Tips for success

To get the perfect cheese pull, make sure the mozzarella cubes are fully enclosed in the meat mixture. Press the meat around the cheese and smooth the surface with your fingers.

Also, don't skip the resting time after baking the meatballs — this allows the juices to redistribute, making the meatballs more tender. When tossing in the buffalo sauce, keep the sauce warm so it coats the meatballs evenly and doesn't clump.

For a crispier top, you can broil the sliders for the last 1-2 minutes, but watch them closely to prevent burning. If you want extra heat, drizzle a little extra buffalo sauce over the meatballs before baking.

To make the sliders easier to serve, use a sharp knife to cut between the rolls after baking. Serve with extra dressing on the side for dipping, and have plenty of napkins ready — these are messy in the best way.

Variations

  • Spicy Blue Cheese: Swap the ranch for blue cheese dressing and add a pinch of cayenne pepper to the meatball mixture. Top with crumbled blue cheese before baking for an extra tangy, spicy kick.
  • Smoky BBQ Buffalo: Mix 1/4 cup of your favorite barbecue sauce into the buffalo sauce before tossing the meatballs. This adds a smoky sweetness that balances the heat and pairs well with the Hawaiian rolls.
  • Cheesy Stuffed with Cheddar: Replace the fresh mozzarella cubes with sharp cheddar cheese cubes. Cheddar melts into a gooey, slightly tangy center that complements the buffalo sauce beautifully.
  • Crispy Onion Topping: After brushing the rolls with butter, sprinkle with crispy fried onions before baking. This adds a crunchy texture and savory flavor that contrasts with the soft rolls.

Storage and make-ahead

Fridge
Store leftover sliders in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F oven for 8-10 minutes or until warmed through.
Freezer
Freeze unbaked meatballs on a baking sheet until solid, then transfer to a freezer bag for up to 2 months. Thaw overnight in the refrigerator before baking.
Reheat
Reheat frozen sliders in a 350°F oven for 15-20 minutes, covering with foil to prevent over-browning.

Store leftover sliders in an airtight container in the refrigerator for up to 3 days. The rolls may soften slightly, but the flavors will meld together. To keep the texture, reheat them in the oven or toaster oven rather than the microwave. Let the sliders cool for no more than 2 hours before refrigerating.

You can prepare the meatballs up to a day ahead. Shape them, place on a parchment-lined baking sheet, and refrigerate uncovered for up to 24 hours.

When ready to bake, preheat the oven and bake directly from the fridge, adding a couple of minutes to the cooking time. The assembled sliders can also be prepped a few hours ahead, but wait to brush with butter and bake until just before serving.

Serving ideas

Serve these sliders hot and fresh from the oven, ideally while the cheese is still stretchy. They are perfect as a game-day appetizer, a party centerpiece, or a fun weeknight dinner. Arrange them on a large platter with extra buffalo sauce and ranch or blue cheese dressing on the side for dipping. Add celery sticks and carrot sticks for a classic buffalo wing pairing.

These sliders are best enjoyed immediately, but they can also be served at room temperature for a few minutes without losing their appeal. For a complete meal, pair them with a crisp green salad or sweet potato fries.

If you're serving a crowd, you can double the recipe and use two baking sheets. Just be sure to rotate the sheets halfway through baking for even browning.

Frequently asked questions

Can these sliders be made ahead of time?
Yes, the meatballs can be shaped and refrigerated up to 24 hours before baking. The assembled sliders can also be prepped a few hours ahead, but wait to brush with butter and bake until just before serving. If freezing, freeze the unbaked meatballs and bake them directly from frozen, adding a few minutes to the cooking time.
Why does the cheese leak out of the meatballs?
Cheese leaks when the mozzarella cube is not fully sealed inside the meat mixture. Make sure to press the meat firmly around the cheese and smooth over any seams. Also, avoid overbaking, as the cheese can melt and burst through the meat if cooked too long. Use a thermometer to check doneness at 165°F (74°C).
What is the best way to reheat leftover sliders?
Reheat leftover sliders in a 350°F (175°C) oven for 8-10 minutes, or until warmed through. Cover with foil to prevent the rolls from drying out, and remove the foil for the last 2 minutes to crisp the tops. The microwave works in a pinch but may make the rolls soggy.
Can the recipe be made gluten-free?
To make gluten-free sliders, use gluten-free panko breadcrumbs and gluten-free Hawaiian-style rolls (or a gluten-free sweet roll). Ensure the buffalo sauce and ranch or blue cheese dressing are certified gluten-free. The rest of the ingredients are naturally gluten-free.
How spicy are these sliders?
The heat level depends on the buffalo sauce you use. Most buffalo sauces are moderately spicy, but you can adjust by using a milder hot sauce or mixing the sauce with a little melted butter to reduce the heat. For extra heat, add a pinch of cayenne pepper to the meatball mixture.

Giant Stuffed Buffalo Chicken Meatball Sliders

Giant buffalo chicken meatball slider pulled apart with melted mozzarella stretching between the rolls

Ingredients

  • 1 1/4 lb ground chicken
  • 3/4 cup panko breadcrumbs
  • 1 large egg, lightly beaten
  • 1/2 cup buffalo hot sauce, plus 1/4 cup for tossing
  • 1 tsp garlic powder
  • 6 oz fresh mozzarella, cut into 6 cubes
  • 12 rolls sweet Hawaiian (one 12-pack)
  • 1/2 cup ranch or blue cheese dressing
  • 2 tbsp unsalted butter, melted

Instructions

  1. In a large bowl, combine the ground chicken, panko, beaten egg, 1/4 cup of the buffalo sauce, and garlic powder. Mix with your hands until just combined, being careful not to overwork the meat. Divide the mixture into 6 equal portions. Flatten each portion into a thick patty, place a cube of mozzarella in the center, and wrap the meat around the cheese, sealing the edges completely. Roll into large, smooth meatballs.
  2. Preheat the oven to 400°F (200°C). Place the meatballs on a parchment-lined baking sheet. Bake for 15 minutes, until the meatballs are cooked through and lightly browned on the outside. The internal temperature of the thickest part of a meatball should reach 165°F (74°C). Remove from the oven and let them rest for a few minutes.
  3. Warm the remaining 1/4 cup buffalo sauce in a small saucepan over low heat. Add the baked meatballs to the pan and toss gently until each one is completely coated and lacquered with the glossy red sauce.
  4. Without separating the individual rolls, slice the entire block of Hawaiian rolls in half horizontally. Place the bottom half on a baking sheet. Nestle the glazed meatballs evenly over the bottom half, placing one meatball between the rolls. Spoon the ranch or blue cheese dressing over the meatballs. Place the top half of the rolls over the filling.
  5. Brush the tops of the rolls with the melted butter. Cover the baking sheet loosely with aluminum foil. Bake at 400°F (200°C) for 5 minutes, then remove the foil and bake for another 2-3 minutes, until the tops are golden and toasted.
  6. Remove the sliders from the oven and let them rest for 2 minutes. Pull the sliders apart while still warm, letting the melted cheese stretch. Serve immediately, with extra buffalo sauce or dressing on the side if desired.
