Tips for success
For the best texture, use frozen bananas that are ripe but not overly brown, as they provide natural sweetness without being mushy. Slice them into uniform coins before freezing so they blend evenly.
If you have extra frozen bananas, keep them on hand for quick smoothies. The matcha white chocolate shavings are easiest to make when the chocolate is cold; grate it straight from the fridge to get clean, fluffy curls.
To make the smoothie extra cold without diluting it, use frozen banana slices instead of ice cubes, or freeze the vanilla milk into ice cubes. If you prefer a sweeter drink, add a drizzle of honey or maple syrup to the blender.
The whipped cream can be homemade or store-bought; for a firmer topping, use heavy cream whipped to stiff peaks. For a dairy-free version, use a plant-based milk and coconut whipped cream, and ensure the matcha white chocolate is dairy-free.
Variations
- Mango Matcha Cooler: Replace one of the frozen bananas with frozen mango chunks for a tropical twist. The mango adds a bright, fruity note that pairs well with matcha and pistachio. Omit the matcha white chocolate shavings and top with toasted coconut instead.
- Spiced Pistachio Smoothie: Add a pinch of ground cardamom or cinnamon to the blender along with the other ingredients. The warm spice complements the pistachio butter and adds a cozy depth. Garnish with a dusting of cinnamon on the whipped cream.
- Chocolate Matcha Smoothie: Add 1 tablespoon of unsweetened cocoa powder to the blender for a chocolate-matcha combination. Reduce the matcha powder to 1 teaspoon to balance the flavors. Top with chocolate shavings instead of matcha white chocolate.
- Berry Pistachio Smoothie: Replace the matcha powder with a handful of frozen mixed berries, such as blueberries and raspberries. The berries add a tart, fruity flavor that contrasts with the pistachio butter. Omit the matcha white chocolate and top with fresh berries.
Storage and make-ahead
- Fridge
- Store leftover smoothie in an airtight container in the refrigerator for up to 24 hours; stir well before serving.
- Freezer
- This smoothie is not ideal for freezing, as the texture becomes icy and grainy.
- Reheat
- Not applicable—this is a cold beverage. Do not reheat.
The smoothie is best enjoyed immediately, as it will separate and thin out upon standing. If you have leftovers, store them in an airtight container in the refrigerator for up to 24 hours, but note that the texture will change. Stir well before drinking. The toppings should be added fresh just before serving.
The components can be prepped ahead: slice and freeze the bananas, chop the pistachios, and grate the matcha white chocolate. Store the grated chocolate in a sealed container in the refrigerator for up to a week. The smoothie itself should be blended fresh, as it does not hold its texture when stored.
Serving ideas
Serve this cooler in tall glasses, ideally chilled, to keep it cold longer. The whipped cream should be added just before serving so it stays fluffy.
The crushed pistachios and matcha shavings are best sprinkled on top right at the table, as they add texture and visual appeal. This drink is a lovely afternoon treat or a dessert-like refreshment for a brunch or a summer gathering.
For a more elegant presentation, use a clear glass to show off the green layers. You can also rim the glass with crushed pistachios or matcha powder. If serving to a crowd, double the recipe and blend in batches.
The smoothie can be poured into small glasses for a lighter portion, or into large mason jars for a casual look. Pair it with a spoon for the thickest part at the bottom.

Ingredients
- 2 large frozen bananas, sliced into coins
- 1/4 cup shelled green pistachios, chopped
- 2 oz ceremonial matcha white chocolate, grated
- 2 tsp ceremonial grade matcha powder
- 3 tbsp roasted pistachio butter
- 1 1/2 cups vanilla milk
- 1 cup ice cubes
- whipped cream, for topping, to taste
- crushed green pistachios, for topping, to taste
- matcha chocolate shavings, for topping, to taste
Instructions
- Slice the frozen bananas into coins and set them aside. Chop the shelled green pistachios into small pieces. Grate the ceremonial matcha white chocolate on a box grater into a fresh pile of emerald matcha chocolate curls. Keep the toppings separate for later use.
- Measure the ceremonial grade matcha powder, roasted pistachio butter, vanilla milk, and ice cubes. Have all the ingredients ready beside the blender pitcher so the blending goes smoothly.
- Add the frozen banana coins, ceremonial grade matcha powder, roasted pistachio butter, vanilla milk, and ice cubes into the glass blender pitcher. Lock the lid securely in place.
- Blend on high speed until the mixture is completely smooth and thick, scraping down the sides as needed. The smoothie should form a swirling vortex in the pitcher and have a creamy, pourable consistency.
- Pour the thick creamy emerald green matcha pistachio smoothie from the blender pitcher into a crystal glass or tall serving glass, dividing it evenly between two glasses.
- Finish each glass with a generous swirl of whipped cream, a sprinkle of crushed green pistachios, and a shower of matcha chocolate shavings. Serve immediately while cold.
