Before you start

Before beginning, ensure all ingredients are measured and ready. If you are baking the brownies from scratch, prepare your batter according to your chosen recipe and ensure you have enough time for the brownies to cool completely before assembly.

Having the kataifi pre-toasted will make the process much smoother. Clear enough space in your refrigerator to accommodate the square baking pan, which is essential for the chilling stage. A clean workspace and a sharp knife are also important for the final slicing.

Ingredients at a glance (5)
  • 1 batch brownie batter containing eggs, prepared from your favorite recipe
  • 2 cups kataifi threads, toasted until golden
  • 1 cup Sicilian pistachio cream
  • 1 tbsp coconut oil, melted
  • 6 oz dark chocolate, melted

Instructions

Baking the Foundation

  1. Bake the Brownie Base
Preheat your oven to 350°F (175°C). Pour the prepared brownie batter into a parchment-lined 8x8 inch square baking pan. Bake for 25 minutes or until the center is set but still fudgy. Remove from the oven and allow the brownies to cool completely in the pan before adding the topping.
Look for The edges should look set and the center should be firm to the touch.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Do not overbake the brownies, as the fudgy texture is essential for the final result.

The brownies should be baked until they reach a fudgy consistency. The top should be slightly shiny and the edges should be firm.

Allow them to cool completely in the pan, as this prevents the later layers from absorbing heat and becoming soft. You should be able to touch the pan comfortably before proceeding.

Layering the Crunch

  1. Prepare the Pistachio Layer
In a medium bowl, combine the toasted golden kataifi threads, Sicilian pistachio cream, and melted coconut oil. Mix thoroughly until the kataifi is evenly coated and sticky. Spread this mixture in an even, thick layer over the cooled brownie base, pressing down lightly with a spatula to ensure it adheres to the surface.
Look for The mixture should be thick, crunchy, and well-combined.
Tip Ensure the kataifi is toasted until deep golden brown for the best flavor and crunch.

The pistachio cream should be thick and fully incorporated with the toasted kataifi. When spread, the layer should be uniform in thickness across the brownie surface. It should feel stable and not shift when you gently tilt the pan. This layer acts as the textural heart of the dessert.

Setting the Shell

  1. Add Chocolate and Chill
Pour the melted dark chocolate over the top of the pistachio layer, spreading it out to create a smooth, glossy coating that covers the entire surface. Place the pan in the refrigerator for 15 minutes to allow the chocolate shell to set completely. Once firm, cut into squares and serve immediately to enjoy the contrast between the fudgy brownie and the crunchy top.
Look for The chocolate should be firm and crack slightly when pressed.
Tip Use a warm knife when slicing to prevent the chocolate shell from cracking unevenly.

The chocolate should be spread quickly to ensure a smooth, level finish. After chilling for 15 minutes, the chocolate must be solid and cool. When you press a finger gently on the surface, it should leave no imprint. The entire dessert is now ready to be portioned into neat, clean squares.

Common mistakes

A common mistake is applying the pistachio and chocolate layers while the brownies are still hot, which will cause the toppings to melt into the base and lose their distinct layers. Another error is failing to toast the kataifi sufficiently, which leads to a chewy rather than crispy texture.

Finally, rushing the chilling stage prevents the chocolate from developing the necessary snap, resulting in a messy slice. Ensure the brownie is fully cooled before starting the assembly to maintain perfect, distinct layers.

How to tell it’s done

The brownies are done when a toothpick inserted into the center comes out with a few moist crumbs, not raw batter. The edges should be slightly pulled away from the sides of the pan. For the topping, the pistachio layer should feel firm once combined and spread.

The final chocolate layer is done when it is completely set, smooth, and cool to the touch after the 15-minute chilling period in the refrigerator. The chocolate should not be tacky or soft.
