Tips for success
For the best results, pat the chicken breasts completely dry with paper towels before applying the seasoning.
Removing surface moisture helps the seasoning adhere better and allows the chicken to develop a beautiful golden color during the initial roasting phase. If the chicken is wet, it will steam rather than roast, preventing the savory crust from forming.
If you prefer a bit of heat to balance the sweet honey and cranberry flavors, consider adding a pinch of red pepper flakes or cayenne pepper to the seasoning blend.
This subtle addition creates a wonderful sweet-and-spicy profile that pairs beautifully with the creamy feta cheese and earthy walnuts, elevating the overall complexity of the dish.
Variations
- Spicy Honey Cranberry Chicken: Add half a teaspoon of crushed red pepper flakes to the honey cranberry glaze for a sweet and spicy kick.
- Herb-Roasted Cranberry Chicken: Substitute dried rosemary and sage for the thyme to create a deeply aromatic, holiday-inspired flavor profile.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Freezing is not recommended as the Brussels sprouts and sweet potatoes will become mushy upon thawing.
- Reheat
- Reheat in a preheated oven at 350°F (175°C) for 10-15 minutes, or in the microwave in 30-second intervals until warmed through.
Store any leftover chicken, roasted vegetables, and sweet cranberry sauce in an airtight container in the refrigerator within two hours of cooking.
Kept properly in a cold environment, the leftovers will remain fresh, flavorful, and safe to consume for up to three days. Keep the extra cranberry sauce spooned directly over the chicken to help maintain its moisture during storage.
You can easily prep the vegetables up to twenty-four hours in advance to save time on busy weeknights. Peel and cube the sweet potatoes, trim and halve the Brussels sprouts, and store them in separate airtight containers in the refrigerator.
You can also whisk the cranberry sauce and honey together beforehand, keeping the glaze in a sealed jar until you are ready to bake.
Serving ideas
Serve this complete one-pan meal directly from the baking tray for a rustic, family-style presentation, or arrange the chicken and roasted vegetables beautifully on individual warm plates. Be sure to spoon any extra warm honey cranberry glaze from the bottom of the tray over the chicken breasts before serving to maximize the flavor.
This dish pairs wonderfully with a side of fluffy quinoa, wild rice, or a simple green salad dressed with a light vinaigrette. The grains are excellent for soaking up any leftover sweet and tangy glaze, while the crisp salad provides a refreshing contrast to the warm, roasted sweet potatoes and savory chicken.

Honey Cranberry Chicken Bake with Roasted Sweet Potatoes

Ingredients
- 1 1/2 lb boneless, skinless chicken breasts
- 2 medium sweet potatoes, peeled and cubed
- 1/2 lb Brussels sprouts, trimmed and halved
- 1 tbsp seasoning blend of salt, pepper, garlic powder, and dried thyme
- 1 cup whole berry cranberry sauce
- 1/4 cup honey
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped walnuts
Instructions
- Preheat the oven to 400°F (200°C). Place the cubed sweet potatoes and halved Brussels sprouts onto a large baking tray. Sprinkle the vegetables with half of the seasoning blend. Toss everything thoroughly to ensure the vegetables are evenly coated, then spread them out in a single layer across the tray.
- Pat the chicken breasts dry with paper towels. Season both sides of the chicken breasts with the remaining half of the seasoning blend. Create small spaces among the seasoned sweet potatoes and Brussels sprouts on the tray, then nestle the chicken breasts directly into those gaps. Place the tray in the preheated oven and bake for 20 minutes.
- In a small mixing bowl, whisk together the whole berry cranberry sauce and honey until smooth. Carefully remove the baking tray from the oven. Pour the glossy honey cranberry mixture evenly over the roasted chicken breasts and surrounding vegetables. Return the tray to the oven and bake for an additional 12 to 15 minutes, ensuring the chicken reaches a safe internal temperature of 165°F (74°C).
- Remove the baking tray from the oven once the chicken is fully cooked. Immediately sprinkle the crumbled feta cheese and chopped walnuts over the top of the hot chicken and roasted vegetables. Let the dish rest for 5 minutes before serving to allow the cheese to soften slightly and the juices in the chicken to redistribute.
