Tips for success
For the best flavor, use freshly shredded cheddar cheese rather than pre-shredded, as it melts more smoothly.
If you prefer a spicier dish, add a pinch of cayenne pepper or a dash of hot sauce along with the other ingredients. To make the sauce extra creamy, stir in a splash of heavy cream during the last 30 minutes of cooking.
This recipe is incredibly versatile. You can swap the cauliflower for broccoli, or add sliced mushrooms for extra earthiness.
If you have leftover turkey, this recipe works well with pre-cooked turkey; simply reduce the cooking time to 2 hours on LOW to heat through. Always ensure leftovers are refrigerated within 2 hours of cooking.
Variations
- Broccoli Cheddar Turkey: Replace the cauliflower with an equal amount of broccoli florets. The broccoli will cook slightly faster, so check for tenderness at the lower end of the cooking time.
- Creamy Mushroom Turkey: Add 8 oz sliced mushrooms along with the cauliflower. Use cream of mushroom soup instead of broccoli for an earthy, savory twist.
- Spicy Pepper Jack Turkey: Swap the sharp cheddar for pepper jack cheese and add a diced jalapeño for a spicy kick. Use cream of chicken soup to keep the flavors balanced.
- Herbed Turkey and Cauliflower: Add 1 tsp dried thyme and 1 tsp dried rosemary to the slow cooker before cooking. These herbs complement the turkey and cauliflower beautifully.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of milk or broth to loosen the sauce.
- Freezer
- Freeze cooled leftovers in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until heated through. Add a splash of milk or broth if the sauce is too thick.
Store leftover turkey and cauliflower mixture in an airtight container in the refrigerator for up to 4 days. The sauce may thicken upon cooling; add a splash of milk or broth when reheating to restore a creamy consistency. Reheat gently on the stovetop or in the microwave.
This dish can be assembled the night before: layer all ingredients in the slow cooker insert, cover, and refrigerate. The next day, place the insert in the slow cooker and cook as directed, adding about 30 minutes to the cooking time to account for the cold start.
Serving ideas
Serve this homestyle cheddar cauliflower turkey breast over fluffy jasmine rice to soak up the rich sauce.
The rice provides a neutral base that lets the creamy cheddar and savory turkey shine. For a low-carb option, serve over steamed cauliflower rice or roasted vegetables.
This dish also pairs well with a simple green salad or steamed green beans for a complete meal.
The leftovers are delicious the next day, either reheated as is or used as a filling for tacos or sandwiches. The creamy sauce is so good that you'll want to spoon every last bit.

Homestyle Cheddar Cauliflower Turkey Breast

Ingredients
- 2 lb boneless turkey breast cutlets
- 4 cups cauliflower florets
- 1 can (10.5 oz) condensed cream of broccoli soup
- 2 cups shredded sharp cheddar cheese
- 2 tbsp butter
- 2 cups cooked white jasmine rice, for serving
Instructions
- Place the turkey breast cutlets in the bottom of a 6-quart slow cooker. Scatter the cauliflower florets around the turkey. Spoon the condensed cream of broccoli soup over the top, spreading it to cover the turkey and cauliflower. Sprinkle the shredded cheddar cheese evenly over the soup, then dot with the butter.
- Cover the slow cooker with the lid. Cook on LOW for 4 to 5 hours, or on HIGH for 2 to 3 hours, until the turkey is tender and easily shredded with a fork. The internal temperature of the turkey should reach 165°F (74°C) in the thickest part.
- Using two forks, shred the turkey breast directly in the slow cooker. Stir the shredded turkey into the sauce to coat evenly. The cauliflower should be tender but still hold its shape.
- Spoon the hot jasmine rice onto serving plates. Ladle the turkey and cauliflower mixture over the rice, making sure to include plenty of the cheddar sauce. Serve immediately.
