Tips for success
For the best texture, use a thick, hearty meat ragu rather than a watery tomato sauce. The sauce provides the moisture that hydrates the no-boil sheets, so it needs to be substantial.
If your ragu is thin, simmer it for a few minutes to thicken it before layering. Also, be generous with the cheese on top — it creates that irresistible blistered crust.
Let the lasagna rest for at least 10 minutes after cooking. This allows the layers to set and makes slicing much easier. Use a wide spatula to lift out portions, and serve on warm plates to keep the lasagna hot. A dollop of cold ricotta on each serving adds a fresh, creamy contrast to the rich, savory layers.
Variations
- Vegetarian: Replace the ground beef and sausage with sautéed mushrooms, zucchini, and spinach. Use a marinara sauce with extra herbs. The layering and cooking time stay the same.
- Spicy: Use hot Italian sausage and add red pepper flakes to the ragu. Top with a mix of provolone and pepper jack for extra heat.
- Four-Cheese: Omit the meat and use a blend of ricotta, mozzarella, provolone, and Parmesan. Add an extra layer of mozzarella for a gooey, cheesy lasagna.
- Gluten-Free: Use gluten-free no-boil lasagna sheets and ensure the ragu and all cheeses are gluten-free. The cooking time may be slightly shorter; check for tenderness.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Cool within 2 hours of cooking. Reheat in the microwave or oven until piping hot.
- Freezer
- Freeze cooled lasagna in a freezer-safe container for up to 3 months. Reheat in a 350°F oven until hot throughout.
- Reheat
- Reheat individual portions in the microwave for 2-3 minutes, or in a 350°F (175°C) oven for 15-20 minutes.
Store leftover lasagna in an airtight container in the refrigerator for up to 4 days. Let it cool for no more than 2 hours before refrigerating.
Reheat individual portions in the microwave or in a 350°F (175°C) oven until heated through. The lasagna also freezes well; wrap tightly and freeze for up to 3 months. Thaw overnight in the refrigerator before reheating.
This lasagna can be assembled the night before and refrigerated, then cooked the next day. Layer all the ingredients in the Crockpot, cover, and store in the refrigerator.
When ready to cook, add 30 minutes to the cooking time to account for the cold start. Alternatively, cook the lasagna fully, let it cool, and refrigerate or freeze for later.
Serving ideas
Serve the lasagna hot, straight from the slow cooker, with a generous square on each plate. Top each serving with a dollop of cold ricotta and a sprinkle of fresh basil ribbons. The cold ricotta adds a creamy, tangy contrast to the warm, savory lasagna. Pair with a simple green salad and crusty bread for a complete meal.
For a rustic presentation, bring the Crockpot to the table and let guests serve themselves. The golden, blistered cheese top is the star, so show it off.
Leftovers are just as delicious the next day — reheat gently to keep the pasta tender. This lasagna is hearty enough to be a main course on its own, but it also works well as part of a larger Italian feast.

Slow-Cooker No-Boil Lasagna: Lazy Comfort Dinner

Ingredients
- 1 cup rich meat ragu (store-bought or homemade)
- 12 no-boil lasagna sheets
- 15 oz whole-milk ricotta
- 1 lb browned ground beef
- 1 lb browned Italian sausage
- 3 cups shredded mozzarella
- 1 cup shredded provolone
- 1/2 cup cold whole-milk ricotta
- 1/4 cup fresh basil leaves, ribboned
Instructions
- Spread the 1 cup of rich meat ragu evenly across the bottom of the Crockpot. Snap the no-boil lasagna sheets to fit the oval shape, covering the sauce in a single layer. Dollop about one-third of the ricotta over the sheets and spread it gently. Sprinkle with one-third of the browned ground beef and one-third of the browned Italian sausage. Top with one-third of the shredded mozzarella and one-third of the shredded provolone. Repeat the layering two more times: sauce, sheets, ricotta, meats, mozzarella, provolone.
- Cover the Crockpot with the glass lid. Set the slow cooker to LOW and cook for 4 hours without lifting the lid. The lasagna is done when the pasta sheets are pillow-soft and the top layer of provolone and mozzarella bubbles into a golden blistered blanket around the ceramic walls. The internal temperature of the meat layers should reach at least 160°F (71°C) to ensure the ground beef and sausage are fully cooked.
- Turn off the slow cooker and let the lasagna rest, uncovered, for 10 minutes. This allows the layers to set and makes slicing easier. Using a wide stainless spatula, slide a tall, saucy square onto a warm porcelain plate. Top each serving with a dollop of cold ricotta and a sprinkle of fresh basil ribbons. Serve hot.
