Tips for success
To achieve the ultimate sear on your steak bites, make sure the skillet is smoking hot before adding the beef. A cast-iron skillet is highly recommended because it retains heat exceptionally well and distributes it evenly.
Avoid stirring the meat immediately after adding it to the pan; letting it sit undisturbed for the first two minutes is crucial for developing that flavorful, caramelized crust.
For the creamiest mashed potatoes, warm the butter slightly before incorporating it into the hot, drained potatoes. Adding cold dairy can lower the temperature of the potatoes too quickly, preventing them from absorbing the fats smoothly. This simple step ensures a perfectly cohesive, velvety texture every single time.
Variations
- Herb Butter Steak Bites: Add fresh herbs like chopped rosemary, thyme, or oregano to the melted butter along with the garlic for an earthy aroma.
- Spicy Garlic Steak Bites: Toss a pinch of red pepper flakes into the butter with the garlic to add a subtle, warming heat to the dish.
Storage and make-ahead
- Fridge
- Cool leftovers for up to two hours, then store in separate airtight containers in the refrigerator for up to three days.
- Freezer
- The mashed potatoes can be frozen in an airtight container for up to one month, but freezing the steak is not recommended.
- Reheat
- Reheat potatoes on the stovetop with a splash of water or butter. Warm steak bites gently in a skillet over medium-low heat.
Store any leftover steak bites and mashed potatoes in separate airtight containers in the refrigerator. Keeping them separate helps preserve the distinct textures of each component when you are ready to reheat them.
Leftovers should be cooled to room temperature for no more than two hours before being placed in the fridge, where they will keep well for up to three days.
While the steak bites are best enjoyed fresh from the skillet, the parmesan mashed potatoes can easily be made ahead of time. Prepare the potatoes up to twenty-four hours in advance, cover them tightly, and store them in the refrigerator.
Gently reheat them on the stovetop over low heat, adding a splash of water or butter to restore their creamy consistency before serving.
Serving ideas
Serve this dish warm, spooning a generous portion of the whipped parmesan potatoes onto the center of each plate. Create a small well in the potatoes, nestle the garlic butter steak bites inside, and drizzle the remaining pan drippings and garlic butter generously over the top. Garnish with a sprinkle of fresh herbs if desired.
This rich and comforting meal pairs beautifully with simple roasted green vegetables to balance the savory flavors. Consider serving it alongside crisp roasted asparagus, sautéed green beans, or a light green salad dressed with a bright lemon vinaigrette.
A glass of bold red wine, such as a Cabernet Sauvignon or Syrah, also complements the rich beef and garlic butter perfectly.

Garlic Butter Steak Bites with Creamy Parmesan Mashed Potatoes

Ingredients
- 2 lb potatoes, peeled and cubed
- 1/2 cup butter, divided
- 1/2 cup parmesan cheese, grated
- 1 1/2 lb steak, cut into 1-inch cubes
- 1 tbsp seasoning
- 4 cloves garlic, minced
Instructions
- Place the peeled and cubed potatoes in a large pot and cover with cold water. Bring to a boil over high heat, then reduce the heat to medium and simmer until the potatoes are completely fork-tender, about 15 minutes. Drain the water thoroughly.
- Mash the hot potatoes in the pot. Add half of the butter and the parmesan cheese. Whip with a hand mixer or a sturdy spoon until completely smooth, fluffy, and creamy, then cover the pot to keep them warm.
- Pat the steak cubes completely dry with paper towels and coat them with the seasoning. Heat half of the remaining butter in a large skillet over high heat. Once the butter is foaming, add the seasoned steak cubes in a single layer. Sear without moving for 2 minutes to form a deep brown crust.
- Flip the steak cubes and cook for an additional 1 to 2 minutes. The internal temperature must reach at least 145°F (63°C) for food safety. Remove the skillet from the heat and transfer the steak bites to a plate. Let the meat rest for at least 3 minutes to keep the juices locked inside.
- Reduce the skillet heat to medium-low. Melt the remaining butter in the same skillet, scraping up any browned bits from the bottom. Add the minced garlic and sauté for 1 minute until fragrant. Return the rested steak bites and their juices to the pan, tossing to coat in the garlic butter. Spoon the warm mashed potatoes onto plates, top with the steak bites, and drizzle the rich garlic butter sauce over the top.
