Tips for success
For the best flavor, use a high-quality aged Parmigiano-Reggiano and grate it yourself. Pre-shredded cheese often contains anti-caking agents that prevent smooth melting.
The charred lemon is not optional — it adds a smoky depth that brightens the whole dish. To char the lemon, place the halves cut side down in a dry skillet over high heat for 1-2 minutes until deeply browned.
Serve the crab legs directly from the skillet, with crusty bread or warm rolls to soak up the garlic butter. Provide crab crackers and small forks for extracting every bit of meat.
If you have leftover garlic butter, it's delicious tossed with pasta or drizzled over grilled vegetables.
Variations
- Spicy Cajun: Add 1 teaspoon Cajun seasoning and a pinch of cayenne to the garlic butter for a smoky, spicy kick. Finish with chopped green onions instead of parsley.
- Lemon Herb: Use fresh dill and chives instead of thyme and parsley. Add 1 teaspoon lemon zest to the butter and serve with extra lemon wedges.
- White Wine Butter: Deglaze the skillet with 1/4 cup dry white wine after searing, then continue with the butter and herbs. The wine adds acidity and depth.
- Cheese Crust: After basting, sprinkle a thick layer of Parmesan over the crab and let it melt until golden and crispy, like a cheese crust. Broil for 1-2 minutes if needed.

To reheat, gently warm the crab in a skillet with a little butter over low heat, or microwave in short bursts, being careful not to overcook.
You can split the crab legs and grate the Parmesan up to a day ahead. Store the crab in the refrigerator and the cheese in an airtight container. The garlic herb butter can be made in advance and refrigerated; melt it gently before using.
Serving ideas
Serve the king crab legs as the main event, with melted butter on the side for dipping. A crisp green salad with a light vinaigrette balances the richness.
Crusty sourdough or baguette is essential for sopping up every last drop of garlic butter.
For a more substantial meal, serve over pasta, rice, or creamy polenta. The garlic butter and Parmesan create a sauce that coats grains beautifully. Pair with a chilled glass of dry white wine, such as Sauvignon Blanc or Chardonnay.

Garlic Butter King Crab Leg Skillet with Parmesan

Ingredients
- 2 lb Alaskan king crab legs
- 1/2 cup unsalted butter
- 4 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tsp fresh thyme leaves
- 1/2 cup grated Parmigiano-Reggiano cheese
- 1 lemon, halved
- flaky sea salt, to taste
Instructions
- Using kitchen shears, cut each king crab leg shell lengthwise along the thinner side, exposing the snow-white meat. Crack the knuckles and claws lightly with the back of a knife or crab cracker so the meat is easy to pull out. Keep the legs in large pieces for a dramatic presentation.
- Grate a firm block of aged Parmigiano-Reggiano on the large holes of a box grater into a fresh pile of finely grated cheese. Set aside at room temperature.
- Place a large cast iron skillet over medium-high heat and let it get hot, about 2 minutes. Add the butter, garlic, parsley, and thyme. Swirl the pan as the butter melts and foams, cooking the aromatics until fragrant, about 1 minute.
- Arrange the split king crab legs in the hot skillet, cut side up, nestling them into the garlic butter. Let them sear undisturbed for 2 minutes, then use tongs to turn them and baste with the bubbling butter.
- Tilt the skillet slightly and use a spoon to continuously baste the exposed crab meat with the garlic herb butter. Cook until the crab is heated through and the meat is opaque and flakes easily, about 4 to 5 minutes. The internal temperature should reach 145°F (63°C).
- Remove the skillet from the heat. Shower the grated Parmesan over the hot crab legs, letting it melt slightly. Squeeze the charred lemon halves over the top and sprinkle with flaky sea salt. Serve immediately.
