Tips for success
For the crispiest pockets, brush the butter generously and make sure the tortillas are well sealed.
If you have time, chill the assembled pockets for 15 minutes before baking—this helps them hold their shape. For extra crunch, you can place the baking dish on the lowest oven rack for the last few minutes.
To make garlic herb butter, mix 3 tablespoons softened butter with 1 minced garlic clove and 1 teaspoon chopped fresh herbs (like parsley or thyme).
If you prefer a milder heat, remove the seeds from the serrano pepper. For a smoky twist, add a pinch of chipotle powder to the beef mixture.
Variations
- Chicken Pockets: Swap the ground beef for ground chicken or turkey. Cook to 165°F (74°C). Add a teaspoon of taco seasoning for extra flavor. The filling may be leaner, so consider adding a tablespoon of olive oil when browning.
- Vegetarian Pockets: Replace the beef with a can of black beans (rinsed and drained) or cooked lentils. Sauté the vegetables as directed, then stir in the beans and spices. Omit the beef and reduce cooking time. Use vegan cheese if desired.
- Spicy Chorizo Pockets: Use fresh chorizo sausage instead of ground beef. Remove the casings and cook as directed. Reduce the salt, as chorizo is salty. The filling will be spicier and richer. Follow the same assembly and baking steps.
- Breakfast Pockets: Skip the beef and make a breakfast filling with scrambled eggs, cooked bacon, and cheese. Follow the same folding and baking method, but reduce baking time to 12-15 minutes. Serve with salsa.

Store leftover pockets in an airtight container in the refrigerator for up to 3 days. To reheat, place them in a 350°F (175°C) oven for 10 minutes, or until heated through and crisp. Avoid microwaving, as it makes the tortillas soggy.
The beef filling can be prepared up to 2 days ahead and stored in the refrigerator. Assemble the pockets just before baking.
You can also assemble the pockets completely, cover the dish, and refrigerate for up to 24 hours. Add a few extra minutes to the baking time if baking from cold.
Serving ideas
Serve the pockets hot, straight from the oven, with a side of sour cream or a simple green salad. They're also great with a dollop of guacamole or salsa for dipping.
The pockets are substantial enough to be a main course, but you can cut them in half for appetizers or party bites.
For a complete meal, pair them with Mexican rice or a crisp slaw. If you like extra heat, offer sliced jalapeños or hot sauce on the side. These pockets are also delicious for lunch the next day—pack them in a lunchbox and reheat in a toaster oven for a crispy result.

Garlic Butter Beef Pockets: Cheesy, Juicy, and Easy

Ingredients
- 1 lb 80/20 ground beef
- 1 medium yellow onion, diced
- 1 cup sweet bell peppers, chopped
- 3 cloves garlic, minced
- 1 serrano pepper, diced
- 3 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 large flour tortillas (10-inch)
- 1 1/2 cups shredded mozzarella cheese, divided
- 3 tbsp garlic herb butter, melted
- 2 tbsp fresh parsley, chopped
Instructions
- Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and no longer pink, about 5-7 minutes. Add the diced onion, bell peppers, and serrano pepper, and cook until softened, about 3-4 minutes. Stir in the minced garlic, tomato paste, cumin, smoked paprika, salt, and black pepper. Cook for 2 minutes until the mixture is thick and aromatic.
- Lay the flour tortillas on a clean work surface. Divide the beef mixture evenly among the tortillas, placing it in the center. Sprinkle about 1/4 cup of the shredded mozzarella over each portion of beef. Fold the sides of the tortilla over the filling, then fold the top and bottom edges to form a tight rectangular parcel. Place the pockets seam-side down in a lightly greased baking dish.
- Preheat the oven to 380°F (193°C). Brush the tops of the pockets generously with the melted garlic herb butter. Sprinkle the remaining mozzarella cheese over the tops, covering them evenly.
- Place the baking dish in the preheated oven and bake for 18 minutes, or until the pockets are golden brown and the cheese is melted and bubbly. The edges of the tortillas should be crisp and lightly charred in spots.
- Remove the pockets from the oven and let them cool for 2 minutes. Sprinkle with fresh chopped parsley. Serve hot, tearing into the pocket to reveal the molten cheese and juicy beef filling.
