Tips for success
For the fluffiest buns, make sure your yeast is fresh and the milk is warm but not hot. If your kitchen is cool, let the dough rise in a slightly warm oven (turned off) with the light on. The dough should double in size, which usually takes about 1 hour. Don't rush this step; a proper rise develops flavor and texture.
When shaping the buns, keep them uniform in size so they bake evenly. You can use a kitchen scale to divide the dough into 12 equal pieces.
If you prefer a more muffin-like shape, place the dough balls into a greased muffin tin instead of a baking sheet. This will give them taller, domed tops. For an extra shiny crust, brush with a beaten egg instead of milk.
Variations
- Orange zest: Add 1 tablespoon of orange zest to the dough along with the flour. The citrus aroma pairs beautifully with chocolate and gives the buns a fresh twist. You can also add a teaspoon of orange extract for a stronger flavor.
- Cinnamon sugar: Before baking, brush the buns with melted butter and sprinkle with a mixture of cinnamon and sugar. This creates a crunchy, spiced topping that complements the chocolate filling. Reduce the sugar in the dough slightly if you prefer a less sweet bun.
- Peanut butter swirl: Substitute the chocolate hazelnut cream with peanut butter, or use a chocolate peanut butter spread. For a salty-sweet contrast, sprinkle a little flaky sea salt on top after baking. This variation is a hit with kids and adults alike.
- Mini buns: Divide the dough into 24 small balls and bake for 12-15 minutes. These bite-sized buns are perfect for parties or snacking. Adjust the filling amount to about 1 teaspoon per mini bun. They are also great for lunchboxes.
Storage and make-ahead
- Fridge
- Store unfilled buns in an airtight container in the refrigerator for up to 3 days. Fill and reheat before serving.
- Freezer
- Freeze unfilled baked buns for up to 2 months. Thaw at room temperature, then fill and reheat in a 350°F (175°C) oven for 5-8 minutes.
- Reheat
- To reheat filled buns, microwave on high for 15 seconds or warm in a 350°F (175°C) oven for 5 minutes until the chocolate is molten again.
Store any leftover buns in an airtight container at room temperature for up to 2 days. The chocolate center will firm up as they cool, but they are still delicious.
To restore the molten texture, reheat individual buns in the microwave for 10-15 seconds or in a 350°F (175°C) oven for 5 minutes. If you plan to keep them longer, freeze them.
The dough can be prepared the night before. After kneading, place it in a greased bowl, cover, and refrigerate for up to 12 hours.
The next morning, let it come to room temperature and rise for about 30 minutes before shaping and baking. The baked buns can also be made ahead and stored unfilled; fill them with chocolate cream just before serving.
Serving ideas
Serve these buns warm, straight from the oven, so the chocolate center is molten and irresistible. They are perfect for breakfast or brunch alongside a cup of coffee or tea. The combination of soft, fluffy dough and rich chocolate hazelnut cream is a crowd-pleaser. You can also serve them as a dessert with a scoop of vanilla ice cream.
For a special presentation, arrange the buns on a platter and dust generously with confectioners' sugar. The contrast of the golden buns and snowy sugar is beautiful.
If you have extra chocolate hazelnut cream, serve it on the side for dipping. These buns are best enjoyed the day they are made, but they are still tasty the next day if reheated.

Fluffy Chocolate Chip Muffin Poğaça Buns

Ingredients
- 1 1/2 cups warm milk
- 1/2 cup vegetable oil
- 4 tbsp granulated sugar
- 1 tsp salt
- 1 packet active dry yeast (2 1/4 tsp)
- 1 large egg
- 4 cups all-purpose flour
- 1 cup dark chocolate chips
- 2 tbsp milk, for brushing
- 1/2 cup chocolate hazelnut cream
- 2 tbsp confectioners' sugar
Instructions
- In a large bowl, combine the warm milk, vegetable oil, granulated sugar, salt, and yeast. Let sit for 5 minutes until foamy. Beat in the egg. Gradually add the flour, stirring until a soft dough forms. Turn out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise for 1 hour, or until doubled in size.
- After the dough has risen, gently punch it down. Knead in the dark chocolate chips until evenly distributed. Divide the dough into 12 equal pieces and shape each into a ball. Place the balls on a parchment-lined baking sheet, spacing them about 2 inches apart.
- Preheat the oven to 350°F (175°C). Brush the tops of the dough balls with milk. Bake for 20 minutes, or until puffed and golden brown. The internal temperature of the buns should reach 160°F (71°C) to ensure the egg is fully cooked.
- Remove the buns from the oven. While they are still warm, use a piping bag fitted with a small tip to inject the chocolate hazelnut cream into the center of each bun. The warmth will melt the cream slightly, creating a molten center.
- Dust the filled buns with confectioners' sugar. Serve warm so the chocolate center stays molten. If not serving immediately, let cool completely and reheat gently before serving.
