Tips for success
For the best texture, use a glass baking dish, which heats evenly and allows you to see the syrup soaking in. If you only have a metal pan, reduce the oven temperature by 25°F (15°C) and check for doneness a couple of minutes earlier.
The cake is forgiving, but the baking time is crucial: overbaking will dry it out, while underbaking will leave it gummy in the center.
When poking holes, make sure they are deep enough to reach halfway through the cake. Use a thin skewer or a chopstick for neat holes.
If you prefer a more intense chocolate flavor, brush a little extra syrup over the top just before serving. The crushed pistachios can be toasted lightly in a dry skillet for extra crunch, but keep an eye on them as they burn quickly.
Variations
- Peanut Butter Swirl: Before baking, drop spoonfuls of peanut butter over the batter and swirl with a knife. The peanut butter melts into pockets of salty-sweet richness. Omit the pistachios or replace with chopped peanuts for a nutty crunch.
- Mocha Version: Dissolve 1 tablespoon of instant espresso powder in the milk before adding it to the batter. This deepens the chocolate flavor without making the cake taste like coffee. Add a teaspoon of espresso powder to the syrup as well for a mocha twist.
- Orange Chocolate: Add the zest of one orange to the batter along with the vanilla. Replace the pistachios with toasted sliced almonds. The bright citrus notes cut through the richness, making a refreshing contrast.
- Mint Chocolate: Add 1/2 teaspoon of peppermint extract to the batter. Use a chocolate syrup with a hint of mint, or stir a drop of peppermint oil into the syrup. Top with crushed candy canes or chopped dark chocolate for a festive touch.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Let come to room temperature or warm before serving.
- Freezer
- Freeze the unsoaked cake for up to 3 months. Thaw overnight in the fridge, then warm and add the syrup fresh.
- Reheat
- Reheat individual squares in the microwave for 15-20 seconds, or warm the whole dish in a 300°F oven for 10 minutes.
Store leftover cake in an airtight container at room temperature for up to 2 days, or in the refrigerator for up to 4 days. The syrup will continue to soak into the cake, making it even fudgier.
If refrigerated, bring to room temperature or warm gently in the microwave before serving. The pistachios may soften over time; for best texture, add them fresh just before serving.
The cake can be baked a day ahead, but do not pour the syrup over it until just before serving. Bake and cool the cake completely, then cover and store at room temperature. When ready to serve, warm the syrup and pour it over the poked cake, then add the pistachios. This keeps the texture perfect and the topping crunchy.
Serving ideas
Serve this cake warm for the ultimate fudgy experience. A scoop of vanilla ice cream or a dollop of whipped cream balances the richness with cool, creamy contrast. The syrup-soaked crumb is intensely chocolatey, so a small square is satisfying. Pair each slice with a cup of strong coffee or a glass of cold milk.
For a more elegant presentation, cut the cake into neat squares and place them on individual plates. Drizzle a little extra chocolate syrup over each serving and sprinkle with additional crushed pistachios.
The cake is also delicious at room temperature, making it a great make-ahead dessert for picnics or potlucks. Just keep it covered to prevent drying.

Fudgy Chocolate Pistachio Cake with Warm Syrup

Ingredients
- 3 large eggs
- 1 cup granulated sugar (200 g)
- 1 cup whole milk (200 ml)
- 1/2 cup vegetable oil (100 ml)
- 3 tbsp unsweetened cocoa powder
- 1 tsp vanilla extract
- 2 tsp baking powder
- 2 cups all-purpose flour
- 2 tbsp unsalted butter, melted, for the dish
- 1 cup chocolate syrup
- 1/2 cup crushed pistachios
Instructions
- Heat the oven to 350°F (175°C). Butter a 9x13-inch glass baking dish with the melted butter. In a large mixing bowl, beat the eggs and sugar together until frothy and light, about 2 minutes. Whisk in the milk, vegetable oil, cocoa powder, vanilla, and baking powder until smooth. Gradually add the flour, stirring just until combined. Do not overmix.
- Pour the batter into the prepared baking dish and spread it evenly. Bake for 25 minutes, or until a toothpick inserted into the center comes out clean or with only a few moist crumbs. The top should spring back when lightly touched. Let the cake cool in the dish for 10 minutes.
- While the cake bakes, pour the chocolate syrup into a small saucepan. Warm over low heat, stirring occasionally, until it is hot and pourable. Do not let it boil.
- Slice the warm cake into squares directly in the dish. Use a skewer or the handle of a wooden spoon to poke holes all over the squares, spacing them about 1 inch apart. Pour the warm chocolate syrup evenly across the surface, letting it seep into the holes and saturate the crumb. Let the cake absorb the syrup for 10 minutes.
- Sprinkle the crushed pistachios evenly over the soaked cake. Lift a square with a spatula to show the fudgy, syrup-saturated crumb. Serve warm or at room temperature.
