Before you start

Before you begin, ensure your chicken breast is diced into uniform, bite-sized pieces, which helps them cook at the same rate. Prepare your workspace by gathering all ingredients, including the marinara, broth, and cheeses, so you can easily add them to the crockpot.

Check that your slow cooker is clean and placed on a stable, heat-resistant surface away from any splashes. Having everything pre-measured and ready will make the assembly process seamless and efficient, allowing you to start the cooking cycle without any interruptions.

Ingredients at a glance (10)
  • 2 lb diced chicken breast
  • 32 oz marinara sauce
  • 2 cups chicken broth
  • 1 tbsp Italian seasoning
  • 8 oz cream cheese, cubed
  • 16 oz uncooked rigatoni
  • 2 cups shredded mozzarella
  • 1/2 cup parmesan cheese
  • 1 cup garlic-butter toasted panko
  • Fresh basil leaves, for serving

Instructions

Preparation and Combining

  1. Combine Ingredients
Place the diced chicken breast, marinara sauce, chicken broth, Italian seasoning, cubed cream cheese, and uncooked rigatoni into the crockpot. Stir gently to combine all ingredients, ensuring the pasta is submerged in the liquid to cook evenly.
Look for Ensure the pasta is fully covered by the sauce and broth mixture.
Tip Adding the cream cheese in cubes helps it melt more evenly during the slow cooking process.

At this phase, all components are combined in the crockpot. The mixture should look like a thick, layered blend of raw chicken, dry pasta, and sauce. Ensure the pasta is pushed down into the liquid, as this is the most critical step to prevent crunchy, uncooked noodles later. The cream cheese should be distributed evenly to ensure it melts properly into the marinara as the temperature rises.

Slow Cooking

  1. Slow Cook
Cover the crockpot with the lid and cook on LOW for 2.5 hours. Check that the internal temperature of the chicken reaches at least 165°F (74°C) and the rigatoni is tender.
Look for The pasta should be al dente and the sauce thickened.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Avoid lifting the lid during the first two hours to maintain the internal temperature.

During the cooking phase, the crockpot will be filled with the rich aroma of Italian herbs and simmering tomatoes. The liquid will begin to bubble, and the chicken will cook through in the flavorful broth.

Check that the lid is tightly sealed to maintain the temperature. The pasta will gradually absorb the sauce and expand, softening into the perfect texture while the cream cheese creates a silky, velvety base for the dish.

Topping and Finishing

  1. Add Topping and Serve
Once the cooking time is complete, sprinkle the shredded mozzarella, parmesan cheese, and garlic-butter toasted panko over the top. Replace the lid for a few minutes until the cheese is melted and bubbly. Serve immediately with fresh basil leaves.
Look for The cheese should be completely melted and the panko topping golden and crisp.
Tip Use a wide spatula to scoop portions, ensuring each serving gets plenty of the cheesy pasta and crispy topping.

In the final phase, the transformation is completed by adding the cheese and panko. The mozzarella should melt into a stretchy, gooey layer, while the parmesan adds a sharp, salty depth. The toasted panko provides a necessary textural contrast to the soft pasta. Once the cheese is bubbling and the topping is golden, the dish is ready to be scooped onto plates and served with a garnish of fresh basil.

Common mistakes

A common mistake is overcrowding the crockpot, which can prevent the pasta from cooking evenly; ensure there is enough room for the sauce to circulate. Another error is lifting the lid too frequently during the cooking process, which lets out essential heat and moisture, potentially leading to undercooked pasta.

Finally, be careful not to stir the dish after the initial combination, as this can break down the pasta structure. Adding the panko too early will result in a soft texture rather than the desired crunch.

How to tell it’s done

The dish is perfectly done when the rigatoni is tender yet still has a slight bite, known as al dente, and the sauce has thickened into a creamy consistency. The chicken must be cooked through and reach an internal temperature of at least 165°F (74°C).

The mozzarella should be completely melted and pulling away from the sides of the crockpot, while the garlic-butter panko should appear golden brown and provide a distinct crunch against the soft pasta and tender chicken.

  • Poultry: 165°F (74°C) in the thickest part
