Tips for success
For the most flavorful results, choose a pork shoulder with good marbling. The fat renders during cooking, keeping the meat moist and adding richness to the gravy.
If you prefer a thicker sauce, after shredding, you can simmer the liquid on the stovetop for a few minutes to reduce it, but this is optional.
Toasting the slider buns adds a delightful crunch that contrasts with the tender pork.
If serving over mashed potatoes, consider a dollop of sour cream or a sprinkle of fresh chives for brightness. The leftovers are even better the next day as the flavors continue to meld.
Variations
- Cheesy French Onion: After shredding, top the pork with slices of provolone or Swiss cheese and let it melt under the broiler for a few minutes. Serve on toasted baguette slices for an open-faced sandwich.
- Spicy Kick: Add 2-3 sliced jalapeños or a teaspoon of red pepper flakes with the onions for a spicy twist. The heat will mellow during cooking, leaving a subtle warmth.
- Mushroom Gravy: Sauté 8 oz of sliced mushrooms in butter and add them with the gravy. The mushrooms add an earthy depth that pairs beautifully with the pork and onions.
- Herb-Infused: Add a few sprigs of fresh thyme or rosemary along with the onions. The herbs infuse the gravy with aromatic notes that complement the pork.

Serving ideas
Serve the French Onion Brown Gravy Pork Shoulder on toasted brioche slider buns for a fun, hearty sandwich. Pile the pork high and spoon extra gravy over the top.
The sweet, caramelized onions add a touch of elegance, making these sliders perfect for game day or a casual dinner with friends.
For a more traditional plate, serve the pork over creamy mashed potatoes, egg noodles, or polenta. The gravy acts as a sauce, soaking into the starch.
A side of roasted green beans or a simple green salad balances the richness. Don't forget crusty bread to mop up every last drop.

French Onion Brown Gravy Pork Shoulder

Ingredients
- 4 lb boneless pork shoulder roast
- 2 large Vidalia onions, thinly sliced
- 1 can (10.5 oz) beef consommé
- 2 cups rich brown gravy
- 4 tbsp unsalted butter, cut into pats
Instructions
- Place the pork shoulder roast in the center of a 6-quart slow cooker. Scatter the sliced Vidalia onions over and around the roast. Pour the beef consommé around the base of the roast, being careful not to rinse the onions off the top.
- Pour the rich brown gravy over the roast and onions. Dot the top with the pats of unsalted butter. Do not stir; the layers will meld during cooking.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 5 to 6 hours, until the pork is fork-tender and easily shreds. The onions should be meltingly soft and caramelized. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the pork rest in the liquid for at least 10 minutes. This allows the juices to redistribute and makes the meat easier to shred.
- Using two forks, shred the pork directly in the slow cooker, mixing it with the onions and gravy. The meat should pull into thick, succulent ribbons.
- Spoon the shredded pork and onions onto toasted brioche slider buns or over mashed potatoes. Drizzle with extra gravy from the slow cooker.
