Tips for success
For the best gooey texture, use a kitchen scale to weigh the butter and flour. Cold butter is crucial; it melts slowly in the oven, creating steam that lifts the dough and keeps the center soft. If the dough is too warm, chill it for 20 minutes before shaping.
When chopping chocolate, aim for a mix of large and small pieces. Large chunks create molten pools, while smaller bits distribute flavor throughout.
Use a serrated knife to chop chocolate bars cleanly. If the cookies brown too quickly, lower the oven to 375°F (190°C) and add a minute to the baking time.
Variations
- Double Chocolate: Replace 1/4 cup of the all-purpose flour with 1/4 cup unsweetened cocoa powder. Add an extra 1/2 cup of chocolate chunks for a double dose of chocolate. The cookies will be darker and even more fudgy.
- Nutty Crunch: Add 1 cup of toasted pecans or walnuts, chopped, along with the chocolate chunks. Toast the nuts in a dry skillet over medium heat for 5 minutes to bring out their flavor. The nuts add a crunchy contrast to the gooey center.
- Salted Caramel: After shaping the dough mounds, press a soft caramel candy into the center of each. Bake as directed. The caramel melts and creates a rich, chewy pocket. Sprinkle with extra flaky salt before serving.
- Mint Chocolate: Add 1/2 teaspoon peppermint extract along with the vanilla. Use dark chocolate chunks and sprinkle crushed peppermint candies on top after baking. The mint adds a refreshing note that pairs well with the rich chocolate.
Storage and make-ahead
- Fridge
- Store in an airtight container at room temperature for up to 4 days. For longer storage, freeze the baked cookies for up to 2 months.
- Freezer
- Freeze unbaked dough balls on a baking sheet, then transfer to a zip-top bag for up to 3 months. Bake from frozen, adding 2-3 minutes.
- Reheat
- Reheat baked cookies in a 350°F (175°C) oven for 3-4 minutes, or microwave for 10 seconds, to restore the gooey center.
Store the cookies in an airtight container at room temperature for up to 4 days. To keep them gooey, add a slice of bread to the container; the cookies will absorb moisture from the bread.
If the cookies become too firm, microwave them for 10 seconds to restore the soft center.
The dough can be made ahead and refrigerated for up to 3 days. Let it sit at room temperature for 10 minutes before shaping, as cold dough is harder to scoop.
You can also freeze the shaped dough balls on a baking sheet, then transfer to a zip-top bag for up to 3 months. Bake from frozen, adding 2 minutes to the baking time.
Serving ideas
Serve the cookies warm for the ultimate gooey experience. Pair them with a glass of cold milk or a scoop of vanilla ice cream.
The contrast of warm, melty chocolate and cold ice cream is irresistible. For a more refined dessert, serve with a dollop of whipped cream and a drizzle of caramel sauce.
These cookies are also delicious at room temperature with a cup of coffee or tea. The flaky salt on top becomes more pronounced as they cool, adding a pleasant crunch. For a special occasion, sandwich two cookies with a scoop of ice cream to make an ice cream sandwich.

Gooey Center Chocolate Chip Cookies

Ingredients
- 1 cup cold European-style butter, cubed (227 g)
- 1 cup dark brown sugar, packed
- 1/2 cup granulated sugar
- 1 large egg
- 1 large egg yolk
- 2 tsp vanilla bean paste
- 2 cups all-purpose flour
- 2 tsp cornstarch
- 1 tsp espresso powder
- 1 tsp baking soda
- 2 cups rough-chopped dark chocolate chunks
- Flaky sea salt, for sprinkling, to taste
Instructions
- In a large mixing bowl, combine the cold cubed butter, dark brown sugar, and granulated sugar. Beat on medium speed until just combined and dense, about 1 minute. Add the egg, egg yolk, and vanilla bean paste, and beat until the mixture is thick and cohesive, scraping down the bowl as needed.
- Sift the all-purpose flour, cornstarch, espresso powder, and baking soda together over the butter mixture. Fold with a rubber spatula until just a few streaks of flour remain. Add the rough-chopped dark chocolate chunks and fold until evenly distributed.
- Scoop the dough into 8 equal portions. Shape each into a tall, craggy mound, about 3 inches wide and 2 inches high. Place the mounds on parchment-lined baking sheets, spacing them at least 3 inches apart.
- Heat the oven to 380°F (193°C). Bake the cookies for 11 minutes, until the edges are deep golden brown and caramelized, while the centers remain tall and soft. The tops may look slightly underdone; that's the goal.
- Remove the baking sheets from the oven and immediately sprinkle the hot cookies with flaky sea salt. Let them cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Serve the cookies warm or at room temperature. To show off the gooey center, break one open and watch the melted chocolate stretch. Enjoy with a glass of cold milk.
