Tips for success
To achieve an exceptionally smooth sauce, allow the cream cheese to soften at room temperature for about twenty minutes before cooking. Cold cream cheese takes longer to melt and can leave tiny, stubborn white flecks throughout the beef mixture.
If the sauce becomes too thick after adding the pasta, splash in a tablespoon or two of reserved pasta cooking water to loosen the consistency and restore the glossy sheen.
Adjust the level of spice by selecting either mild, medium, or hot canned diced tomatoes with green chilies. For a deeper garlic flavor, grate the garlic directly into the beef during the last minute of browning to prevent it from scorching.
Always toss the pasta and sauce together over low heat to allow the starch to bond with the fats without boiling the cheese, which can cause curdling.
Variations
- Spicy Jalapeno Beef: Add diced fresh jalapenos during the beef browning stage and use hot Rotel tomatoes for an extra kick of heat.
- Spinach and Mushroom: Stir in fresh baby spinach and sliced mushrooms during the last few minutes of simmering the sauce until wilted.
Storage and make-ahead
- Fridge
- Keep in an airtight container in the refrigerator for up to 3 to 4 days.
- Freezer
- Freezing is not recommended as the cream cheese sauce may separate and become grainy upon thawing.
- Reheat
- Reheat gently on the stovetop over low heat, adding a splash of milk or water to restore the creamy consistency.
Store any leftover pasta in an airtight container in the refrigerator within two hours of cooking. The creamy sauce will thicken significantly as it cools, so it is normal for the leftovers to appear solid when cold. To maintain the best texture and prevent the pasta from absorbing all the moisture, consume the leftovers within three to four days.
While this dish is best enjoyed fresh from the skillet, the beef and tomato sauce can be prepared up to twenty-four hours in advance. Store the sauce separately in the refrigerator, then reheat it gently on the stovetop over low heat.
Boil the bowtie pasta fresh just before serving, then toss the hot pasta directly into the warmed sauce to maintain the ideal creamy texture.
Serving ideas
Serve this comforting pasta piping hot in shallow, warmed bowls to help retain the heat of the creamy sauce. Garnish each portion generously with extra freshly grated parmesan cheese and a sprinkle of finely chopped fresh parsley for a touch of color and freshness.
Pair this rich dish with a crisp green salad tossed in a light vinaigrette or some warm garlic bread to complement the savory flavors.
For a complete dinner presentation, serve the pasta alongside roasted green vegetables such as broccoli or asparagus. The bright acidity of a side dish helps balance the decadent, creamy nature of the beef and cheese sauce. Ensure the pasta is portioned immediately after tossing, as the sauce will begin to set and lose its glossy, pourable quality as it cools down.

Garlic Parmesan Bowtie Pasta with Creamy Beef Rotel Sauce

Ingredients
- 12 oz bowtie pasta
- 1 lb ground beef
- 3 cloves garlic, minced
- 10 oz Rotel diced tomatoes and green chilies, undrained
- 8 oz cream cheese, cubed and softened
- 1/2 cup grated parmesan cheese
- 2 tbsp chopped fresh parsley, for garnish
Instructions
- Bring a large pot of salted water to a rolling boil over high heat. Add the bowtie pasta and cook according to the package instructions until al dente. Drain the pasta thoroughly in a colander, reserving a small cup of the pasta water, and set aside.
- Heat a large skillet over medium-high heat. Add the ground beef and minced garlic to the skillet. Cook, breaking the meat apart with a wooden spoon, until the beef is fully browned and reaches a safe internal temperature of 160°F (71°C). Drain any excess grease from the skillet.
- Reduce the heat to medium-low. Add the undrained Rotel diced tomatoes and green chilies along with the cubed cream cheese to the skillet with the beef. Stir continuously until the cream cheese melts completely and blends with the tomatoes to form a smooth, rich sauce.
- Add the cooked bowtie pasta and grated parmesan cheese to the skillet. Gently toss the ingredients together over low heat until the pasta is completely coated and the parmesan cheese has melted into the sauce. If the sauce is too thick, stir in a splash of the reserved pasta water.
- Remove the skillet from the heat. Garnish the pasta with chopped fresh parsley before portioning. Serve immediately while hot and steaming.
