Tips for success
For the best flavor, sear the pork shoulder in a hot skillet with a little oil before adding it to the slow cooker. This adds a browned crust that deepens the final taste.
It's an extra step, but the result is worth it. If you skip it, the dish will still be delicious, just with a milder flavor profile.
The pan jus is the star—don't let it go to waste. Spoon it generously over the shredded pork and mashed potatoes.
If you have leftovers, use the jus to moisten the meat when reheating. You can also reduce it on the stovetop to thicken it further, or stir in a splash of cream for an even richer sauce.
Variations
- Beef Version: Substitute a 4-pound boneless beef chuck roast for the pork. Cook on low for 8 to 10 hours until fork-tender. The beef will shred into rich, hearty strands that pair beautifully with the Guinness and onions.
- Add Aromatics: For extra depth, add 4 cloves of smashed garlic, 2 sprigs of fresh thyme, and 1 bay leaf to the pot before cooking. Remove the herbs before serving. These aromatics complement the stout and butter without overpowering the dish.
- Spicy Kick: Add 1 to 2 teaspoons of smoked paprika and a pinch of cayenne pepper along with the butter. The smokiness enhances the stout's roasted notes, while the cayenne adds a subtle warmth. Adjust the amount to taste.
- Non-Alcoholic: Replace the Guinness with an equal amount of beef broth or a non-alcoholic stout. The flavor will be slightly less complex, but the dish will still be savory and delicious. Add a teaspoon of Worcestershire sauce for extra umami.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. The jus will thicken when cold; reheat with a splash of water or broth.
- Freezer
- Freeze the shredded pork and onions in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently in a covered pot over low heat, stirring occasionally, or in the microwave in 30-second bursts. Add a splash of broth or water to keep it moist.
Store leftover pulled pork and onions in an airtight container in the refrigerator for up to 4 days. The jus will solidify when chilled; that's fine.
Reheat gently on the stovetop or in the microwave, adding a splash of water or broth to loosen the sauce. The pork also freezes well for up to 3 months.
This recipe is ideal for making ahead. Cook the pork a day or two in advance, let it cool, and store it in the refrigerator. Reheat gently on the stovetop or in a 325°F (163°C) oven until warmed through. The flavors actually improve after a day in the fridge, as the spices and stout meld further.
Serving ideas
Serve the pulled pork over whipped Yukon Gold mashed potatoes, as shown in the video. The creamy potatoes soak up the buttery jus beautifully.
You can also pile the pork onto soft buns for a pulled pork sandwich, or serve it over creamy polenta or egg noodles. A side of roasted vegetables or a simple green salad balances the richness.
For a more casual presentation, set out the slow cooker with the shredded pork and let guests help themselves. Provide a stack of warm tortillas, pickled red onions, and a sprinkle of fresh herbs if you like. The dish is versatile enough to be the centerpiece of a weeknight dinner or a party spread.

Guinness Onion Butter Pork Shoulder: Easy Crockpot Pulled Pork

Ingredients
- 4 lb boneless Boston butt pork shoulder roast
- 1 cup peeled white pearl onions
- 1 bottle (12 oz) Guinness draught stout
- 1 stick (4 oz) salted butter
Instructions
- Place the 4-pound boneless Boston butt pork shoulder roast in the center of a 6-quart slow cooker insert. Scatter the peeled white pearl onions around the roast, tucking some underneath and along the sides. Pour the bottle of Guinness draught stout over the meat and onions, letting it pool in the bottom of the pot.
- Unwrap the stick of salted butter and place it directly on top of the roast. It will melt and baste the meat as it cooks. Cover the slow cooker with the lid.
- Set the slow cooker to low and cook for 8 to 10 hours, until the pork is fork-tender and easily shreds. The internal temperature of the thickest part of the roast should reach at least 145°F (63°C), but for pulled pork, aim for 195°F to 205°F (91°C to 96°C) for the collagen to break down fully. Let it rest for 3 minutes before slicing.
- When the pork is fork-tender, turn off the slow cooker. Remove the roast to a cutting board and let it rest for at least 10 minutes. This allows the juices to redistribute so the meat stays moist when shredded.
- Using two forks, shred the pork into thick ribbons, discarding any large pieces of fat. Return the shredded meat to the slow cooker with the onions and jus, and toss gently to coat.
- Spoon the hot pulled pork and onions over whipped Yukon Gold mashed potatoes on a serving plate. Drizzle with extra pan jus from the slow cooker.
