Tips for success
For the most flavorful result, use high-quality lobster tails and fresh shrimp. If you have time, make your own scampi butter with unsalted butter, minced garlic, and finely chopped parsley—it takes just minutes and makes a noticeable difference.
The white wine should be dry and crisp; avoid sweet wines, which can unbalance the sauce.
Serve this seafood boil straight from the slow cooker to keep it warm.
Provide extra melted butter on the side for dipping the lobster meat, and have seafood crackers available for the claws if you're using whole tails. A simple green salad or crusty bread completes the meal.
Variations
- Spicy Cajun Version: Add 1-2 tablespoons Cajun seasoning and a pinch of cayenne pepper to the butter before dotting over the seafood. For extra heat, include sliced andouille sausage with the vegetables.
- Citrus Herb Twist: Replace the white wine with fresh lemon juice and add lemon zest to the butter. Include a few sprigs of fresh thyme and rosemary in the slow cooker for an aromatic touch.
- Garlic Lover's Boil: Increase the garlic in the scampi butter to 4 cloves and add a whole head of garlic, cut in half, to the slow cooker. The roasted garlic will infuse the sauce with deep, mellow flavor.
- Non-Alcoholic Version: Substitute the white wine with seafood stock or a combination of chicken broth and a splash of white wine vinegar. This keeps the sauce flavorful without alcohol.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days. Reheat gently to avoid toughening the seafood.
- Freezer
- Freeze in a sealed container for up to 2 months. Thaw overnight in the refrigerator before reheating gently.
- Reheat
- Reheat in a covered skillet over low heat with a splash of wine or broth, or in the microwave in 30-second bursts, until warmed through.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The seafood will continue to absorb flavor, but it's best enjoyed within a day or two.
Reheat gently in a saucepan over low heat or in the microwave, being careful not to overcook the seafood.
You can prepare the ingredients up to a day in advance: split the lobster tails, peel the shrimp, halve the corn, and scrub the potatoes. Keep them in the refrigerator separately. When ready to cook, simply layer everything in the slow cooker as directed.
Serving ideas
Serve this herb butter Cajun boil over steamed jasmine rice to soak up the delicious sauce. Add lemon wedges for a bright, citrusy squeeze that cuts through the richness. A side of crusty bread is perfect for dipping into the buttery broth.
For a casual gathering, set the slow cooker on the table and let guests help themselves. Provide small plates, forks, and plenty of napkins.
This dish is meant to be enjoyed with hands, so don't be shy about getting messy—it's all part of the fun.

Herb Butter Cajun Boil Lobster Tails: Easy Crockpot Seafood

Ingredients
- 4 split cold-water lobster tails
- 1 lb raw jumbo shrimp, peeled and deveined
- 4 ears sweet yellow corn, halved
- 1 lb baby red bliss potatoes
- 6 tbsp parsley-garlic scampi butter, cut into pats
- 1/2 cup dry white wine
Instructions
- Place the split lobster tails and raw jumbo shrimp in the bottom of a 6-quart slow cooker. Arrange the halved corn cobs and baby red potatoes around the seafood, tucking them in between the lobster and shrimp so everything fits snugly.
- Dot the top of the seafood and vegetables with the pats of parsley-garlic scampi butter. Pour the white wine evenly over everything. Do not stir—the butter will melt and create a flavorful sauce as it cooks.
- Cover the slow cooker and cook on low for 2 to 2 1/2 hours, or until the lobster tails are opaque and the shrimp are pink and firm. The potatoes should be fork-tender. Avoid opening the lid during cooking to keep the heat inside.
- Use an instant-read thermometer to verify that the thickest part of the lobster tail and the largest shrimp have reached 145°F (63°C). The shrimp should be curled and pink, and the lobster meat should be white and opaque.
- Using a slotted spoon, lift the lobster tails, shrimp, corn, and potatoes out of the slow cooker and arrange them on a platter or individual plates. Spoon some of the buttery sauce over the top. Serve with steamed jasmine rice and lemon wedges.
