Tips for success

For an extra level of crunch, you can increase the oven temperature to 425°F (220°C) for the final 10 to 15 minutes of roasting. Watch the roast extremely closely during this high-heat phase, as the sugar in the browning crust can go from golden to burnt in a matter of minutes. This quick blast of heat ensures the skin is as crispy as possible before you remove it from the oven to begin the essential resting period.

If you find that the garlic cloves are darkening too quickly, you can cover them lightly with a small piece of foil while leaving the rest of the roast exposed. This allows the beef to continue browning without turning the aromatics bitter.

The goal is to have soft, sweet garlic that can be mashed and served alongside the beef. The rendered fat at the bottom of the pan is also packed with flavor and can be drizzled over the sliced meat before serving.

Variations

  • Herb-Crusted Beef Knuckle: Mix finely chopped fresh parsley, thyme, and cracked black pepper with the salt before seasoning the beef. This adds a vibrant, herbaceous layer that complements the rich flavor of the beef.
  • Garlic-Butter Basted Knuckle: During the final hour of roasting, baste the beef knuckle with a mixture of melted butter and minced garlic. This results in a deeper golden color and a richer, more decadent flavor profile.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 3 days.
Freezer
Wrap tightly in plastic wrap and foil, then store in the freezer for up to 2 months.
Reheat
Reheat in a 350°F (175°C) oven until warmed through and the skin regains some crispness, about 15-20 minutes.

Allow any leftovers to cool completely at room temperature for no more than two hours before transferring them to an airtight container. Properly stored, the meat will remain safe to eat in the refrigerator for up to three days.

Keep the skin separate if possible to maintain its texture, although it will naturally soften once refrigerated. When storing, ensure the container is sealed tightly to prevent the beef from absorbing other odors from the refrigerator.

You can prepare the beef knuckle by seasoning it and letting it sit uncovered in the refrigerator for up to 24 hours before roasting. This process, known as dry-brining, draws moisture out of the skin and helps it become even crispier during the cooking process.

Simply remove the beef from the refrigerator 30 minutes before roasting to bring it to room temperature. Do not attempt to cook the entire roast ahead of time, as it is best served fresh from the oven.

Serving ideas

Serve the beef knuckle sliced into thick portions, ensuring each guest receives a piece of the crispy skin. The roasted garlic cloves can be served whole on the side, allowing guests to mash them onto the meat for a burst of sweet, savory flavor. Accompany this dish with traditional sides like braised red cabbage, potato dumplings, or a simple cucumber salad to balance the richness of the roast.

Arrange the slices on a warm platter to help maintain the temperature of the meat while you serve. If you have extra pan drippings, skim the excess fat and serve the concentrated juices as a simple au jus.

The rustic presentation of the whole roasted knuckle is part of its charm, so consider bringing the entire board to the table before carving it in front of your guests. This adds a sense of occasion and highlights the impressive, crackling crust you have worked to achieve.

Frequently asked questions

Can the beef knuckle be cooked in a slow cooker?
The slow cooker is not recommended for this recipe because it uses moist heat, which will prevent the crust from becoming crispy. A traditional oven roast is essential for achieving the signature crackling exterior that defines this dish.
Why is it important to let the beef rest before carving?
Resting allows the internal juices, which migrate to the surface during the high-heat roasting process, to redistribute throughout the meat. If you carve immediately, the juices will run out, resulting in a drier and less flavorful final product.
How can the skin be made extra crispy?
Patting the skin completely dry with paper towels is the most important step. Additionally, allowing the seasoned beef to sit uncovered in the refrigerator overnight helps dehydrate the skin, which significantly improves the crisping process during the final roast.

Ingredients

  • 1 piece beef knuckle, about 3-4 lbs
  • 1 head garlic, cloves separated and left in skins
  • 1 sprig fresh rosemary

Instructions

  1. Line a large baking pan with parchment paper. Keep the beef knuckle in the refrigerator until ready to cook, removing it at most 30 minutes before placing it in the oven. Place the beef knuckle in the center of the pan.
  2. Scatter the garlic cloves in their skins and the rosemary sprig around the beef knuckle on the baking pan. Place the pan in the oven and roast until the exterior is deeply browned and crackling, reaching an internal temperature of at least 145°F (63°C), then allow it to rest for at least 3 minutes before any final carving.
  3. Remove the pan from the oven once the meat reaches 145°F (63°C). Let the beef knuckle rest on a cutting board for at least 20 minutes to allow the juices to redistribute. Use a sharp chef knife to slice through the crust and serve.
