Tips for success
For the best flavor, choose a chuck roast with good marbling. The fat bastes the meat as it cooks, keeping it moist and adding richness to the jus.
If you have time, trim any large pieces of hard fat, but leave the rest. Also, don't skip the rest step—it allows the meat to reabsorb juices, ensuring every bite is succulent.
To make the jus even more luxurious, after shredding the meat, you can skim off any excess fat from the surface, then stir in a tablespoon of cold butter to finish.
This adds shine and a silky texture. If you prefer a thicker sauce, mix 2 tablespoons cornstarch with 2 tablespoons cold water and whisk into the hot jus, then simmer for 5 minutes until thickened.
Variations
- Herb-Infused: Add 2 sprigs fresh thyme and 1 bay leaf to the pot before cooking. Remove before serving for a subtle herbal note that complements the beef and onions.
- Mushroom Lover's: Add 8 oz sliced cremini mushrooms along with the onions. They will soften and absorb the buttery jus, adding an earthy depth.
- Spicy Kick: Stir 1 teaspoon red pepper flakes or a chopped chipotle pepper in adobo sauce into the consommé before pouring. This adds a gentle heat that balances the richness.
- Beer-Braised: Replace 1 cup of the consommé with 1 cup of dark beer, such as a stout or brown ale. The beer adds malty sweetness and complexity.
Storage and make-ahead

- Freezer

Store leftover roast and jus in an airtight container in the refrigerator for up to 4 days. The flavors will deepen overnight, making leftovers even better. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth if needed to loosen the sauce.
This is the ultimate make-ahead meal. Assemble the slow cooker the night before and refrigerate the insert overnight. In the morning, place it in the slow cooker base and cook as directed.
Or, cook the roast fully, shred it, and refrigerate for up to 4 days. Reheat on the stovetop with a little extra consommé.
Serving ideas
The classic way to serve this roast is over whipped Yukon Gold mashed potatoes, letting the buttery jus soak into every crevice. For a low-effort side, crusty bread or egg noodles also work beautifully. The sweet, caramelized onions are a key component, so make sure to spoon plenty over each serving.
For a complete meal, add a simple green salad with a sharp vinaigrette to cut through the richness.
You can also use the leftovers to make French onion beef sandwiches—pile the meat and onions on a toasted baguette, add a slice of Swiss cheese, and broil until melted. This recipe is versatile and forgiving.

French Onion Butter Chuck Roast: 5-Ingredient Slow Cooker Dinner

Ingredients
- 3 1/2 lb beef chuck roast
- 2 large Vidalia onions, thinly sliced
- 2 cups beef consommé
- 1/2 cup salted butter (1 stick)
Instructions
- Place the beef chuck roast in the center of the slow cooker insert. Scatter the thinly sliced Vidalia onions over and around the roast, then pour the beef consommé around the base, avoiding the top of the roast.
- Place the whole stick of salted butter on top of the roast. It will melt and emulsify with the consommé as it cooks, creating a rich, glossy jus.
- Cover the slow cooker and cook on LOW for 8 hours, or on HIGH for 5-6 hours, until the beef is fork-tender and shreds easily. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the roast rest in the liquid for 10 minutes. Transfer the roast to a cutting board, shred it with two forks, and return it to the pot with the onions and jus.
- Spoon the shredded beef and caramelized onions over a bed of whipped Yukon Gold mashed potatoes, and ladle the buttery jus over the top. Serve hot.
