Tips for success
For the most intense lemon flavor, use a large, juicy lemon. If the lemon feels heavy for its size, it is likely full of juice.
Let the cake cool completely before glazing if you prefer a distinct white glaze; otherwise, glaze while warm for a more integrated look. Store any leftover glaze in the refrigerator and re-whisk with a drop of lemon juice if it thickens.
To achieve a perfectly even crack down the center, you can run a knife through the batter lengthwise before baking. This encourages the cake to crack along that line.
If you prefer a more rustic look, let it crack naturally. For an extra touch, garnish the glazed cake with a few thin lemon zest curls just before serving.
Variations
- Lemon-Poppy Seed: Add 2 tablespoons of poppy seeds to the dry ingredients for a classic lemon-poppy seed twist. The poppy seeds add a pleasant crunch and visual interest.
- Gluten-Free Option: Substitute the all-purpose flour with a 1:1 gluten-free baking flour blend. Make sure the blend contains xanthan gum for structure. The texture will be slightly more crumbly but still delicious.
- Orange Version: Replace the lemon with a whole orange, and use orange juice in the glaze instead of lemon juice. The flavor will be sweeter and less tart, with a lovely orange aroma.
- Lemon-Blueberry: Fold 1 cup of fresh or frozen blueberries into the batter before baking. The berries burst during baking, adding pockets of sweet-tart juice that complement the lemon perfectly.
Storage and make-ahead
- Fridge
- Store the glazed cake in an airtight container in the refrigerator for up to 5 days.
- Freezer
- Wrap the unglazed cake tightly in plastic wrap and freeze for up to 3 months. Thaw overnight in the refrigerator, then bring to room temperature.
- Reheat
- To reheat slices, microwave for 10-15 seconds or warm in a 350°F (175°C) oven for 5-7 minutes. This will revive the moist texture and aroma.
Store the glazed cake in an airtight container at room temperature for up to 3 days. The glaze may soften slightly, but the cake will remain moist. If the weather is very warm, you can refrigerate it, but bring it to room temperature before serving for the best texture.
The cake can be baked up to 2 days ahead. Store unglazed in an airtight container. Glaze and serve on the day you plan to eat it. The glaze can be made ahead and kept in the refrigerator for up to 3 days; whisk well before using.
Serving ideas
Serve this cake as a delightful dessert with a dollop of whipped cream or a scoop of vanilla ice cream. The bright lemon flavor also makes it a wonderful accompaniment to afternoon tea or coffee.
For a more elegant presentation, dust with a little extra confectioners' sugar just before serving.
This loaf is equally delicious served warm from the oven, with the glaze melting into the crust. Let it cool for at least 10 minutes before slicing to allow the crumb to set.
The cake is best enjoyed within a day or two, but it will stay moist for up to three days if stored properly.

Golden Whole Lemon Loaf Cake

Ingredients
- 1 organic lemon, washed and unpeeled
- 3 large eggs
- 1 cup granulated sugar (200g)
- 1/2 cup milk (100ml)
- 1/2 cup vegetable oil (100ml)
- 2 cups all-purpose flour (250g)
- 1 packet baking powder (10g)
- 1 packet vanilla sugar (5g)
- 1 cup confectioners' sugar
- 2 tbsp freshly squeezed lemon juice
Instructions
- Preheat the oven to 350°F (175°C). Line a 9x5-inch loaf pan with parchment paper, leaving some overhang on the long sides for easy removal. Wash the lemon thoroughly. Cut the lemon into wedges, removing any seeds. Place the lemon wedges into a blender pitcher. Add the eggs, granulated sugar, milk, and vegetable oil. Blend on high until the mixture is completely smooth and bright yellow, with no visible pieces of peel. This takes about 30 seconds to 1 minute, depending on your blender.
- Pour the blended lemon mixture into a large mixing bowl. Sift the all-purpose flour, baking powder, and vanilla sugar over the wet ingredients. Whisk gently until just combined, being careful not to overmix. The batter should be smooth, thick, and velvety. Overmixing can develop the gluten and make the cake tough, so stop as soon as there are no dry streaks of flour visible.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake in the preheated oven for 42 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean. The top should be tall, cracked down the center, and spring back when lightly pressed. The internal temperature of the cake should reach at least 200°F (93°C) in the center to ensure it is fully baked.
- While the cake is baking, prepare the glaze. In a small bowl, whisk together the confectioners' sugar and freshly squeezed lemon juice until smooth and thick. The glaze should be thick but pourable; if it is too thick, add a few more drops of lemon juice; if too thin, add a little more powdered sugar.
- Once the cake is baked, remove it from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack. While the cake is still warm, pipe or drizzle the glaze over the top in a zigzag pattern. Let the glaze set for a few minutes before slicing. Slice thickly and serve warm or at room temperature.
