Before you start

Before starting, measure out all ingredients and have them ready. There is no need to pre-cook anything; simply layer the raw turkey, cauliflower, soup, cheese, and butter in the slow cooker.

Cook the jasmine rice according to package directions while the slow cooker mixture cooks, or prepare it in advance. Ensure the slow cooker is clean and dry before adding ingredients.

Ingredients at a glance (6)
  • 2 lb boneless turkey breast cutlets
  • 4 cups cauliflower florets
  • 1 can (10.5 oz) condensed cream of broccoli soup
  • 2 cups shredded sharp cheddar cheese
  • 2 tbsp butter
  • 2 cups cooked white jasmine rice, for serving

Instructions

Layer and Cook

  1. Layer the Ingredients
Place the turkey breast cutlets in the bottom of a 6-quart slow cooker. Scatter the cauliflower florets around the turkey. Spoon the condensed cream of broccoli soup over the top, spreading it to cover the turkey and cauliflower. Sprinkle the shredded cheddar cheese evenly over the soup, then dot with the butter.
Look for The ingredients are layered but not stirred; the soup and cheese form a top layer.
Tip Use a spatula to spread the soup evenly for consistent flavor.
  2. Cover and Cook
Cover the slow cooker with the lid. Cook on LOW for 4 to 5 hours, or on HIGH for 2 to 3 hours, until the turkey is tender and easily shredded with a fork. The internal temperature of the turkey should reach 165°F (74°C) in the thickest part.
Look for The sauce should be bubbling gently at the edges and the cheese fully melted.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Avoid lifting the lid during cooking to keep the heat steady.

At the end of this phase, the slow cooker is filled with raw ingredients, and the cooking process begins. The turkey and cauliflower are covered with soup, cheese, and butter.

Over the next few hours, the mixture will slowly heat, the cheese will melt, and the sauce will become bubbly. Check that the slow cooker is set to the desired temperature and the lid is secure.

Shred and Coat

  1. Shred the Turkey
Using two forks, shred the turkey breast directly in the slow cooker. Stir the shredded turkey into the sauce to coat evenly. The cauliflower should be tender but still hold its shape.
Look for The turkey shreds easily and the sauce is thick and creamy.
Tip If the sauce seems too thin, leave the lid off for 10 minutes to thicken.

Once the turkey is cooked through and tender, shred it directly in the slow cooker. The sauce should be thick and creamy, coating the turkey and cauliflower evenly. The cauliflower should be fork-tender but still intact. Stir gently to combine without breaking up the cauliflower too much. Taste and adjust seasoning if needed.

Serve

  1. Serve Over Rice
Spoon the hot jasmine rice onto serving plates. Ladle the turkey and cauliflower mixture over the rice, making sure to include plenty of the cheddar sauce. Serve immediately.
Look for The sauce coats the back of a spoon and the rice is fluffy.
Tip For a low-carb option, serve over steamed cauliflower rice instead.

The final phase is all about plating. Spoon the hot rice onto plates, then ladle the turkey and cauliflower mixture over the top. The sauce should be rich and glossy, with visible shreds of turkey and tender florets. The dish is ready to serve immediately, garnished with fresh herbs if desired.

Common mistakes

A common mistake is lifting the lid to check on the food, which lets heat escape and extends cooking time. Another is overcooking, which can make the turkey dry and the cauliflower mushy.

Be sure to use the correct size slow cooker; a 6-quart works well, but if using a smaller one, adjust the quantities. Also, shredding the turkey too early can result in dry meat, so wait until it is fully tender.

How to tell it’s done

The dish is done when the turkey is tender and easily shreds with a fork, and the internal temperature reaches 165°F (74°C) in the thickest part. The cauliflower should be tender but not mushy.

The sauce will be thick and creamy, with the cheese fully melted and incorporated. If the sauce appears thin, leave the lid off for a few minutes to allow excess moisture to evaporate.
