Tips for success

For the most flavorful chicken, season generously and don't move it too soon in the pan—let it develop a golden crust.

Resting the chicken after cooking is crucial; it allows the juices to redistribute, so the slices stay moist. If you prefer a spicier kick, add a pinch of red pepper flakes to the sauce.

To make the dish more substantial, add sautéed mushrooms or spinach in with the sauce. You can also swap the fettuccine for gluten-free pasta if needed; just adjust the cooking time. The sauce is forgiving, so feel free to adjust the lemon to your taste.

Variations

  • Add Vegetables: Sauté 1 cup of sliced mushrooms or a handful of baby spinach in the skillet before making the sauce. Cook mushrooms until browned, or wilt the spinach quickly, then proceed with the garlic and cream.
  • Spicy Alfredo: Add 1/4 teaspoon of red pepper flakes along with the garlic for a gentle heat. Or stir in a dash of hot sauce at the end for a tangy kick.
  • Shrimp Alfredo: Substitute 1 pound of peeled shrimp for the chicken. Sear the shrimp for 2 minutes per side until pink and cooked through, then remove and proceed with the sauce. Add the shrimp back at the end.
  • Herb Garden: Replace the parsley with a mix of fresh basil and chives. Add the herbs just before serving to preserve their vibrant color and flavor.

Storage and make-ahead

Fridge
Refrigerate in an airtight container for up to 3 days. Reheat gently with a splash of cream or milk.
Freezer
Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the fridge and reheat gently, adding a little cream if needed.
Reheat
Reheat in a skillet over medium-low heat, adding a splash of milk or cream to loosen the sauce. Stir frequently until heated through.

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop with a splash of milk or cream to restore the sauce's silkiness. The pasta may absorb some sauce, so add a little liquid when reheating.

You can cook the chicken and pasta ahead of time, but the sauce is best made fresh. If prepping, cook the chicken, slice it, and refrigerate.

Cook the pasta just before serving. Make the sauce in the skillet, then add the pasta and chicken to reheat gently.

Serving ideas

Serve this lemon garlic chicken Alfredo immediately, while the sauce is still glossy and warm. Twirl the pasta into nests with tongs or a fork, then top with sliced chicken.

Finish with a shower of Parmesan, fresh parsley, and a crack of black pepper. A side of garlic bread or a simple green salad rounds out the meal.

For a more elegant presentation, arrange the chicken slices in a fan over the pasta and garnish with lemon zest curls.

This dish pairs well with a crisp white wine like Pinot Grigio or Sauvignon Blanc. Leftovers, if any, are delicious cold straight from the fridge, though best reheated.

Frequently asked questions

Can this dish be made ahead of time?
Yes, but the pasta may absorb sauce as it sits. Cook the chicken and pasta ahead, store separately, and make the sauce fresh when ready to serve. Reheat the sauce, then toss with the pasta and sliced chicken.
Why does the sauce sometimes curdle?
Curdling happens when the cream is overheated or meets an acidic ingredient too quickly. Keep the heat at a gentle simmer and stir constantly when adding lemon juice. Using heavy cream with at least 36% fat also helps stabilize the sauce.
Can you use half-and-half instead of heavy cream?
Yes, but the sauce will be thinner and less rich. To compensate, add a little extra Parmesan or a slurry of cornstarch and water to thicken it. Keep the heat low to prevent separation.
What is the best way to reheat leftovers?
Reheat gently on the stovetop over low heat with a splash of milk or cream. Stir frequently until hot. Avoid the microwave if possible, as it can make the pasta rubbery and the sauce oily.
Can this be made gluten-free?
Absolutely. Use gluten-free fettuccine or another long pasta, and ensure the Parmesan is gluten-free (some aged cheeses may contain traces). The rest of the ingredients are naturally gluten-free.

Lemon Garlic Chicken Alfredo Ready in 30 Minutes

Prep 10 minCook 20 minTotal 30 minServes 4
A fork twirling fettuccine with lemon garlic cream sauce, topped with sliced chicken breast and fresh parsley.

Ingredients

  • 1 1/2 lb boneless, skinless chicken breast
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 12 oz fettuccine
  • 1 1/2 cups heavy cream
  • 4 cloves garlic, minced
  • 1 tbsp lemon zest
  • 2 tbsp fresh lemon juice
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Pat the chicken breasts dry with paper towels. In a small bowl, mix the smoked paprika, garlic powder, salt, and black pepper. Rub the spice mixture all over the chicken breasts. Heat the olive oil and butter in a large skillet over medium-high heat. Add the chicken and cook for 4 minutes per side, until golden brown and caramelized. The internal temperature should reach 165°F (74°C) when measured with an instant-read thermometer. Transfer the chicken to a plate and let it rest while you prepare the sauce.
  2. Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package directions until al dente. Reserve about 1 cup of pasta water before draining. Drain the pasta and set it aside.
  3. In the same skillet used for the chicken, reduce the heat to medium. Add the minced garlic and cook for 30 seconds until fragrant. Pour in the heavy cream and add the lemon zest and lemon juice. Bring to a gentle simmer, scraping up any browned bits from the bottom of the pan. Let the sauce cook for 2-3 minutes until it slightly thickens.
  4. Add the cooked fettuccine to the skillet with the sauce. Toss vigorously with tongs to coat every strand. If the sauce seems too thick, add a splash of the reserved pasta water to loosen it. Stir in the grated Parmesan cheese and half of the chopped parsley. Continue tossing until the cheese is melted and the sauce is glossy and clings to the pasta.
  5. Slice the rested chicken breasts into 1/2-inch thick slices. Arrange the slices over the pasta. Sprinkle with the remaining parsley and finish with a generous crack of black pepper and a little extra lemon zest if desired.
