Tips for success
To elevate the flavor of this dish, consider adding a squeeze of fresh lemon juice over the chicken and vegetables immediately after removing them from the oven. The bright acidity of the lemon cuts through the richness of the olive oil and roasted chicken juices, elevating the herbal notes.
Additionally, tossing a few whole, unpeeled garlic cloves into the dish with the potatoes adds a wonderful sweet, roasted garlic aroma that can be squeezed over the chicken when serving.
Always allow the roasted chicken to rest for a full five minutes before slicing into it. Cutting the chicken immediately after roasting causes the hot juices to run out onto the cutting board, leaving the meat dry and tough.
Resting allows the muscle fibers to relax and reabsorb the moisture, ensuring every bite is tender and juicy. Use a very sharp chef's knife to slice the chicken cleanly without tearing the beautiful herb crust.
Variations
- Lemon Garlic Roast: Add fresh lemon slices and whole garlic cloves to the baking dish before roasting for a bright, zesty flavor profile.
- Parmesan Herb Crust: Sprinkle grated Parmesan cheese over the potatoes and green beans during the last five minutes of baking for a savory, crispy finish.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
- Freezer
- Freezing is not recommended as the green beans and potatoes will lose their pleasant texture upon thawing.
- Reheat
- Reheat in a 350°F (175°C) oven for 10 to 15 minutes, or in the microwave on medium power until hot throughout.
Store any leftover chicken, potatoes, and green beans in an airtight container in the refrigerator within two hours of cooking. Kept properly, the leftovers will remain fresh and flavorful for up to three to four days. To maintain the best texture, store the green beans in a separate corner of the container if possible, as they can absorb excess moisture from the chicken juices and become soft over time.
While this dish is best enjoyed fresh from the oven, you can prepare several elements ahead of time to save minutes on busy evenings. Wash, dry, and cut the baby potatoes, and trim the green beans up to twenty-four hours in advance, storing them in airtight containers in the refrigerator. You can also portion the dried herbs in a small bowl ahead of time so the seasoning is ready to go.
Serving ideas
Serve this roasted chicken dish hot, directly from the ceramic baking dish for a rustic, family-style presentation. Arrange the sliced chicken breasts in the center of a large platter, surrounded by the golden baby potatoes and vibrant green beans.
Spoon any savory pan juices remaining in the baking dish directly over the chicken slices to keep them moist and add extra flavor. A light dusting of extra herbs over the potatoes right before serving adds a delightful touch.
This complete meal pairs beautifully with a simple side salad of mixed greens tossed in a light vinaigrette to contrast the warm, roasted flavors.
A crusty French baguette or sourdough bread is also an excellent accompaniment, perfect for wiping up any flavorful herb-infused olive oil and chicken juices left on the plate. For a festive touch, garnish the platter with a few fresh rosemary sprigs and lemon wedges.

Herb-Roasted Chicken with Baby Potatoes and Green Beans

Ingredients
- 4 boneless, skinless chicken breasts
- 1 lb baby potatoes, halved
- 12 oz green beans, trimmed
- 3 tbsp olive oil
- 1 tbsp mixed dried herbs
Instructions
- Preheat the oven to 400°F (200°C). Wash and halve the baby potatoes. Trim the stem ends from the green beans. Pat the chicken breasts dry with paper towels to ensure a good sear. Place the halved baby potatoes into a large mixing bowl, ready for seasoning.
- Drizzle two tablespoons of olive oil over the baby potatoes in the bowl. Sprinkle with half of the dried herbs. Toss well to coat the potatoes evenly. Rub the remaining olive oil and dried herbs over all sides of the chicken breasts.
- Place the seasoned chicken breasts in the center of a large ceramic baking dish. Arrange the seasoned baby potatoes around the chicken in a single layer. Toss the trimmed green beans with a tiny splash of oil and place them in the remaining spaces of the dish.
- Place the baking dish in the preheated oven and roast for 25 to 30 minutes. The chicken is cooked safely when a meat thermometer inserted into the thickest part of the breast registers 165°F (74°C). The potatoes should be fork-tender and the green beans slightly blistered.
- Remove the baking dish from the oven. Transfer the roasted chicken breasts to a clean cutting board and let them rest for 5 minutes. Leave the potatoes and green beans in the warm dish. Slice the rested chicken crosswise and serve alongside the roasted vegetables.
