Tips for success

To achieve the most vibrant green color, look for high-quality roasted pistachio flour that hasn't been over-processed.

If your flour is slightly dull, you can pulse whole roasted pistachios in a food processor with a portion of the sugar to maintain freshness and color. Always store your nut flours in an airtight container in a cool, dark place to prevent the oils from turning rancid.

When adding the raspberries, press them gently into the batter so they are partially submerged. This helps the fruit release its juices into the cake as it bakes, creating a contrast between the sweet, nutty financier and the tart fruit.

If your raspberries are particularly large, you can halve them, but keeping them whole often provides a better visual and textural impact for this dessert.

Variations

  • Chocolate Pistachio: Fold in two tablespoons of finely chopped bittersweet chocolate into the batter before piping. The bitterness of the chocolate pairs beautifully with the roasted nut flavor of the pistachios, creating a more decadent version of the classic financier.
  • Lemon Zest Twist: Add the zest of one organic lemon to the dry ingredients. The bright, citrus notes cut through the richness of the brown butter and provide a refreshing contrast to the nutty pistachio flavor.

Storage and make-ahead

Fridge
Keep in an airtight container for up to 5 days.
Freezer
Freeze in a single layer, then transfer to a freezer-safe bag for up to 1 month.
Reheat
Warm in a 300°F (150°C) oven for 5 minutes to restore the crisp edges.

Store the cooled financiers in an airtight container at room temperature for up to two days. For longer storage, keep them in the refrigerator, where they will remain fresh for up to five days. Ensure the container is sealed tightly to prevent the cakes from absorbing any odors from the fridge, which can alter their delicate, nutty flavor profile.

You can prepare the batter up to 24 hours in advance and keep it in the refrigerator. In fact, resting the batter allows the flavors to meld and the flour to hydrate fully, often resulting in a superior texture. Simply pipe the cold batter into the prepared molds and add the raspberries just before you are ready to bake them in the oven.

Serving ideas

Serve these financiers slightly warm or at room temperature for the best experience. They are traditionally enjoyed as a refined afternoon treat alongside a cup of hot tea or a fresh cup of coffee.

Because they are individual cakes, they are perfect for casual gatherings or elegant tea parties where guests can easily pick them up and enjoy them without the need for utensils.

For a more polished presentation, lightly dust the tops with a fine layer of icing sugar just before serving. This adds a clean, white contrast to the golden brown edges and green pistachio crumb.

Avoid dusting them too early, as the moisture from the cakes and raspberries will cause the sugar to dissolve and disappear, diminishing the visual appeal of the finished dessert.

Frequently asked questions

Can almond flour be used instead of pistachio flour?
Yes, almond flour is the traditional choice for financiers and will work perfectly in this recipe. The texture will be very similar, though the color will be lighter and the flavor profile will be more subtle and nutty rather than distinctly pistachio-forward.
Why is the butter browned in a separate step?
Browning the butter creates beurre noisette, which provides a deep, toasted, hazelnut-like flavor and a rich aroma that defines the financier. This step is essential for achieving the traditional taste profile, as standard melted butter lacks the toasted milk solids that contribute this depth.
Can these be made without the raspberries?
Yes, they can be made plain. The financiers will still have a wonderful, crisp edge and a moist, nutty center. The raspberries are a flavorful addition that provides acidity and moisture, but the base recipe is perfectly delicious on its own if preferred.

Ingredients

  • 150 g unsalted butter
  • 120 g roasted pistachio flour
  • 150 g icing sugar
  • 50 g all-purpose flour
  • 4 egg whites
  • 36 fresh raspberries

Instructions

  1. Place the butter in a small saucepan over medium heat. Cook the butter, swirling the pan occasionally, until it turns a deep amber color and develops a nutty aroma. Remove from the heat immediately to prevent burning and let it cool slightly.
  2. In a large mixing bowl, whisk together the roasted pistachio flour, icing sugar, and all-purpose flour until well combined. Ensure there are no large lumps of sugar or flour remaining in the mixture.
  3. Add the egg whites to the dry ingredients and whisk until incorporated. Gradually pour in the warm amber brown butter while whisking constantly. Continue mixing until the batter is smooth, glossy, and fully emulsified.
  4. Transfer the batter into a piping bag and pipe it into buttered gold ingot molds. Press 3 fresh raspberries into the top of each mold. Bake at 390°F (199°C) for 14 minutes until the edges are crisp and lacy. To cook the eggs through to a safe 160°F (71°C), bake for longer, though this will change the desired jammy texture.
Contains: gluten, eggs, milk, tree nuts
Food safety: The raspberry center remains soft and jammy; use pasteurised eggs for pregnant women, young children, older adults and anyone with a weakened immune system.
