Tips for success
For the flakiest layers, ensure the butter is cold but pliable when brushing. If the butter hardens too much, it will break the dough; if too soft, it will soak in.
Work quickly and keep the dough covered. Use a light touch when rolling to avoid pressing the layers together. If the dough becomes sticky, dust with flour, but brush off excess before folding.
The filling can be customized with additional spices like cumin or oregano. For a richer flavor, use half beef and half lamb. The börek can be assembled ahead and refrigerated overnight; bring to room temperature before baking. For an extra golden crust, brush with milk instead of egg yolk for a softer sheen.
Variations
- Cheese and Herb Börek: Replace the meat filling with a mixture of crumbled feta, chopped parsley, and a pinch of black pepper. Proceed with the same assembly and baking. The cheese will melt and become creamy, offering a vegetarian alternative.
- Spicy Lamb Börek: Use ground lamb instead of beef and add 1 teaspoon of ground cumin and 1/2 teaspoon of red pepper flakes to the filling. The lamb's richness pairs well with the warm spices, adding a deeper flavor.
- Spinach and Potato Börek: Sauté spinach with onions and garlic, then mix with mashed potatoes. Season with salt, pepper, and a pinch of nutmeg. This hearty filling is vegetarian and budget-friendly.
- Chicken Börek: Use ground chicken or finely chopped cooked chicken. Sauté with onions, tomato paste, and a teaspoon of dried oregano. Ensure the chicken is fully cooked before filling.

Serving ideas
Serve the börek warm, fresh from the oven, as an appetizer or main course. It pairs beautifully with a simple yogurt sauce, a crisp salad, or a bowl of lentil soup.
For a traditional Turkish spread, offer with olives, pickles, and fresh vegetables. The crispy pastry and savory filling are satisfying on their own, but a dollop of yogurt adds a cool contrast.
For a party, cut the börek into smaller pieces and serve as finger food. They are also delicious at room temperature, making them perfect for picnics or packed lunches. If serving as a main, accompany with a hearty salad and some crusty bread. The börek can be reheated in a low oven to restore crispness.

Flaky Turkish Meat Börek with Crispy Phyllo Layers

Ingredients
- 4 cups all-purpose flour
- 1 1/2 cups water
- 1 tsp dry yeast
- 1 tsp salt
- 100 g butter, melted
- 2 tbsp vegetable oil
- 250 g ground beef
- 2 onions, chopped
- 1 tbsp tomato paste
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 egg yolk
- 2 tbsp butter, melted
Instructions
- In a large bowl, combine the flour, water, yeast, and salt. Knead until a soft, elastic dough forms, about 8 minutes. Cover with plastic wrap and let rest for 30 minutes.
- Divide the dough into 4 equal balls. Place them on a floured surface, cover with plastic wrap, and let rest for 15 minutes.
- In a pan over medium heat, cook the ground beef with chopped onions, tomato paste, salt, black pepper, and paprika until the beef is browned and the onions are soft. Set aside to cool completely.
- Roll each dough ball into a thin rectangle. Brush generously with the melted butter and vegetable oil. Fold the dough into an envelope shape, then chill in the refrigerator for 30 minutes.
- After chilling, roll the laminated dough into a long rectangular strip, about 4 inches wide. Cut the strip into smaller rectangles, about 4 by 6 inches each.
- Place a spoonful of the cooled meat filling at one end of each dough rectangle. Fold the dough diagonally over the filling to form a triangle. Continue folding, like folding a flag, until the entire strip is used and you have a neat triangle packet. Press the edges to seal.
- Place the börek on a baking tray lined with parchment paper. Brush the tops with the egg yolk mixed with the melted butter. Bake in a preheated oven at 400°F (200°C) for 25-30 minutes, until deeply golden and crisp.
