Tips for success
For the best flavor, use a good-quality beef consommé—it's the backbone of the sauce.
If you prefer a thicker gravy, whisk a tablespoon of cornstarch with a little cold water and stir it into the juices after shredding, then let it simmer for a few minutes. You can also add a splash of red wine or balsamic vinegar for extra depth.
This recipe is incredibly versatile. Serve the beef over mashed potatoes, egg noodles, or crusty bread to soak up the sauce.
The leftovers make fantastic sandwiches, tacos, or a topping for baked potatoes. You can also add mushrooms or carrots to the slow cooker during the last hour of cooking for extra vegetables.
Variations
- Add Mushrooms: Add 8 oz sliced cremini mushrooms to the slow cooker during the last hour of cooking. They will release their liquid and add an earthy depth that pairs beautifully with the onion and butter.
- Make it Spicy: Add 1-2 sliced jalapeños or a teaspoon of red pepper flakes with the onions for a subtle heat that cuts through the richness. Serve with pickled jalapeños on the side.
- Use Chuck Roast: Substitute the bottom round with a 3.5 lb chuck roast. It has more marbling, making it even more forgiving and juicy. Cooking time remains the same.
- Herb Infusion: Place a few sprigs of fresh thyme and a bay leaf in the slow cooker before cooking. Remove them before shredding. The herbs add a fragrant, savory note.

Serving ideas
Spoon the French onion butter roast over a bed of fluffy mashed potatoes, letting the buttery jus soak into the potatoes. Add a side of roasted green beans or a simple green salad to balance the richness. Crusty bread is essential for sopping up every last drop of the sauce.
For a more casual meal, pile the beef onto toasted baguette slices and top with melted provolone or Swiss cheese for a French onion-inspired sandwich.
The leftovers are also wonderful in tacos, topped with a little fresh cilantro and pickled onions. This dish is all about comfort and ease.

French Onion Butter Bottom Round Roast: Slow Cooker

Ingredients
- 3 1/2 lb beef bottom round roast
- 2 medium Vidalia onions, thinly sliced
- 2 cups beef consommé
- 1/2 cup salted butter (1 stick)
Instructions
- Place the beef bottom round roast in the center of a 6-quart slow cooker. Scatter the sliced Vidalia onions over and around the roast. Pour the beef consommé around the base of the roast, being careful not to rinse the onions off the top. Place the stick of butter on top of the roast.
- Cover the slow cooker and set it to LOW. Cook for 8 to 10 hours, until the roast is fork-tender and easily shredded. The butter will melt into the juices, and the onions will soften into silky ribbons. Let it rest for 3 minutes before slicing.
- When the roast is fork-tender, turn off the slow cooker. Using tongs, transfer the roast to a cutting board and let it rest for at least 3 minutes. This allows the juices to redistribute.
- Using two forks, shred the roast into bite-sized pieces. The meat should pull apart easily with little resistance. Transfer the shredded beef back into the slow cooker with the onions and juices.
- Stir the shredded beef into the onion-butter jus, making sure every piece is coated. The sauce should be glossy and rich. If the sauce seems thin, let it simmer on the warm setting for 10 minutes to reduce slightly.
- Spoon the French onion butter roast over a bed of whipped Yukon Gold mashed potatoes. Ladle extra jus over the top and serve hot.
- If desired, sprinkle with fresh thyme or chopped parsley before serving. The onions should be caramelized and sweet, and the butter sauce should be emulsified and silky.
