Tips for success

To achieve a beautiful, shiny crust with an extra-crispy texture, you can lightly brush the exterior of the braided dough with olive oil or a simple egg wash right before it goes into the oven.

This optional step helps the crust brown evenly and gives it a professional, bakery-style finish. Additionally, sprinkling a pinch of garlic powder or coarse sea salt over the brushed dough adds an extra layer of savory flavor to every bite of the crust.

If you find that the top of your pizza bread is browning too quickly before the dough in the center is fully baked, simply tent a piece of aluminum foil loosely over the loaf for the last ten minutes of baking.

This blocks direct heat from the top heating element while allowing the interior to finish cooking through. Always use a sharp serrated knife to slice the finished bread, as a dull knife will squash the braid and squeeze out the melted cheese.

Variations

  • Spicy Meat Lovers: Add sliced jalapeños and a pinch of crushed red pepper flakes to the beef filling for a spicy kick.
  • Three-Cheese Pizza Bread: Mix provolone and cheddar cheese with the mozzarella for an extra cheesy, rich pull-apart experience.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Freezer
Freeze baked slices wrapped tightly in foil for up to 2 months; thaw in the fridge before reheating.
Reheat
Reheat slices in a 350°F (175°C) oven or toaster oven for 8 to 10 minutes until the crust is crispy and the cheese is melted.

Store any leftover pizza bread in an airtight container in the refrigerator for up to three days. To preserve the texture, wrap the cooled slices tightly in aluminum foil or plastic wrap before placing them in the container. Avoid storing the bread while it is still warm, as steam will collect inside the container and make the crust soggy. For longer storage, you can freeze the baked slices for up to two months.

You can prepare the ground beef filling up to a day in advance and keep it stored in the refrigerator. However, it is best not to assemble and braid the entire loaf ahead of time, as the marinara sauce will soak into the raw dough and prevent it from rising properly when baked. For the best results, roll, fill, and braid the bread immediately before placing it in the preheated oven.

Serving ideas

Serve this delicious pizza bread warm, sliced into thick, generous portions. It makes an incredible appetizer for game day gatherings, movie nights, or casual parties where guests can easily grab a slice.

Place the braided loaf on a large wooden cutting board surrounded by small bowls of warm marinara sauce, garlic butter, or ranch dressing for dipping. The interactive dipping element makes the dish even more fun and satisfying to eat.

For a complete and satisfying meal, pair the rich pizza bread with a light, crisp side dish. A simple green salad tossed with a tangy Italian vinaigrette or a classic Caesar salad provides an excellent contrast to the savory meats and melted cheese.

Roasted vegetables, such as zucchini or broccoli, also make great accompaniments. Serve with plenty of napkins, as the gooey cheese and rich fillings can make for a delightfully messy experience.

Frequently asked questions

Can this pizza bread be made ahead of time?
You can brown the beef and prep the ingredients in advance, but do not assemble the braid until you are ready to bake to prevent the dough from getting soggy.
How do you keep the bottom of the bread from getting soggy?
Ensure you drain the cooked ground beef thoroughly and avoid using too much marinara sauce inside the braid. Baking on a hot baking sheet also helps.
Can frozen pizza dough be used for this recipe?
Yes, but ensure the frozen dough is completely thawed and allowed to come to room temperature before attempting to roll and braid it.

Golden Braided Meat Lovers Pizza Bread

A golden-brown braided pizza bread loaf fresh out of the oven, garnished with melted parmesan and fresh herbs on a wooden

Ingredients

  • 1 lb store-bought or made-ahead pizza dough, at room temperature
  • 1/2 lb lean ground beef
  • 1 tsp Italian seasoning
  • 1 cup marinara sauce, divided
  • 1 1/2 cups shredded mozzarella cheese
  • 3 oz pepperoni slices
  • 2 tbsp grated parmesan cheese
  • 1 tbsp finely chopped fresh herbs

Instructions

  1. Heat a skillet over medium-high heat. Add the ground beef and Italian seasoning. Cook, breaking up the meat with a wooden spoon, until it is completely browned and has reached a safe internal temperature of 160°F (71°C), about 6 to 8 minutes. Drain any excess grease from the skillet and set the cooked meat aside to cool slightly.
  2. Place the pizza dough on a large sheet of parchment paper. Roll the dough out into a rectangle, approximately 10 by 12 inches. Transfer the parchment paper with the dough onto a large baking sheet to make assembly easier.
  3. Spread half of the marinara sauce down the center third of the dough, leaving a border at the top and bottom. Evenly layer half of the shredded mozzarella cheese over the sauce, followed by the cooked ground beef, pepperoni slices, and the remaining mozzarella cheese.
  4. Using a sharp knife, cut diagonal strips about 1 inch wide along both long sides of the dough, stopping at the filling line. Fold the top and bottom borders over the filling, then alternate folding the strips over the center, crossing them to create a braided pattern.
  5. Bake the braided pizza bread in the preheated oven at 400°F (200°C) for 20 to 25 minutes. The crust should be beautifully golden brown and the cheese should be melted and bubbly.
  6. Remove the bread from the oven. Immediately sprinkle the grated parmesan cheese and chopped fresh herbs over the hot crust. Let the bread cool for 5 minutes, then slice and serve warm with the remaining marinara sauce for dipping.
