Before you start

Before starting, measure all ingredients and bring the eggs and sour cream to room temperature if possible. Line a 12-cup muffin tin with paper liners. Hull and slice the strawberries, and chop the chocolate if using a bar.

Preheat the oven to 425°F only after the batter is ready, because the batter should go into a hot oven immediately. Have a cooling rack ready nearby for after baking.

Ingredients at a glance (16)
  • 3 ripe bananas, mashed
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 1/2 cups strawberries, hulled and sliced

Instructions

Make the batter

  1. Mash the bananas
In a large mixing bowl, mash the three ripe bananas with a fork until mostly smooth with a few small lumps. Add the two eggs, melted butter, vegetable oil, granulated sugar, brown sugar, maple syrup, vanilla extract, and sour cream. Whisk everything together until the mixture is silky and well combined.
Look for The wet mixture looks glossy and smooth, with no streaks of egg or butter.
Tip Use very ripe bananas with brown spots for the most flavor and natural sweetness.
  2. Mix the dry ingredients
In a separate bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking soda, baking powder, and salt until evenly combined. Sift if the cocoa is lumpy. Set the dry mixture aside.
Look for The dry mix is uniform in color, with no visible clumps of cocoa or baking powder.
Tip Whisking the dry ingredients aerates them and helps the muffins rise evenly.
  3. Combine wet and dry
Pour the dry ingredients into the wet mixture. Use a rubber spatula to fold gently until just a few streaks of flour remain. Add 1 cup of the chocolate chips and 1 cup of the sliced strawberries. Fold a few more times until the add-ins are distributed, but do not overmix.
Look for The batter is thick and slightly lumpy; no dry flour pockets remain.
Tip Overmixing develops gluten and makes muffins tough. Stop as soon as the flour disappears.

The wet mixture is silky and glossy, with no streaks of egg or butter. The dry ingredients are whisked together and free of lumps. After folding, the batter is thick and slightly lumpy, with chocolate chips and strawberries distributed throughout. The batter should be scooped into the tins immediately to keep the leavening active.

Bake the muffins

  1. Fill the muffin tins
Line a 12-cup muffin tin with paper liners. Scoop the batter into the prepared tins, filling each cup about three-quarters full. The batter will be thick; use a cookie scoop or two spoons for even portions.
Look for Each cup is filled evenly, with batter reaching just below the rim of the liner.
Tip For taller muffin tops, fill the cups slightly higher and bake immediately.
  2. Top with extras
Sprinkle the remaining 1/2 cup chocolate chips over the tops of the muffins. Arrange the remaining 1/2 cup strawberry slices on top, pressing them in gently so they stick to the batter.
Look for The tops are dotted with chocolate and berry slices, ready for the oven.
Tip Adding chips on top creates a melty, glossy finish as they bake.
  3. Bake at high temperature
Place the muffin tin in a cold oven, then set the oven to 425°F (220°C). Bake for exactly 5 minutes. The high heat will help the tops dome and crackle.
Look for After 5 minutes, the muffin tops begin to rise and form a slight crust.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Do not open the oven door during this stage; the burst of steam helps create the crackly top.
  4. Lower the temperature and finish baking
Reduce the oven temperature to 375°F (190°C) and continue baking for 15 minutes, or until a toothpick inserted into the center of a muffin comes out with only a few moist crumbs. The internal temperature of the muffins should read at least 160°F (71°C) in the center to ensure the eggs are fully set.
Look for The muffins are puffed, the tops are crackled, and a toothpick comes out with moist crumbs, not wet batter.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip If the tops brown too quickly, tent loosely with foil for the last 5 minutes.

After the first five minutes at 425°F, the muffin tops are beginning to rise and form a slight crust. After the full 20 minutes, the muffins are puffed, the tops are crackled, and the kitchen smells intensely of chocolate and roasted berries.

A toothpick inserted in the center comes out with moist crumbs, and the internal temperature reads at least 160°F (71°C).

Cool and serve

  1. Cool and serve
Remove the muffin tin from the oven and let it cool in the pan for 5 minutes. Then transfer the muffins to a wire rack to cool slightly. Serve warm so the chocolate is still molten and the strawberries are jammy.
Look for The muffins are domed and fragrant, with chocolate melting out of the tops.
Tip Warm muffins are the best for that gooey, fudgy texture; if they cool completely, reheat briefly in the microwave.

The muffins are cool enough to handle but still warm in the center. When broken open, the crumb is fudgy and dark, with pockets of molten chocolate and soft strawberry pieces. The tops are crackly and slightly crisp, while the interior is tender and moist. Serve warm for the best texture and flavor.

Common mistakes

Overmixing the batter is the most common mistake; it develops gluten and makes muffins tough and dense. Mix just until the flour disappears. Another issue is using cold ingredients, which can make the batter curdle or bake unevenly.

Let the eggs and sour cream sit out for 30 minutes before starting. Also, do not open the oven during the first five minutes of baking, as the temperature drop can prevent the tops from doming properly.

How to tell it’s done

The muffins are done when the tops are puffed and crackled, and a toothpick inserted into the center comes out with a few moist crumbs (not wet batter). The internal temperature of the muffin should read at least 160°F (71°C) in the center to ensure the eggs are fully set.

If the tops are browning too quickly, tent loosely with foil for the last few minutes. Let the muffins cool in the pan for 5 minutes before transferring to a wire rack.

  • Egg dishes: 160°F (71°C) in the thickest part
