Tips for success
For the best flavor, sear the pork roast in a hot skillet with a little oil before adding it to the slow cooker.
This adds a deep, caramelized crust that enhances the overall taste. If you're short on time, you can skip this step, but it's worth the extra 5 minutes.
To make the gravy even richer, you can thicken it after shredding the pork.
Mix 2 tablespoons of cornstarch with 2 tablespoons of cold water, then stir it into the slow cooker and cook on HIGH for 15–20 minutes, until the gravy thickens. This is optional but gives a more luxurious texture.
Variations
- Add Mushrooms: Add 8 oz sliced cremini mushrooms along with the onions for an earthy, umami boost. They'll cook down and meld into the gravy, adding depth and texture.
- Spicy Kick: Add 1-2 sliced jalapeños or a teaspoon of red pepper flakes with the onions for a subtle heat that complements the garlic butter.
- Herb Swap: Use a compound butter with rosemary and thyme instead of the cowboy blend for a more classic herb profile. The herbs infuse the pork as it cooks.
- Beef Version: Substitute a 3.5-lb beef chuck roast for the pork. Increase the cook time to 10-12 hours on LOW for fork-tender beef in the same savory gravy.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth if needed.
- Freezer
- Freeze the shredded pork and gravy in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot and bubbling. Add a little beef broth to loosen the gravy if needed.
Store leftover pork and gravy in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day.
Reheat gently on the stovetop or in the microwave, adding a splash of beef broth if the gravy has thickened too much. The pork can also be frozen for up to 3 months.
This recipe is ideal for meal prep. You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate overnight.
In the morning, place the insert in the slow cooker and cook as directed. This saves even more time and makes the morning routine a breeze.
Serving ideas
Serve the pork and gravy over buttered egg noodles for a classic, comforting meal. You can also spoon it over mashed potatoes, rice, or crusty bread to soak up every last drop of the savory gravy. A side of steamed green beans or a simple green salad balances the richness.
For a low-carb option, serve the pork over cauliflower rice or roasted vegetables. The gravy is so flavorful that you won't miss the noodles. Garnish with fresh parsley or thyme if you have it, though the dish is delicious as is.

French Onion Garlic Butter Pork Roast: 5-Ingredient Crockpot Dinner

Ingredients
- 3 1/2 lb boneless pork sirloin roast
- 2 large Vidalia onions, thinly sliced
- 1 cup beef consommé
- 4 tbsp cowboy garlic butter, cut into medallions
- 12 oz buttered egg noodles, for serving
Instructions
- Place the pork sirloin roast in the center of a 6-quart slow cooker insert. Scatter the sliced Vidalia onions over the top and around the sides of the roast. Pour the beef consommé around the base, being careful not to rinse the onions off the meat.
- Place the four medallions of cowboy garlic butter evenly across the top of the roast, spacing them so they melt and baste the meat as it cooks. No need to stir or mix.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours, until the pork is fork-tender and easily shreds. The internal temperature should reach at least 145°F (63°C) for food safety, but the meat will be more tender if cooked longer. Let it rest for 3 minutes before slicing.
- Transfer the roast to a cutting board and let it rest for at least 3 minutes. Use two forks to shred the pork into bite-sized pieces, discarding any large fat pieces. Return the shredded pork to the slow cooker and stir it into the onion-butter gravy.
- Spoon the shredded pork and onion gravy over warm buttered egg noodles. Serve immediately, with extra gravy spooned over the top.
