Tips for success
For the crispiest chicken, let the dredged cutlets rest on a wire rack for 10 minutes before frying. This allows the coating to adhere and helps prevent it from falling off in the oil.
Also, make sure the oil is at the correct temperature—too hot will burn the crust, too cool will make it greasy.
To keep the chicken crispy after glazing, brush the glaze on right before assembling and serve immediately. If making ahead, keep the glaze separate and brush on just before serving. For extra heat, add more red pepper flakes to the glaze or use a spicier hot sauce.
Variations
- Spicy Sriracha Caesar: Replace the hot sauce in the marinade and glaze with sriracha for a different kind of heat. Add a teaspoon of sriracha to the Caesar dressing for an extra kick.
- Grilled Chicken Version: Skip the frying and grill the marinated chicken over medium-high heat until cooked through, then brush with the hot honey glaze. The sandwich will be lighter but still flavorful.
- Add Bacon: For a smoky, salty crunch, add crispy bacon strips to the sandwich before topping with the Caesar salad. The bacon pairs beautifully with the hot honey glaze.
- Vegetarian Option: Replace the chicken with thick slices of halloumi or tofu, marinated and fried the same way. The glaze and Caesar salad work just as well with these alternatives.
Storage and make-ahead
- Fridge
- Store leftover fried chicken and salad separately in airtight containers in the refrigerator for up to 3 days. Keep the dressing in a jar for up to a week.
- Freezer
- Freeze the fried chicken (un-glazed) in a single layer on a baking sheet, then transfer to a freezer bag for up to 2 months.
- Reheat
- Reheat glazed chicken in a 350°F (175°C) oven for 8-10 minutes to crisp up the coating. Avoid microwaving, as it will make the crust soggy.

The buttermilk marinade can be prepared up to 24 hours in advance, and the chicken can marinate for up to 4 hours.
The Caesar dressing can be made up to 3 days ahead and stored in the refrigerator. The hot honey glaze can also be made ahead and reheated gently before using.
Serving ideas
Serve these sandwiches immediately after assembling so the chicken stays crispy and the salad remains cold and crunchy.
For a complete meal, pair with a simple green salad or roasted potatoes. The sweet-spicy glaze and creamy Caesar dressing make this sandwich a standout for lunch or dinner.
To make it a party appetizer, slice the sandwiches into smaller pieces and serve on a platter. You can also offer extra hot honey and Parmesan on the side for guests to customize.
These sandwiches are best enjoyed fresh, but leftover components can be repurposed into a chopped salad the next day.

- 1/2 cup honey
- 2 tbsp hot sauce
- 1 tsp red pepper flakes
- 1 tbsp butter
- garlic powder, to taste
- 1 tsp apple cider vinegar
- 2 cups chopped romaine lettuce
- 1/2 cup mayonnaise
- 1 tbsp Dijon mustard
- 1 tsp Worcestershire sauce
- 1 clove garlic, minced
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1/3 cup freshly grated Parmesan cheese
- 4 mini bread loaves, sliced and buttered
- shredded Parmesan, for serving
- extra Caesar dressing, for serving
Instructions
- In a glass dish, whisk together the buttermilk, hot sauce, pickle juice, garlic powder, onion powder, smoked paprika, and salt. Add the chicken breast halves, turning to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
- In a shallow dish, whisk together the flour, cornstarch, baking powder, garlic powder, and paprika. Set up a dipping station with the remaining buttermilk (from the marinade) and the flour mixture.
- Pour about 2 inches of avocado oil into a large heavy skillet or Dutch oven. Heat over medium-high until a deep-fry thermometer registers 350°F (175°C).
- Remove the chicken from the marinade, letting any excess drip off. Dredge in the flour mixture, shaking off excess. Dip back into the buttermilk, then dredge again in the flour mixture, pressing to adhere.
- Carefully lower the chicken into the hot oil in batches, without crowding. Fry until golden brown and cooked through, about 4-5 minutes per side. Transfer to a wire rack set over a baking sheet.
- In a small saucepan, combine the honey, hot sauce, red pepper flakes, butter, garlic powder, and apple cider vinegar. Bring to a simmer over medium heat, stirring, until the butter melts and the glaze is smooth. Remove from heat.
- While the chicken is still warm, brush each piece generously with the hot honey glaze, coating both sides. Set aside.
- In a medium bowl, whisk together the mayonnaise, Dijon mustard, Worcestershire sauce, minced garlic, lemon juice, and olive oil. Stir in the grated Parmesan until smooth.
- In a large bowl, toss the chopped romaine with the Caesar dressing until evenly coated. Add extra grated Parmesan if desired.
- Butter the cut sides of the mini bread loaves. Toast in a skillet or under the broiler until golden and crisp.
- Spread a layer of Caesar dressing on the toasted bread. Place the glazed chicken on the bottom half, top with the Caesar salad, and sprinkle with extra Parmesan. Close the sandwich and press gently.
