Tips for success
For the most flavorful result, sear the pork roast in a hot skillet with a little oil before adding it to the slow cooker. This adds a deep, caramelized crust that enhances the overall richness.
If you do this, reduce the salt in the gravy slightly, as the searing adds its own savory notes. Another tip: let the cooked pork rest for at least 10 minutes before shredding, so the juices stay in the meat rather than running out.
To make the gravy extra silky, whisk in a tablespoon of cold butter just before serving. This emulsifies the sauce and gives it a beautiful sheen.
If you have leftover gravy, it’s fantastic over mashed potatoes or roasted vegetables. And don’t discard the onions — they’re the best part, sweet and infused with stout and pork flavor. Use them generously on each slider.
Variations
- Add Bacon: Cook 4 slices of bacon until crisp, crumble, and sprinkle over the top of the roast before serving. The smoky, salty crunch adds another layer of flavor.
- Use Beef Broth: Replace the Guinness with 1 1/2 cups beef broth and add 1 tablespoon Worcestershire sauce for a non-alcoholic version that’s still deeply savory.
- Spice It Up: Add 1 teaspoon smoked paprika and 1/2 teaspoon cayenne pepper to the gravy before pouring over the roast for a smoky, spicy kick.
- Make It a Sandwich: Pile the pork onto a crusty hoagie roll, top with melted provolone or Swiss cheese, and broil until bubbly for a hot, melty sandwich.
Storage and make-ahead
- Fridge
- Leftover pork and gravy in an airtight container in the fridge for up to 4 days. Reheat gently, adding a splash of broth or water to loosen the sauce.
- Freezer
- Freeze shredded pork with gravy in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until heated through. Add a little broth or water if the sauce is too thick.
Store any leftover pork and gravy in an airtight container in the refrigerator for up to 4 days. The flavors will meld and deepen overnight, making it even more delicious the next day. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth or water if the sauce has thickened too much.
This recipe is perfect for meal prep. You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate overnight.
In the morning, place the insert in the slow cooker and cook as directed. Alternatively, cook the full recipe, shred the pork, and freeze it in portions with some gravy for up to 3 months.
Serving ideas
Serve the shredded pork on toasted brioche slider buns for a fun, crowd-pleasing meal. Set out a platter of the pork, a bowl of extra gravy, and let everyone build their own sliders.
Add a side of crispy coleslaw or a simple green salad to cut through the richness. For a heartier meal, serve the pork over mashed potatoes or egg noodles instead of buns.
The garnishes are minimal — maybe a sprinkle of fresh parsley or chives for color, but the pork is so flavorful it doesn’t need much. If you want a little tang, a dollop of sour cream or a few pickled red onions would be lovely. But honestly, the classic combination of pork, onions, and gravy on a soft bun is perfect as is.

Guinness Onion Brown Gravy Pork Sirloin Roast: Slow-Cooker Comfort

Ingredients
- 3 1/2 lb boneless pork sirloin roast
- 1 lb pearl onions, peeled
- 1 bottle (12 oz) Guinness stout
- 2 cups rich brown gravy
- 4 tbsp unsalted butter, cut into pats
- 12 toasted brioche slider buns
Instructions
- Place the boneless pork sirloin roast in the center of a 6-quart slow cooker. Scatter the peeled pearl onions around the roast, tucking some underneath for even cooking. Pour the Guinness stout over the meat and onions, letting it pool in the bottom of the pot.
- Pour the rich brown gravy evenly over the roast and onions. Dot the top of the roast with the pats of unsalted butter. Do not stir; the butter will melt and baste the meat as it cooks.
- Cover the slow cooker and cook on low for 8 hours, or on high for 4-5 hours, until the pork is fork-tender and easily shreds. The internal temperature of the roast should reach at least 145°F (63°C) for food safety, but cooking longer will make it even more tender. Let it rest for 3 minutes before slicing.
- Once the roast is tender, remove it to a cutting board. Let it rest for at least 3 minutes, then use two forks to shred the meat into bite-sized pieces, discarding any large fat chunks. Return the shredded pork to the slow cooker and stir it into the onion-gravy mixture.
- Toast the brioche slider buns until golden and crisp. Pile the shredded pork and onions onto the bottom buns, spoon extra gravy over the top, and close with the top buns. Serve immediately.
