They are easy to pick up and eat, making them perfect for mingling and sharing with friends.

Frequently asked questions

Can these loaded potatoes be frozen?
Yes, you can freeze the stuffed potatoes before the final bake. Wrap them tightly in plastic wrap and aluminum foil, then freeze for up to three months. Bake from frozen at 375°F (190°C) for thirty to thirty-five minutes.
Why did the potato skins tear during scooping?
Tearing usually happens if the potatoes are scooped while too hot, or if the border left behind is too thin. Let the potatoes cool for ten minutes, and leave a sturdy quarter-inch shell of flesh to support the skin.
Can other types of cheese be used?
Absolutely. While cheddar is classic, Monterey Jack, pepper jack, Swiss, or Gruyere all melt beautifully and offer fantastic flavor variations. For the best melt, always shred the cheese yourself from a block.

Loaded Cheesy Bacon Potatoes with Crispy Bacon

Two loaded potato halves topped with melted cheddar cheese and crispy bacon on a white platter

Ingredients

  • 2 large russet potatoes, washed and dried
  • 1 cup cheddar cheese, shredded
  • 4 slices bacon, cooked and crumbled

Instructions

  1. Preheat the oven to 400°F (204°C). Pierce the russet potatoes several times with a fork to allow steam to escape. Place them directly on the oven rack and bake for 50 to 60 minutes until they are easily pierced with a knife and the skin is crispy.
  2. Allow the baked potatoes to cool for 10 minutes until safe to handle. Cut each potato in half lengthwise. Carefully scoop out the warm potato flesh into a medium bowl, leaving a thin shell about one-quarter inch thick to maintain the structure of the potato skins.
  3. Carefully mash the warm potato flesh in the bowl using a fork or potato masher. Work quickly while the potato is still hot to ensure a light, fluffy texture without any large lumps. Avoid over-mashing the mixture, as this can release too much starch and make the filling gummy instead of fluffy and smooth.
  4. Spoon the mashed potato mixture evenly back into the hollowed-out potato skins. Place the stuffed halves onto a baking sheet. Generously sprinkle the shredded cheddar cheese and crumbled bacon over the top of each potato half.
  5. Return the loaded potatoes to the oven at 400°F (204°C) for 10 to 12 minutes. Bake until the cheddar cheese is completely melted, bubbling, and starting to turn golden brown around the edges, and the bacon is sizzling.
