Tips for success

To achieve the ultimate flaky texture, always keep your puff pastry as cold as possible before it goes into the hot oven. If you find that the dough has become warm and limp during the assembly process, simply place the filled and sealed pastries on their baking sheet in the freezer for ten to fifteen minutes before brushing them with the egg wash and baking.

This rapid chilling solidifies the butter layers again, ensuring a dramatic, airy rise and an incredibly crispy crust once they hit the high heat of the preheated oven.

For the best flavor and texture, grate your own cheddar cheese from a block rather than buying pre-shredded cheese. Pre-packaged shredded cheese is coated with anti-caking agents like potato starch, which prevents the cheese from melting smoothly and can result in a slightly gritty or dry texture inside your pastries.

Freshly grated cheese melts into a luxurious, cohesive, and gooey layer that perfectly binds the seasoned ground beef together, delivering that classic cheeseburger experience with every single bite.

Variations

  • Bacon Cheeseburger Pastries: Add crispy cooked bacon bits to the ground beef mixture before assembling for a smoky, savory twist.
  • Spicy Jalapeño Burger Pastries: Mix finely diced pickled jalapeños into the beef and use pepper jack cheese for a spicy kick.

Storage and make-ahead

Fridge
Store cooled leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
Freezer
Freeze assembled, unbaked pastries or wrapped baked leftovers in a freezer bag for up to 2 months.
Reheat
Reheat in a 375°F (190°C) oven or air fryer for 8 to 10 minutes until the pastry is crisp and the center reaches 160°F (71°C).

Store any leftover cheeseburger pastries in an airtight container in the refrigerator once they have cooled completely (allow them to cool at room temperature for no more than 2 hours before refrigerating). To prevent them from becoming soggy, avoid storing them while they are still warm, as steam will condense inside the container.

They will keep well in the fridge for up to three to four days. For longer storage, wrap each cooled pastry individually in plastic wrap and place them in a heavy-duty freezer bag; they can be frozen for up to two months.

These pastries are incredibly freezer-friendly and make an excellent make-ahead meal. You can fully assemble, seal, and crimp the pastries, then place them on a parchment-lined baking sheet and freeze them until solid. Once frozen, transfer them to a freezer-safe bag.

When you are ready to serve, do not thaw them; simply place the frozen pastries directly onto a lined baking sheet, brush them with fresh egg wash, and bake at 400°F (200°C) for an extra five to ten minutes until golden and heated through.

Serving ideas

Serve these loaded cheeseburger pastries warm, sliced in half diagonally to showcase the beautiful layers of seasoned beef and melted cheese inside. Arrange them on a large wooden serving platter or a clean white dish, and garnish generously with finely chopped fresh parsley to add a vibrant pop of color and a touch of freshness. They make a fantastic standalone snack or appetizer for parties, game days, or casual get-togethers where guests can easily pick them up and enjoy them.

To complete the cheeseburger theme, serve these pastries alongside classic burger condiments. A dipping station featuring ketchup, yellow or Dijon mustard, sweet pickle relish, and a tangy burger sauce made from mayonnaise and relish pairs wonderfully with the rich, buttery pastry. For a complete meal, serve them with a crisp green salad tossed in a light vinaigrette, crunchy french fries, or sweet potato wedges to balance the rich and savory flavors of the pastries.

Frequently asked questions

Can puff pastry be thawed in the microwave?
No, thawing puff pastry in the microwave will melt the butter layers, ruining the pastry's ability to puff and rise. Always thaw it in the refrigerator or on the counter.
Why did the cheese leak out of the pastries during baking?
This usually happens if the edges were not sealed tightly enough or if the pastries were overfilled. Ensure you leave a clean border around the filling and crimp the edges firmly with a fork.
Can these be baked in an air fryer?
Yes, bake them in a single layer in a preheated air fryer at 375°F (190°C) for 12 to 15 minutes until golden brown and cooked through to 160°F (71°C).

Loaded Cheeseburger Pastries with Crispy Puff Pastry

Ingredients

  • 1 lb ground beef
  • 1 tbsp burger seasoning
  • 2 sheets puff pastry, thawed
  • 1 1/2 cups shredded cheddar cheese
  • 1 large egg
  • finely chopped fresh parsley, for serving

Instructions

  1. Heat a large skillet over medium-high heat. Add the ground beef, breaking it up with a spatula. Season with the burger seasoning. Cook, stirring occasionally, until the beef is fully browned and has reached a safe internal temperature of 160°F (71°C), about 6 to 8 minutes. Drain the excess grease using a fine-mesh strainer and let the beef cool in the refrigerator.
  2. On a lightly floured work surface, gently roll out the thawed puff pastry sheets to smooth any creases. Cut each sheet into four equal rectangles. Prepare your assembly line with the cooled ground beef and shredded cheddar cheese nearby.
  3. Place a portion of the cooled ground beef onto one half of each pastry rectangle, leaving a half-inch border. Top the beef with a generous spoonful of shredded cheddar cheese. Fold the empty half of the pastry over the filling to form a pocket, then press the edges firmly and crimp with a fork to seal.
  4. In a small bowl, whisk the egg until smooth. Place the sealed pastries onto a baking sheet lined with parchment paper. Using a pastry brush, lightly coat the top of each pastry with the egg wash to ensure a shiny, golden finish.
  5. Bake in the preheated oven at 400°F (200°C) until the pastries are puffed and a deep golden brown, about 15 to 20 minutes. Ensure the egg wash is fully cooked and the pastries are hot throughout, reaching 160°F (71°C) in the center.
  6. Remove the pastries from the oven and let them cool on the baking sheet for 5 minutes. Garnish with the finely chopped fresh parsley, slice diagonally if desired, and serve warm while the cheese is beautifully melted.
