Tips for success
For the best flavor, sear the beef cubes in a hot skillet before adding to the slow cooker. This adds a deep, caramelized crust that enriches the sauce.
However, the recipe works perfectly without this step, making it truly dump-and-go. If you have time, a quick sear elevates the dish.
To thicken the sauce at the end, remove the lid and cook on HIGH for 15 to 20 minutes, stirring occasionally.
If the sauce is too thick, stir in a splash of beef broth or water. Adjust seasoning with salt and pepper after cooking, as the cheeses add saltiness.
Variations
- Add Mushrooms: Sauté 8 oz sliced mushrooms in butter until browned, then add them to the slow cooker with the beef. They add an earthy flavor that pairs beautifully with the Gruyère.
- Use Pork: Substitute pork shoulder or boneless short ribs for the beef. Cook times remain the same; ensure the pork reaches 145°F (63°C) and is tender.
- Make It Spicy: Add 1/2 teaspoon red pepper flakes or a minced jalapeño to the slow cooker for a subtle heat that cuts through the creamy sauce.
- Swap the Cheese: Use smoked Gouda or sharp white cheddar instead of Gruyère for a different flavor profile. Both melt well and add a smoky or tangy note.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot throughout. Add a splash of broth or water if the sauce is too thick.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; reheat gently on the stovetop or in the microwave, adding a splash of broth or water to loosen it if needed.
This dish can be assembled the night before. Place all raw ingredients in the slow cooker insert, cover, and refrigerate overnight.
In the morning, place the insert in the slow cooker and cook as directed. Add 30 minutes to the cooking time if starting from cold.
Serving ideas
Serve the beef and sauce over toasted garlic brioche, or pair it with mashed potatoes, egg noodles, or rice to soak up the rich sauce.
A simple green salad with a tangy vinaigrette balances the richness. The dish is hearty enough to be a main course on its own.
For a low-carb option, serve over roasted cauliflower or steamed greens. The sauce is also delicious spooned over polenta or grits. Garnish with fresh parsley or chives if desired, though the dish is flavorful on its own.

Gruyère Cream Pearl Onion Beef Bites: 5-Ingredient Crockpot Dinner

Ingredients
- 2 lb beef chuck stew meat, cut into 1-inch cubes
- 1 cup peeled white pearl onions
- 2 cups crinkle-cut carrots
- 8 oz softened cream cheese
- 1 cup shredded aged Gruyère cheese
- Toasted garlic brioche slices, for serving
Instructions
- Place the cubed beef chuck in the bottom of a 6-quart slow cooker. Scatter the pearl onions and crinkle-cut carrots over the beef, spreading them evenly. Do not stir—the layering helps the beef cook evenly and the vegetables soften without turning to mush.
- Drop the softened cream cheese in a few spoonfuls over the top of the beef and vegetables. Sprinkle the shredded Gruyère evenly over everything. Do not stir—the cheeses will melt and blend as the slow cooker works.
- Cover the slow cooker with the lid. Set it to LOW and cook for 6 to 8 hours, until the beef is fork-tender and easily shreds. Do not open the lid during cooking—every peek lets out heat and adds time. Let it rest for 3 minutes before slicing.
- After 6 hours, use a meat thermometer to check the internal temperature of the beef. It should read at least 145°F (63°C). For the most tender texture, cook until the beef reaches 190°F (88°C) and easily pulls apart with a fork. Let it rest for 3 minutes before slicing.
- Once the beef is tender, gently stir the sauce to combine the melted cream cheese and Gruyère into a smooth, creamy gravy. The sauce should coat the back of a spoon. If it looks thin, leave the lid off for 15 minutes to thicken.
- Just before serving, toast the garlic brioche slices until golden and crisp. This can be done in a toaster or under a broiler for 1–2 minutes per side. Keep warm until ready to serve.
- Place a slice of toasted garlic brioche on each plate. Ladle the beef, vegetables, and sauce generously over the top. Serve immediately while hot and bubbling.
