Tips for success
For extra golden chicken, pat the pieces dry before seasoning—moisture is the enemy of browning.
Use a heavy-bottomed skillet, like cast iron or stainless steel, which holds heat evenly and encourages a deep sear. If you're doubling the recipe, cook the chicken in two batches to avoid overcrowding.
To keep the sauce velvety, always add the parmesan off the boil and whisk it in gradually. If the sauce splits or becomes grainy, a splash of cold cream or a few tablespoons of pasta water whisked in can often bring it back together.
Taste before serving and adjust salt only after the cheese is added, since parmesan is already salty.
Variations
- Add Vegetables: Sauté a cup of sliced mushrooms or spinach in the skillet after removing the chicken, before adding the garlic. Cook until tender, then proceed with the sauce. This adds color and extra bulk without changing the creamy character.
- Spicy Kick: Add 1/2 teaspoon of red pepper flakes along with the garlic, or stir in a teaspoon of hot sauce with the cream. The heat balances the richness and gives the dish a subtle warmth that builds as you eat.
- Lemon Herb: Stir in the zest of one lemon and a tablespoon of lemon juice with the parmesan. Swap the parsley for fresh basil or chives. The citrus brightens the sauce and makes it feel lighter.
- Crispy Bacon: Cook 4 slices of bacon in the skillet before the chicken, then crumble and set aside. Use the bacon fat instead of butter for the chicken, and sprinkle the bacon over the finished dish. Smoky and indulgent.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 3 days. Reheat gently with a splash of pasta water or milk to restore the creamy texture.
- Freezer
- Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a skillet over low heat, adding a splash of pasta water or milk to loosen the sauce. Stir frequently until warmed through.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The sauce will thicken as it cools, so when reheating, add a splash of milk or pasta water to loosen it. Reheat gently on the stovetop over low heat, stirring frequently, to avoid curdling the cream.
The sauce can be made up to 1 day ahead: prepare through step 6, cool, and refrigerate. When ready to serve, reheat gently, then add the cooked chicken and pasta.
Alternatively, cook the chicken and pasta ahead and store separately, then combine with the reheated sauce just before serving.
Serving ideas
Serve the garlic butter chicken and fettuccine in warm bowls, twirling the pasta into a neat nest and placing the chicken bites on top. Finish with a sprinkle of fresh parsley and a few cracks of black pepper. A side of crusty bread is perfect for soaking up any extra sauce.
This dish pairs beautifully with a simple green salad dressed with lemon vinaigrette to cut through the richness.
For wine, a crisp Pinot Grigio or a lightly oaked Chardonnay complements the creamy garlic sauce. Leftovers make a satisfying lunch the next day, though the sauce is best when freshly made.

Garlic Butter Chicken Bites with Creamy Parmesan Fettuccine

Ingredients
- 1 1/2 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 4 tbsp unsalted butter, divided
- 6 cloves garlic, minced
- 12 oz fettuccine pasta
- 1 1/2 cups heavy cream
- 1 cup grated parmesan cheese
- 2 tbsp fresh parsley, chopped
Instructions
- Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set aside.
- Pat the chicken pieces dry with paper towels. Season evenly with kosher salt and black pepper.
- Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the chicken in a single layer and cook without moving for 3-4 minutes until golden brown. Flip and cook another 3-4 minutes until the chicken is cooked through and reaches 165°F (74°C) in the thickest piece. Transfer the chicken to a plate.
- Reduce the heat to medium and add the remaining 2 tablespoons of butter to the same skillet. Once melted, add the minced garlic and cook, stirring constantly, for 30-60 seconds until fragrant but not browned.
- Pour in the heavy cream and bring to a gentle simmer, scraping up any browned bits from the bottom of the skillet. Let the cream bubble softly for 2-3 minutes until it thickens slightly.
- Reduce the heat to low and gradually whisk in the grated parmesan, a handful at a time, until the sauce is smooth and the cheese is fully melted.
- Return the chicken to the skillet along with any accumulated juices. Add the drained fettuccine and toss to coat everything in the sauce. If the sauce is too thick, splash in some reserved pasta water a tablespoon at a time until it reaches the desired consistency.
- Sprinkle the chopped parsley over the pasta and chicken. Serve immediately, twirling the fettuccine into nests and placing the chicken bites alongside.
