Tips for success
For the most dramatic presentation, serve the cake warm, straight from the pan, with an extra drizzle of the sauce that has collected at the bottom. The contrast between the warm, fudgy cake and the cool, crunchy pistachios is wonderful.
If you want a cleaner cut, chill the cake for 30 minutes before slicing; it will firm up slightly, making it easier to cut neat squares. The cake can be served as is, or with a scoop of vanilla ice cream or a dollop of whipped cream to balance the richness.
To make the cake even more indulgent, you can add a teaspoon of instant espresso powder to the sauce to deepen the chocolate flavor without adding a coffee taste. If you prefer a less sweet dessert, reduce the sugar in the sauce to 1/3 cup.
The cake is best eaten within 24 hours, but leftovers can be stored in the refrigerator for up to 4 days. Let it come to room temperature or reheat briefly in the microwave for a few seconds to restore the saucy texture.
Variations
- Coffee Islak Kek: Add 1 tablespoon of instant espresso powder to the fudge sauce along with the cocoa. The coffee enhances the chocolate flavor without making the cake taste like coffee. It adds a subtle depth that pairs well with the pistachios.
- Nut-Free Version: Omit the pistachios and top the cake with a sprinkle of flaky sea salt or a dusting of cocoa powder. The salt cuts through the sweetness and adds a pleasant contrast. This version is perfect for those with nut allergies.
- Spiced Chocolate: Add 1/2 teaspoon of ground cinnamon and a pinch of cayenne pepper to the cake batter. The warm spices complement the dark chocolate and give the cake a subtle kick. This variation is inspired by Mexican hot chocolate and is surprisingly delicious.
- Peppermint Islak Kek: Add 1/2 teaspoon of peppermint extract to the fudge sauce after it has simmered. Top the cake with crushed peppermint candies instead of pistachios for a festive twist. This version is especially popular during the holidays.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. The cake becomes more fudgy as it sits. Let come to room temperature before serving.
- Freezer
- Freeze the un-sauced cake for up to 2 months. Thaw overnight in the fridge, then pour the warm sauce over and proceed.
- Reheat
- Reheat individual slices in the microwave for 10-15 seconds, or warm the whole pan in a 300°F oven for 10 minutes. The sauce will become glossy again.
Store leftover Islak Kek in an airtight container in the refrigerator for up to 4 days. The cake will continue to absorb the sauce, becoming even more moist and fudgy. Before serving, let it sit at room temperature for about 20 minutes, or warm individual slices in the microwave for 10-15 seconds.
The sauce may thicken when chilled, but it will loosen again when warmed. Do not leave the cake at room temperature for more than 2 hours, as the dairy in the sauce requires refrigeration.
This cake can be made up to 2 days in advance. After pouring the sauce and letting it cool, cover the pan with plastic wrap and refrigerate. The flavor actually improves as the sauce continues to soak in.
Before serving, bring the cake to room temperature or warm it gently in a low oven (300°F/150°C) for 10 minutes. Add the pistachios just before serving to keep them crunchy. The cake can also be frozen for up to 2 months, though the texture may become slightly softer after thawing.
Serving ideas
Serve Islak Kek at room temperature or slightly warm. The cake is incredibly rich, so a small square is satisfying. For an extra touch, spoon some of the sauce that has settled at the bottom of the pan over each slice. A scoop of vanilla ice cream or a dollop of lightly sweetened whipped cream provides a cool, creamy contrast to the intense chocolate. The pistachios add a lovely crunch and a pop of color.
This cake is perfect for birthdays, potlucks, or any gathering where chocolate is welcome. It can be served straight from the pan for a casual feel, or cut into elegant rectangles and plated individually. For a more formal presentation, dust with a little extra cocoa powder or powdered sugar. The cake pairs beautifully with a glass of cold milk or a strong cup of coffee. Enjoy it as a dessert, or even as an afternoon treat with tea.

Islak Kek: Ultra-Moist Turkish Chocolate Cake with Fudge Sauce

Ingredients
- 4 large eggs
- 1 cup granulated sugar
- 1 cup whole milk
- 1 cup vegetable oil
- 3 tbsp dark cocoa powder
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 2 cups whole milk
- 1/2 cup granulated sugar
- 3 tbsp dark cocoa powder
- 4 tbsp unsalted butter
- 1/2 cup crushed pistachios
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking pan. In a large bowl, beat the eggs and sugar with an electric mixer on high speed until pale, thick, and tripled in volume, about 3 to 4 minutes. The mixture should fall in a thick ribbon when the beaters are lifted.
- With the mixer on low speed, slowly pour in the milk and vegetable oil. Mix until just combined. The mixture may look slightly separated, but that is fine. Scrape down the sides of the bowl with a spatula.
- Sift the flour, cocoa powder, and baking powder over the wet mixture. Gently fold with a spatula or whisk on low speed until no streaks of flour remain. The batter will be smooth and slightly runny.
- Pour the batter into the prepared pan and smooth the top. Bake for 25 to 30 minutes, until a toothpick inserted in the center comes out with a few moist crumbs. The cake should spring back when lightly pressed. Let cool in the pan for 5 minutes.
- While the cake bakes, combine the milk, sugar, cocoa powder, and butter in a medium saucepan. Place over medium heat and whisk constantly until the butter melts and the mixture comes to a gentle simmer. Cook for 2 to 3 minutes, until slightly thickened.
- While the cake is still warm, poke holes all over the top with a skewer or fork. Slowly pour the hot fudge sauce evenly over the cake, making sure to cover every inch. Let it sink in for a few minutes.
- Allow the cake to rest for at least 10 minutes so the sauce fully saturates the sponge. The top will become glossy and dark. The cake may look very wet, but that is the signature of Islak Kek.
- Sprinkle the crushed pistachios evenly over the top of the cake. Press them gently so they stick to the glossy surface. The pistachios add a vibrant green contrast and a subtle crunch.
- Cut the cake into squares or rectangles. Use a spatula to lift each piece, letting any excess sauce drip back into the pan. Serve at room temperature or slightly warm, with extra sauce spooned over each slice if desired.
