Before you start

Before starting, gather all ingredients and set up your workspace. Pound the chicken breasts to an even thickness and season them. Prepare the ranch dressing and refrigerate it. Set up the dredging station with flour, eggs, and seasoned panko.

Have the oil heating in a large skillet while you coat the chicken. Measure out the sauce ingredients and have them ready to go. This recipe moves quickly once you start frying, so having everything in place makes the process smooth and enjoyable.

Ingredients at a glance (22)
  • 4 boneless, skinless chicken breasts
  • 1/2 cup buttermilk
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh chives, chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • salt and black pepper, to taste
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 2 cups panko breadcrumbs
  • 1 tsp smoked paprika
  • 1 cup vegetable oil, for frying
  • 1/3 cup honey
  • 1 tbsp chipotle in adobo, minced
  • 3 cloves garlic, minced
  • 1 tbsp soy sauce
  • 2 tbsp butter
  • 4 brioche buns, split
  • 2 tbsp butter, melted
  • 1/2 cup dill pickle slices

Instructions

Prep and Coat

  1. Prep the Chicken and Ranch
Place each chicken breast between two sheets of plastic wrap and pound to an even 1/2-inch thickness. Season both sides with salt and pepper. In a small bowl, whisk together buttermilk, mayonnaise, sour cream, dill, chives, garlic powder, onion powder, and a pinch of salt and pepper. Cover and refrigerate until ready to serve.
Look for The ranch should be thick and creamy with visible herb flecks.
Tip Chilling the ranch lets the flavors meld while you prepare the chicken.
  2. Set Up the Dredging Station
Set up three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with garlic powder and smoked paprika. Working one piece at a time, dredge the chicken in flour, shaking off excess, then dip in egg, letting excess drip off, then coat thoroughly in the panko mixture, pressing gently to adhere.
Look for Each cutlet should be evenly coated with no bare spots.
Tip Use one hand for wet ingredients and the other for dry to keep the coating light.

At the end of this phase, the chicken breasts are pounded thin and the ranch is chilling. The dredging station is ready with flour, eggs, and seasoned panko. Each cutlet should be evenly coated with a thick, craggy layer of breadcrumbs. The coating should feel dry to the touch and adhere well. The oil should be heating in the skillet, shimmering but not smoking.

Fry and Glaze

  1. Fry the Chicken Cutlets
Heat the vegetable oil in a large skillet over medium-high heat until shimmering, about 350°F (175°C). Carefully lay the coated chicken in the hot oil, working in batches if needed. Fry for 3–4 minutes per side, until golden brown and cooked through. The internal temperature should reach 165°F (74°C). Transfer to a wire rack.
Look for The crust should be deep golden brown and shatteringly crisp.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Do not overcrowd the pan—this lowers the oil temperature and makes the coating greasy.
  2. Make the Honey Chipotle Garlic Sauce
In a small saucepan, combine honey, minced chipotle in adobo, garlic, soy sauce, and butter. Cook over medium heat, stirring often, until the butter is melted and the sauce is bubbling and slightly thickened, about 2–3 minutes. Remove from heat.
Look for The sauce should be glossy, sticky, and fragrant with garlic and chipotle.
Tip Taste and adjust the heat by adding more or less chipotle.
  3. Glaze the Fried Chicken
While the chicken is still hot, brush each cutlet generously with the honey chipotle garlic sauce on both sides. Let the glaze set for a minute so it becomes sticky and clings to the crust.
Look for The glaze should coat the chicken in a shiny, sticky layer.
Tip Brushing while hot helps the sauce soak into the crust without making it soggy.

The chicken cutlets are fried until golden brown and crisp, with an internal temperature of 165°F (74°C). The kitchen should smell of fried chicken and garlic.

The honey chipotle garlic sauce is bubbling and thickened, glossy and sticky. Each cutlet is brushed generously with the sauce, which sets into a shiny, flavorful glaze. The sauce should not drip off excessively.

Toast and Assemble

  1. Toast the Brioche Buns
Brush the cut sides of the brioche buns with the melted butter. Heat a skillet or griddle over medium heat and toast the buns, cut side down, until golden brown and fragrant, about 1–2 minutes.
Look for The buns should be golden with crispy edges and soft centers.
Tip Toasting in butter adds flavor and prevents sogginess from the sauces.
  2. Assemble the Sandwiches
Spread a generous layer of ranch dressing on the bottom half of each toasted bun. Top with a few dill pickle slices, then place the glazed chicken cutlet on top. Add more pickles if desired, then close with the top bun.
Look for The sandwich should be tall, messy, and loaded with contrasting textures.
Tip Press down gently to help the sandwich hold together, but keep it loose enough to enjoy.

The brioche buns are toasted in butter until golden and fragrant. The ranch is spread on the bottom buns, followed by pickles and the glazed chicken. The sandwiches are tall and packed, with the glaze and ranch beginning to mingle. The top buns are placed, and the sandwiches are ready to serve immediately, with the crunch audible even before the first bite.

Common mistakes

One common mistake is overcrowding the pan, which drops the oil temperature and leads to greasy, soggy chicken. Fry in batches if necessary. Another is not pounding the chicken thin enough, resulting in undercooked centers.

Use a meat mallet or rolling pin for even thickness. Also, avoid brushing on the glaze too early—wait until the chicken is fully fried and still hot, so the sauce clings properly. Finally, don’t skimp on the ranch; it balances the heat and sweetness.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) on an instant-read thermometer inserted into the thickest part. The crust should be deep golden brown and very crisp to the touch.

The glaze should be sticky and glossy, coating the chicken evenly. The buns should be toasted until golden and fragrant. The sandwich should be assembled while everything is still warm, so the ranch and pickles contrast with the hot, crispy chicken.

  • Poultry: 165°F (74°C) in the thickest part
  • Egg dishes: 160°F (71°C) in the thickest part
