Before you start

Before starting, make sure the mango is ripe and the pineapple is diced. If using canned pineapple, drain it well. Chill the coconut cream in the refrigerator if it is not already cold.

Prepare the white chocolate shavings by grating a solid bar of white chocolate with a box grater. Have all ingredients measured and ready to go.

The blender should be clean and dry. This recipe comes together quickly, so having everything prepped makes the process smooth.

Ingredients at a glance (6)
  • 2 cups diced ripe mango
  • 1 cup diced golden pineapple
  • 1/2 cup coconut cream
  • 1 cup ice cubes
  • 1/2 tsp ground turmeric
  • 2 tbsp white chocolate shavings

Instructions

Prep the Fruit and Chocolate

  1. Prep the fruit
Slice the mango cheeks away from the pit, then score the flesh in a crosshatch pattern and scoop out the cubes with a spoon. Dice the mango cubes into uniform 1/2-inch pieces. Drain the golden pineapple rings if needed, then dice them into clean, bite-size chunks.
Look for The mango and pineapple pieces should be roughly the same size for even blending.
Tip For easy mango prep, stand the mango upright and cut down each side of the flat pit.
  2. Grate the chocolate
Using a box grater, grate the solid block of golden mango white chocolate into a fresh pile of fine shavings. Set the shavings aside in a small bowl.
Look for The shavings should be light and fluffy, not melted or clumped.
Tip Chill the chocolate for 10 minutes before grating for cleaner shavings.

You should have uniform dice of mango and pineapple, and a bowl of fluffy white chocolate shavings. The fruit should be bright and fragrant, and the chocolate should be dry and free-flowing.

Blend the Smoothie

  1. Add ingredients to blender
Place the diced mango cubes, juicy pineapple chunks, coconut cream, ice cubes, and golden turmeric into the glass blender pitcher. Lock the lid securely in place.
Look for The pitcher should be about two-thirds full, leaving room for blending.
Tip Add the liquid coconut cream first to help the blades move more easily.
  2. Blend until smooth
Start the blender on low, then increase to high. Blend until the mixture is completely smooth and thick, with a swirling motion. Stop and scrape down the sides if needed.
Look for The smoothie should be thick and creamy, with no visible chunks.
Tip Blend in short bursts if the mixture is too thick, adding a splash of coconut water if necessary.

The blender should be filled with the fruit, coconut cream, ice, and turmeric. After blending, the mixture should be thick, smooth, and golden, with a creamy consistency that slowly swirls.

Serve and Top

  1. Serve and top
Pour the thick smoothie immediately into tall glasses. Sprinkle the white chocolate shavings generously over the top. Serve right away for the best texture and flavor.
Look for The smoothie should have a golden hue and a thick, pourable consistency.
Tip Use a spoon to help transfer the smoothie if it is very thick.

The smoothie should be poured into tall glasses and topped with the chocolate shavings. The final drink should be thick enough to hold the shavings on top, with a vibrant golden color and a sweet aroma.

Common mistakes

A common mistake is using unripe mango, which can be tart and fibrous. Another is over-blending, which can make the smoothie too thin; blend just until smooth. Adding too much turmeric can make the drink bitter, so stick to the half teaspoon.

Not draining canned pineapple can add excess liquid, making the smoothie runny. Finally, grating the chocolate too far in advance can cause it to melt or clump, so grate it right before serving.

How to tell it’s done

The smoothie is done when it is completely smooth, thick, and has a uniform golden color. There should be no visible chunks of fruit or ice. The mixture should swirl slowly in the blender and pour into glasses in a thick stream.

The white chocolate shavings should be sprinkled on top just before serving to maintain their texture. The smoothie is best enjoyed immediately, while it is still cold and the shavings are crisp.
