Tips for success
For the fudgiest texture, do not overbake. Pull the muffins out when a toothpick inserted into the center comes out with a few moist crumbs, not completely clean.
The residual heat will continue to set the crumb as they cool. If the tops are browning too quickly, tent the tin with foil for the last five minutes of baking.
To make these muffins even more indulgent, serve them warm with a scoop of vanilla ice cream or a drizzle of chocolate sauce. For a breakfast twist, reduce the chocolate chips to 1 cup and add a handful of chopped nuts or oats. The recipe is forgiving, so feel free to adjust the add-ins to your liking.
Variations
- Nutty chocolate muffins: Fold in 1/2 cup of chopped walnuts or pecans along with the chocolate chips. The nuts add crunch and a toasty flavor that complements the chocolate and banana. Toast the nuts first for extra depth.
- White chocolate raspberry: Swap the semi-sweet chocolate chips for white chocolate chips and use raspberries instead of strawberries. The sweet white chocolate and tart raspberries create a bright, fruity contrast. Bake as directed; the white chocolate will melt into creamy pockets.
- Peanut butter swirl: After filling the muffin tins, drop a teaspoon of creamy peanut butter on top of each muffin and swirl it into the batter with a knife. The peanut butter adds a savory-sweet richness that pairs beautifully with the chocolate. Use a natural peanut butter for best results.
- Vegan version: Replace the eggs with flax eggs (2 tbsp ground flaxseed mixed with 6 tbsp water), use melted coconut oil instead of butter, and choose a dairy-free yogurt or sour cream substitute. Use vegan chocolate chips and ensure the sugar is vegan. Bake as directed; the texture will be slightly denser but still fudgy.
Storage and make-ahead
- Fridge
- Store muffins in an airtight container in the refrigerator for up to 5 days. Bring to room temperature or reheat before serving.
- Freezer
- Freeze the baked muffins in a single layer on a baking sheet, then transfer to a freezer bag for up to 2 months.
- Reheat
- Reheat a muffin in the microwave for 15-20 seconds, or in a 350°F (175°C) oven for 5-7 minutes until warm and the chocolate is melted again.
Store the muffins in an airtight container at room temperature for up to 3 days. They are best enjoyed warm; reheat individual muffins in the microwave for 15-20 seconds to restore the molten chocolate texture.
If the muffins are fully cooled, they can be stored in a resealable plastic bag with the air pressed out.
The muffin batter can be made ahead and stored in the refrigerator for up to 24 hours before baking. Cover the bowl tightly with plastic wrap.
When ready to bake, scoop the chilled batter into the muffin tins and bake as directed, adding 2-3 minutes to the total baking time. The muffins can also be baked, cooled completely, and frozen for up to 2 months.
Serving ideas
Serve these muffins warm for the best experience—the chocolate chips will be molten and the strawberries soft and jammy. Place them on a serving platter with a dusting of powdered sugar if desired. They pair wonderfully with a cold glass of milk, a hot cup of coffee, or a scoop of vanilla ice cream for dessert.
These muffins are perfect for breakfast, brunch, or an afternoon snack. They are rich enough to satisfy a chocolate craving but still have the comforting familiarity of a banana muffin.
For a special occasion, serve them with a dollop of whipped cream and extra sliced strawberries on top. They are also great for packing in lunchboxes or taking on a picnic.

Fudgy Double Chocolate Strawberry Banana Muffins

Ingredients
- 3 ripe bananas, mashed
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1/4 cup vegetable oil
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 1/2 cups semi-sweet chocolate chips
- 1 1/2 cups strawberries, hulled and sliced
Instructions
- In a large mixing bowl, mash the three ripe bananas with a fork until mostly smooth with a few small lumps. Add the two eggs, melted butter, vegetable oil, granulated sugar, brown sugar, maple syrup, vanilla extract, and sour cream. Whisk everything together until the mixture is silky and well combined.
- In a separate bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking soda, baking powder, and salt until evenly combined. Sift if the cocoa is lumpy. Set the dry mixture aside.
- Pour the dry ingredients into the wet mixture. Use a rubber spatula to fold gently until just a few streaks of flour remain. Add 1 cup of the chocolate chips and 1 cup of the sliced strawberries. Fold a few more times until the add-ins are distributed, but do not overmix.
- Line a 12-cup muffin tin with paper liners. Scoop the batter into the prepared tins, filling each cup about three-quarters full. The batter will be thick; use a cookie scoop or two spoons for even portions.
- Sprinkle the remaining 1/2 cup chocolate chips over the tops of the muffins. Arrange the remaining 1/2 cup strawberry slices on top, pressing them in gently so they stick to the batter.
- Place the muffin tin in a cold oven, then set the oven to 425°F (220°C). Bake for exactly 5 minutes. The high heat will help the tops dome and crackle.
- Reduce the oven temperature to 375°F (190°C) and continue baking for 15 minutes, or until a toothpick inserted into the center of a muffin comes out with only a few moist crumbs. The internal temperature of the muffins should read at least 160°F (71°C) in the center to ensure the eggs are fully set.
- Remove the muffin tin from the oven and let it cool in the pan for 5 minutes. Then transfer the muffins to a wire rack to cool slightly. Serve warm so the chocolate is still molten and the strawberries are jammy.
