Tips for success
For the crispiest crust, make sure the oil is hot enough before adding the chicken. A temperature of 350°F (175°C) is ideal. If the oil is too cool, the coating will absorb oil and become soggy; too hot, and it will burn before the chicken cooks through. Use a thermometer for accuracy. Let the coated chicken rest for 5 minutes before frying to help the coating adhere better.
When brushing on the glaze, do it in two layers. Brush the first side, flip the cutlet, and brush the other side. Then, brush the first side again for a thicker, stickier coating.
This creates a beautiful, glossy finish that really packs flavor. Serve the sandwiches immediately after assembling to maintain the crunch. If you need to keep them warm, place them on a wire rack in a low oven, but they are best eaten fresh.
Variations
- Spicy Sriracha Honey: Replace the chipotle in adobo with 1 tablespoon of Sriracha and add an extra tablespoon of honey. This gives a brighter, more straightforward heat that pairs well with the ranch.
- BBQ Bacon Ranch: Add 2 slices of crispy bacon per sandwich and substitute the honey chipotle sauce with your favorite BBQ sauce. The smoky bacon adds a savory crunch that complements the ranch.
- Crispy Tofu Version: For a vegetarian option, use extra-firm tofu sliced into 1/2-inch thick slabs. Press to remove excess water, then follow the same dredging and frying method. Cook until golden and heated through.
- Lighter Oven-Baked: Instead of frying, bake the breaded chicken cutlets on a wire rack over a baking sheet at 425°F (220°C) for 20–25 minutes, flipping halfway, until golden and cooked through. Brush with glaze and serve.
Storage and make-ahead
- Fridge
- Store leftover chicken and buns separately in airtight containers for up to 2 days.
- Freezer
- Freeze fried chicken cutlets (without glaze) in a single layer on a baking sheet, then transfer to a freezer-safe bag for up to 2 months.
- Reheat
- Reheat fried chicken in a toaster oven or air fryer at 350°F (175°C) for 5–7 minutes until hot and crisp. Avoid microwaving, as it makes the coating soggy.
Store leftover fried chicken and buns separately in airtight containers in the refrigerator for up to 2 days. The ranch dressing can be kept in a separate container for up to 3 days.
Reheat the chicken in a toaster oven or air fryer at 350°F (175°C) for 5–7 minutes to restore crispness. Assemble sandwiches just before serving to prevent sogginess. The glaze can be made ahead and stored in the refrigerator for up to a week.
The ranch dressing can be made up to 3 days ahead and kept refrigerated. The honey chipotle garlic sauce can also be prepared in advance and stored in the refrigerator; gently reheat before using.
You can even bread the chicken cutlets and refrigerate them for a few hours before frying. However, for the best texture, fry the chicken just before serving. Toasting the buns and assembling the sandwiches should be done at the last minute.
Serving ideas
Serve the sandwiches hot, with extra ranch on the side for dipping. The cool, creamy ranch complements the spicy, sweet glaze beautifully. Add extra pickles on the side or on the sandwich for more tang. A simple green salad or sweet potato fries make excellent accompaniments. The sandwich is substantial enough to stand alone, but it also pairs well with coleslaw or a light soup.
For a fun presentation, cut the sandwiches in half and serve with a pile of crispy fries. Provide plenty of napkins, as the sandwich is delightfully messy.
You can also set up a toppings bar with extra pickles, sliced red onions, or lettuce for guests to customize their sandwiches. This recipe is perfect for game day, casual dinners, or whenever you crave something indulgent and satisfying.

Honey Chipotle Garlic Crispy Chicken Sandwich with Homemade Ranch

Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup buttermilk
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tbsp fresh dill, chopped
- 1 tbsp fresh chives, chopped
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- salt and black pepper, to taste
- 1/2 cup all-purpose flour
- 2 large eggs
- 2 cups panko breadcrumbs
- 1 tsp smoked paprika
- 1 cup vegetable oil, for frying
- 1/3 cup honey
- 1 tbsp chipotle in adobo, minced
- 3 cloves garlic, minced
- 1 tbsp soy sauce
- 2 tbsp butter
- 4 brioche buns, split
- 2 tbsp butter, melted
- 1/2 cup dill pickle slices
Instructions
- Place each chicken breast between two sheets of plastic wrap and pound to an even 1/2-inch thickness. Season both sides with salt and pepper. In a small bowl, whisk together buttermilk, mayonnaise, sour cream, dill, chives, garlic powder, onion powder, and a pinch of salt and pepper. Cover and refrigerate until ready to serve.
- Set up three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with garlic powder and smoked paprika. Working one piece at a time, dredge the chicken in flour, shaking off excess, then dip in egg, letting excess drip off, then coat thoroughly in the panko mixture, pressing gently to adhere.
- Heat the vegetable oil in a large skillet over medium-high heat until shimmering, about 350°F (175°C). Carefully lay the coated chicken in the hot oil, working in batches if needed. Fry for 3–4 minutes per side, until golden brown and cooked through. The internal temperature should reach 165°F (74°C). Transfer to a wire rack.
- In a small saucepan, combine honey, minced chipotle in adobo, garlic, soy sauce, and butter. Cook over medium heat, stirring often, until the butter is melted and the sauce is bubbling and slightly thickened, about 2–3 minutes. Remove from heat.
- While the chicken is still hot, brush each cutlet generously with the honey chipotle garlic sauce on both sides. Let the glaze set for a minute so it becomes sticky and clings to the crust.
- Brush the cut sides of the brioche buns with the melted butter. Heat a skillet or griddle over medium heat and toast the buns, cut side down, until golden brown and fragrant, about 1–2 minutes.
- Spread a generous layer of ranch dressing on the bottom half of each toasted bun. Top with a few dill pickle slices, then place the glazed chicken cutlet on top. Add more pickles if desired, then close with the top bun.
