Before you start

Before you begin cooking, gather all four ingredients and measure them out to ensure a smooth, uninterrupted process. Preheat the oven to 400°F (200°C) so it is fully hot when the beef is ready.

Set out a rectangular glass baking dish, a large skillet, and a sturdy spatula. If you are grating your own cheese, do so now and keep it ready in a bowl. Drain any excess water from your utensils and make sure your workspace is clean and organized.

Ingredients at a glance (4)
  • 1 1/2 lb ground beef
  • 1 packet (1 oz) taco seasoning
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 cups shredded Mexican blend cheese

Instructions

Browning the Ground Beef

  1. Brown the Ground Beef
Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spatula, for 6 to 8 minutes. Ensure the meat browns evenly and is no longer pink. Carefully drain any excess grease from the skillet to keep the final casserole from becoming oily.
Look for The beef is fully browned with no pink remaining.
Tip Drain the fat thoroughly to prevent a greasy bake.

At the end of this phase, the ground beef should be completely cooked through, showing a uniform brown color with no traces of pink remaining.

The meat will sizzle softly in the skillet, and any released liquid should be mostly evaporated or drained, leaving the beef crumbly and ready to absorb the seasonings.

Simmering the Tomato Beef Filling

  1. Simmer with Tomatoes and Seasoning
Add the taco seasoning and the undrained diced tomatoes directly to the skillet with the browned beef. Stir well to combine. Reduce the heat to medium-low and simmer gently for 5 to 7 minutes, stirring occasionally, until the liquid reduces and the beef is fully cooked to a safe internal temperature of 160°F (71°C).
Look for The mixture is thick, glossy, and fragrant.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Do not let the filling dry out completely; keep it slightly saucy.

By the end of the simmer, the taco seasoning and diced tomatoes should be thoroughly integrated into the beef. The mixture will look thick, glossy, and deeply red, with most of the excess tomato juice absorbed. It should bubble gently and release a rich, spicy aroma of cumin and chili powder.

Baking and Melting the Cheese

  1. Bake with Shredded Cheese
Transfer the seasoned beef and tomato mixture into a rectangular glass baking dish, spreading it into an even layer. Sprinkle the shredded Mexican blend cheese evenly over the top. Bake at 400°F (200°C) for 8 to 10 minutes until the cheese is completely melted, bubbly, and slightly golden.
Look for The cheese is fully melted and bubbling at the edges.
Tip Use freshly grated cheese for an even smoother melt.

After baking, the casserole will be incredibly hot, with the cheese fully melted into a bubbly, cohesive blanket. You should see steam rising from the dish, and the cheese around the edges of the glass baking pan will be slightly browned and crispy, signaling that the dish is ready to rest and serve.

Common mistakes

The most common mistake when making this casserole is failing to drain the excess grease from the ground beef after browning. Leaving too much fat in the skillet will result in a greasy, soggy casserole with a layer of oil sitting on top of the cheese.

Another error is over-reducing the tomato mixture during the simmering phase; you want some liquid left to keep the beef moist and saucy under the melted cheese, so do not let it dry out completely on the stove.

How to tell it’s done

To determine if the casserole is perfectly done, look for visual cues and verify the internal temperature. The ground beef mixture must reach a safe internal temperature of 160°F (71°C) during the skillet simmer.

Once baked, the casserole is finished when the cheese is completely melted, bubbling vigorously around the edges, and starting to develop small golden-brown spots. Let the dish sit for a few minutes after baking to allow the cheese to set slightly before serving.

  • Ground meat: 160°F (71°C) in the thickest part
